Bottle (2010 vintage) acquired at 6-and-Save for a hefty price ($12.50), poured into my Ommegang snifter. This is my first experience with anything from De Struise.
A: Bottle cracks with a loud *pffft*. Interesting.
Pours a deep dark murky shade of brown (almost black? Odd for a Belgian Quad) with a large, lively, but oddly off-brown head that has an almost ruby-red tint to it.
S: I'm picking up on a hint of cherries, figs, dates, and maybe even a bit of black licorice? There is a hint of fruitiness here to. As I indicated above, I think it's cherry but I'm not 100%
T: It's cherry. The red tint in the head and the notes in the nose make sense now. Beyond cherry, there is a *thickness* here that reminds me of molasses. Chocolate undertones are noticeable as well. Typical dark fruits are also present, but a bit overwhelmed by the strong cherry/molasses/licorice flavor here.
This is a unique take on the style.
M: A thick, frothy, brew. Very viscous. Lots of sticky goodness left behind on the finish.
D/O: The cherry-quad combo reminds me of Three Philosophers, but this beer is thicker and more licorice/molasses than the offering from Cooperstown.
I enjoyed this beer, but I found the thick molasses to be a bit detracting as I worked through the bottle. As such, I deduct 0.5 from "overall" and score a solid 4.0

Pours murky dark brown with a 1/4 khaki head that quickly fades to a thin ring on top and leaves faint spotty lace.
Smell is of prunes, raisins, caramel, roasted malt and just a hint of chocolate.
Taste is of dark malt, molasses and dark fruit.
Texture is medium bodied with high carbonation.
Another solid Belgian quad that is malt forward with caramel and raisin accents.

Pours an opaque black with minimal tan head that lingers as a ring of foam.
Plums, raisins, sweet molasses, and a touch of leather form the aroma.
Alcohol, raisins, nutty, toasted malt and light roast form the initial flavor. There's a vinous note at the finish that counters the malt sweetness well. Light cardboard oxidation dries things out in the aftertaste.
Body is fairly full, with a hint of carbonation and warming alcohol lingering.
Very complex brew. All is fairly balanced, between esters, oxidation, and malt sweetness.
