GLASS: Maudite Snifter

LOT: A 3 09 (Hmmm...) SM No. 12 Elliot Brew

This one is a beautifully glowing amber color with a light ruby tint. The head of dense, light tan colored foam is almost four-fingers thick. (This comes from a medium pour.) The retention is great and the lacing is very abundant and quite sticky.

A very interesting mix of hops and candi sugar fills the nostrils. Mild hints of malts and orchard fruits make their way through. Light hints of belgian yeasts and leather. A nice hint of caramel sweetness.

Hooray for balance! This one claims 130ibu's, so I was prepared for a palate-shredder. However this has enough of a sweet malty backbone to balance it out. The flavor follows the nose, very well.

This is medium-bodied with a medium-to-high level of carbonation. It is nicely smooth, with a good amount of creaminess, which works very well for it.

The 9.00%abv is hidden well enough, but it is quite warming....and you really start to feel it, mid-bottle.

330ml bottle poured into a De Struise Cervoise.

Appearance: Golden dark yellow with a nice 2" head, that recedes to a nice cap and leaves excellent lacing.

Smell: Floral hops, bready malt, and Belgian candy sugar all equally noticeable.

Taste: Floral hop bitterness up-front with the bready malt and sweet candy sugar coming through in the middle and finish. The hops are more forward when cold the warmer the beer becomes the more caramel is noticeable form the malt and candy sugar.

Mouthfeel: Very creamy and very clean on the palate. The alcohol is completely masked,

Overall: Really nice take on the DIPA style only very Belgian and very De Struise, excellent beer.
