Bottled in Feb. 2011; Review from notes on an August tasting.

This Belgian style ale is a clear golden color with moderate visible carbonation and a short but durable white head.

Aroma: sweet and fruity; the fruit aroma is complex but more apricot than anything else. There's some yeast, clove and other spices here too. Interesting and inviting.

T - If blindfolded, i would definitely guess that this was a Belgian ale; and a rather good one at that. The taste follows the aroma to some extent, with the most notable departure being the balanced tart/sweet flavor. The flavor is plenty fruity but more citrus and less apricot than in the nose, perhaps from the hops which are most noticeable in the finish.

M - very good carbonation; medium-thin body that is slightly watery.

O - A very pleasant spiced beer with a well-balanced flavor palette. Excellent as a Summer ale.

On tap at the brewery's tasting room

Pours a clear gold with no head. Smells of straw and subtle yeast. Initially I detect wheat and coriander, but they are both quite faint. As I continue to drink though I can't shake the odd unknown flavor in the aftertaste, then a friend points it out...hot dogs. It really tasted like hot dogs. Light body and mild carbonation.

This is not a beer I enjoyed or will try again.

12oz single, Whale shipped by Bert (blakky)

appearance: served in a standard offshore pint, pale dull-golden body, light beige cap with minimal retention.

smell: subtle - corriander, white pepper, orange peel

taste: Even for a brewery from Raleigh (Go Pack), Big Boss really hasn't done anything to earn any praise. This really isnt much different - just kind of a dull effort. It's not a bad beer, but it just lacks any sort of defining characteristic. The spicing (corriander, orange peel, white pepper) could stand to be much more pronounced.

mouthfeel: light and crisp

drinkability: good

Pours a hazy golden color with a thin white head that dissipates quickly. The aroma has some corriander and orange peel upfront, along with biscuit, wheat, fruity esters and alcohol. The flavor also is spicy initially (notes of white pepper, corriander and orange peel), along with some wheat and hay, biscuit, fruity esters, and a bit of chalk. The mouthfeel is light and drinkability is excellent. Pretty solid witbier from Big Boss, and I'm glad to see them bottling more beers.

Served from tap into a sampler shaker. Poured a hazy pale yellow with a one finger pure white head. Maintained phenomenal lacing throughout the glass. The aroma was comprised of sweet malt, graham cracker, and banana. The flavor was of sweet malt, graham cracker, wheat, and slight fruit. It had a light feel on the palate with mild carbonation. Overall this was a fairly decent brew. The graham cracker aspect was quite surprising, but a nice touch. This brew was very light. As I thought, the alcohol was very low on this one. I could see this one being good for sitting out in the sun all-day.

A: Pours a slightly hazy light honey color with a small head that fades quickly.

S: Coriander and wheat dominate the aroma with a touch of lemon grass and floral notes.

T: Wheat makes up the body of the flavor with coriander coming in a close second. There is definite yeast flavor that comes on a bit to strong.

O: Can't say this is my favorite witbier but it's not a bad brew.

Poured from the bottle into a wheat ale style glass. Bottle dated July 2011.

Rising carbonation but a very clear body is present for a Witbier, with a sense of hazy-ness. Dull lemon colored. Head is not very large or fluffly, but a simple white of perhaps half a finger. While drinking only a very small collar is left in the glass.

Bouquet is soapy and perfumy. A little bit of sour lemon as well. This smells slightly odd for a Witbier.

Taste on this one is kind of a shocker. An feeling of mild wheat body, then an incredibly bitter medicine finish on the swallow. Feel is actually pretty good, with some pleasant carbonation and texture.

Overall I am not impressed and this is something I'll never have again.

Cloudy, dull yellow-gold with a small, bright white head that disappears before long. Sweet and tart aromas hit the nose softy, but pleasantly...coriander, orange, peach, and wheat. Zesty, sweet flavor with an enjoyable fresh grain finish. Unlike the aroma, the orange peel has the upper hand over the coriander, working alongside a solid clove-y spiciness. Light, dry, and most definately thirst quenching. A good choice for a refreshing, drinkable summer beverage.

A lovely day up in the mountains that let me try a huge sample of some new NC locals. Always thrilled when a day works out like this one did.

This was another new one for me. I haven't been able to sample as much from Big Boss as I would have liked to. So the chance to try this one worked just fine with me, Nice pour very light golden in color with a smooth and even head of pure white that settled down nicely across the top of the glass. Light peaches, pears, hints of grains and bready malts all combined to form a really nice, and very light and well placed profile. Hints of light spice, touches of lemon zest and hints of various grasses are all very present here. Light body and very nice carbonation give it a nice easy drinking and quite session able feel that really work quite well with the day. Last flittering taste of light honey and spice cross the palate at the last sip and leave me looking for another just as soon as I finish.

Overall a really solid job they did here. I would have no trouble getting this one in a bottle and keeping it stocked in the fridge.

12 OZ bottle poured into irish imperial style pint glass.

Pours a slightly hazy straw color with yeast included. bottled about a month ago there was very little to no sediment so I poured the whole glass.

Straight out of the fridge smell was almost non existant, but once warmed up for 5-10 minutes there is a pleasent sweetness of oh... maybe light karo syrup and berry skins? Just a mild sweetness with a hint of berry, no real malt or orange peal, coriander, yeast characteristics that you find in a lot of wits.

That sweetness follows in the taste. Very light maybe a hint of untoasted malts, a very light touch of berry juice. I can't really nail down what kind of berry I'm picking up, maybe a faint hint of very ripe rasberry with a touch of blueberry skin...a touch of kiwi? Just a good clean sweetness that is not cloying at all this is probably due to ample carbonation keeping it crisp and clean. This a very nice light beer for spring/summer, according to my personal taste, not overly filling and right in the range of an "American style session" for me. I do love a good A.s.s. beer.

I'll definitely try this one again.
