vintage <2010. Review from notes.
The beer is dark mahogany and pretty clear with a broke tan head. Aromas of oak, cherry, funk, vanilla, prune. The flavor is sweet and sour cherry, vinegar, oak, dark fruit finishing with a lactic punch. Acetic and sharp, yet not harsh, per se. Certainly puckering. Complex and intriguing. A unique beer for sure. I'd happily try this again.

Poured into a tulip, the beer pours a fairly dark, murky brown color with not a lot of head of lacing. The nose is quite complex and intriguing in this one, as I pick up considerable chocolate and wine, but then also some A1 sauce and soy sauce. There is considerable sour in the nose, but with what smells like a decent amount of chocolate to bouy t hat sour component. On the palate, the the flavor profile replicates the nose, but thankfully, wiithout a lot of the soy sauce and A1 I was getting on the nose. The beer has some noticeable chocolate, caramel and vanilla initially, but then the wine and sour component really kick into overdrive on the finish. Mouthfeel is medium bodied at most, and while the beer comes across as just a bit thin on the palate, the finish is long, sour and wine infused. It's more than sufficient to tame the moderate amount of sweetness in this beer. Alcohol is very well integrated into the flavor profile, with nose sense of heat or heaviness on the finish. Drinking this beer, i honestly had no idea what the abv. might be; it could have been anything from 6% up to 9% or 10%, and I wouldn't have been surprised.
A very interesting and intriguing beer from De Struise. Not sure how much or how often I could drink this, but I was very glad to be able to finally try this well regarded beer at long last.

2011 Rating: 2007 Vintage bottle@Kulminator: brown with dark red colour with a small white head, taste is deep, tart & sour with balsamic and red wine vinegar & red wine with sour fruits and acidic wood + dark cherries, sour red berries, sherry, sugar,… despite the bold flavours straying into sour/vinegar/acidic territory, this is extremely balanced, not puckering sour and easy to drink, mouthfeel is smooth but quite thick as well at the same time, very little carbonation which is just perfect
Later rating: 2011 edition@Kulminator: just issued, almost sweet with some brown sugar compared with the 2007 Vintage with red wine like flavours overpowering balsamic & wine vinegar, sourness is very restrained, red fruit, touch of wood, one notch lighter body, very good, liked the 2007 a bit more
2013: 2007 is getting crazily sour now & 2011 is beginning to develop nicely, this is still one of the best sours around, wonderful brew that I like to revisit from time to time
Early 2013: tried a 2005, pretty good still but has oxidized a bit & is def. already somewhat downhill

Drank from my Westvleteren chalice, picked up from the De Struise shop, Brugge.
A - Pours a dark cola colour with no head.
S - Heavy vinous oak with malts and molasses.
T - Nice flavours of strawberries, dark fruits and malts, the finish is tart and oaky with a little sweetness.
M - Medium body with no carbonation.
O - Would have liked to have seen more carbonation in this, but does resemble a good example of the style.

33 cl brown bottle. Dated 2008. Have been holding on to this for a while, time to open.
A: Pours a dark brown with reddish highlights. Regular pour yields a few brown bubbles which cling to the rim. Essentially flat with no lace.
N: Vinegar, raisins, cardboard oxidation, damp wood. Looks like I may have waited too long on this.
T: Rustic, aged wood, some dark fruits (raisins and cherries), dried plums, stone pits, basalmic vinegar, fairly tart and faintly sweet.
M: Medium body and almost no carbonation. Finishes tart with woody vinegar and faint fruit sweetness.
O: Seems over the hill based on the oxidation and flatness. Initially thought it might be infected, but it isn't. I'd suggest these be consumed rather than cellared any longer.

From a 2008 vintage bottle into a tulip.
A-A hard pour produces very little in the way of head, which isn't surprising given the style or age of the beer. The brew is dark, dark brown. Pretty much opaque and flat.
S-The smell is tart, but not quite sour. There are dried, sour, cherries, sweet, malty dried raisins, plums, and prunes.
T-Taste is only mildly tart. I detect cherries, oaky vanilla, raisins, prunes, and a mild acidity. The flavors blend well with one-another and constitute a good example of the style.
M-There is barely a hint of carbonation left, which makes for a medium to full body feeling relative to other beers of this style. The finish is drying.
O-As a fan of De Struise and of sours, I was excited to try this beer and it did not let me down. The flavors are typically Belgian in their subtlety but part of that subtlety might have been the age of this bottle. Regardless, this beer was a great example of the style and it proves that huge fruit or acidity aren't always necessary to make a good sour beer.
