On tap at Ebenezer's 2/13/11:
A: Dark brown, opaque, 1 inch off-white frothy head that slowly dissipates. Leaves decent lacing.
S: Plums, raisins, dates, grapes, sour, and funk.
T/M: Taste is much like the Reserva, but with much more port qualities and Brett. Lots of dark fruits, grapes, red wine, Belgian yeast, oak/vanilla. The Brett adds a touch of tartness and funk, but plays a complimentary role, not taking over the brew. The carbonation was fairly light and the body not quite as viscous as I remembered the Reserva. It was, however, velvety smooth, maybe the smoothest beer I've yet had. Alcohol presented some nice esters and wasn't overpowering. The level of complexity is pretty astounding and the flavors all lingered on through the dry, port finish. Fantastic.
This didn't seem as hot as the Reserva and went down way to easy.

I'm reviewing the tap version because I thought it was better than the bottle.
This beer obviously looks like regular Pannepot. Rich dark color and a faint burgundy hue when put up to the light.
It has a very clean bretty funk too it. Very inviting for a wild beer.
Taste is perfectly executed. Brett is paired with the dark fruit and sweetness from Pannepot. There's a welcoming tartness as well. Something I didn't pick up so much from the bottled version. This beer is even better on tap.

On tap at The Lion's Pride.
Came to the table a solid brown/black color with a thin tan head that slowly dissipates but never leaves. Smells of oak, vanilla, caramel, dark fruits, dark sugars, a little tart, and a little funk. The flavor follows the nose quite well but adds a heavy tart cherry, chocolate and raisin flavor. Medium body with a moderate level of carbonation and a sweet sugary tart mouthfeel. This is a damn fine beer, in fact my favorite from the night. The funk is restrained and mixed very well with the quad that is underneath!

Dark chestnut brown in the glass. Nicely carbonated, a gentle pour produces a small beige head that retains well.
Pretty funky aroma, but not outright sour - it still resembles Pannepot. It smells both tart and malty with fruity notes of plums, berries, red grapes. A bit vinous and spicy.
Tart dark fruit flavors are prominent; plums, figs, a little turbinado sugar. Medium-full body, lightly sour (on the acetic side) and moderately tannic, but more funky and musty than anything. Vinous and oaky finish, light lingering dark sugar sweetness. Really nice stuff, this exceeded my expectations.

Brown edged black without any retention or lace. Looks like flat root beer.
Dark and roasty with caramel and chocolate covered cherry. Makes me think of all sorts of nightime sexy words like alluring, seductive and indulgent.
Tastes as indulgent as it smells. I can pick out fig, caramel, and dark bread crust. The Brett is very light handed, adding only a little green grape peel hiccup in the middle. Better and better as it warms.
The Brett doesn't really do too much and I think I like plain ol' Pannepot better.

I had this beer at the CBC festival in Kopenhagen in may this year. The Struise brewers were there with 30 beers on tap. What a success they had. Poured in the CBC snifter.
The Pannepot wild was on my want list for quit a time. Very tasty quad with a bit of sourness because of the wild yeasts. Nice dark fluid and a fairly decent head.

On-tap at Ebenezer's Pub and Lion's Pride. Served in tulip, over and over. Had this one a lot...like maybe 7 times between the two spots.
A - Pours black brown, large frothy tan head, sticky lacing, large cap. This one was very frothy, sticky, and dark. Purty.
S - Nice bretty funk, brown sugar, dark fruit, burnt sugars. The brett adds another dimension onto an already stellar Quad. Really enjoyed the slight funk on this one mixed with the sugars and dark fruits.
T - More dark fruit forward then the nose, burnt sugars, molasses, chocolate, oak, brett funk, raisins. The brett is still there, but takes a back seat to the base beer on the palate, which is totally cool with me.
M - Body is medium, good carbonation, creamy finish.
O - I really really (really) enjoyed this one....at $14 a pop, it was expensive, but I was on vacation and I didn't give a shit. Chris even gave me a free one before we headed out. Glad the fiance drove back! Simply outstanding on-tap, you must try it at either establishment!
Edit: I had this from 3 different kegs and didn't experience any sour or tart notes, as others have noted.

Bottle: Poured a dark cloudy brown color ale with a huge foamy head with great retention and some good lacing. Aroma of light tart notes with some fruity ester and dry fruits notes is really nice. Taste is a great mix between some light tart notes with some oak and vinous notes that are well balanced against some fruity ester with dry fruit and a solid malt backbone. Body is full with great carbonation and no apparent alcohol. Very interesting beer with loads of complexity while retaining a very good level of drinkability.

This is still on Tap at Lion's Pride in Brunswick probably not much longer I was told once it is gone there is no more.
A - Nice dark some carbination really nice.
S - dark raisons belgian sugars some black liquorice.
T - Nice you can taste the wild mixed with the beer makes it nice.
M - smooth again a feel of the liquorice but not bad.
D - Would have again a hefty price point makes this one a bit of a smaller score.

I'm just enjoying a whole bottle of this beer. The bottle looks great, the beer in the glass also. Deep black, creamy head. Dry-malty aroma. Starts strong-malty, a bit alcoholic, rusty, dry. Some fruity notes of grapes and raisins. Also a little bit smoky. Intense finish, frutiy again, a bit like a good dry red wine. Gets better with every sip. Very drinkable. A great brew!

Shared a bottle with some fellow BAs. This was one nice treat!
A - Deep mahogany/brown body. Thick foamy tan head.
S - Dark fruits, brown sugar, spice cookie, with a noticeable Brett/sour funk.
T - Very smooth and complex sour Belgian Quad. All the right flavors are there. Very malty, sweet, funky and sour.
M - Creamy, bubbly on the tongue. Sour finish.
D - Excellent beer. Wish we had more than one bottle. I would love to try this on tap.

Half pour, served in a wine glass.
Dark brown hazy with a nice tan head that dispersed slowly and left a little lacing.
Dried cherry, unsweetened chocolate, acai, some funkiness, spice and light alcohol.
Dried fruit and chocolate in the front, molasses in the middle, tart and funky with slick finish.
Not as good as the as the Reserva but it was pretty good.

On tap at Ebenezer's into a tulip.
A: Opaque dark brown body under a finger of fine light-brown foam. Nice.
S: Spicy, chocolatey, and grassy. Dark fruits, a bit of barnyard, and some light tartness. Very nice, hugely complex.
T: A wild explosion of flavors: brown sugar, prunes, grass, flowers, clove, pepper, grapes, Brett, and a rich maple sweetness on the lightly boozy finish. Intoxicating in every sense of the word.
M: Frothy, thick, and sticky. In a word, big.
O: I was a bit underwhelmed by this one at first (especially given its $14 price tag), but as it warmed the aroma and flavor both opened up magnificently. I'd really like to try it side-by-side with regular Pannepot someday to see exactly how big of a difference the Brett makes; I'm not entirely sure that the influx of grassiness and faint tartness is really an improvement over the spectacular base, but it was still one hell of a beer.

Had on tap @ Ebenezers.
A: Light creamy head fades semi quickly over the very dark murky color with a very slight brown stained light shining through on the edges.
N: Light wild Brett aromas that leads to some funk, with a little Barnyard, and little vinegar. Not too wild or funky, but definitely present. Some earthy malts to go with that, and the range of Pannepot fruits, figs, plums, nuts, spices, toffee, molasses and I even get a slight sour cherry note.
T: Again the very Panepot flavors, dark dried fruits, figs, plums, nuts, spices, toffee, molasses, some sweet syrups, etc. It has a creamy taste to it too, with a little Brett and wild fink again, some barnyard and some sour tart fruit too. Some light earthy malts too. It has some sour, but subtle, and definite spices. The wild flavors are subdued enough to not overpower, and pretty clean.
M: Medium body with lower but decent carbonation.
F: Light sweetness but mostly dry, with a slight sticky syrupy finish. SOme lingering spices, the typical Panepot spices as well as the same fruits and nuts. Again some creamy flavors lingering with a dry mouth smacking Brett wild funk hammering the dryness. A slight tart fruit wild yeast flavor too. A little warming booze on the finish as well that seems to come out more without the sweetness.

I was recently lucky enough to try three different Pannepot incarnations in as many days - the Pannepeut (Danish), Reserva (barrel aged), and this, the Wild. Came across this one on draught at The Lion's Pride in Brunswick, Maine.
Served to me in smallish goblet, full and luscious head atop a rusty dark brown ale. Clearly this one has been dosed with a little something wild. I believe the bartender mentioned that the 2007 batch was a bit off at brewing, and the brewers decided to push it in that direction by adding wild yeast and aging in oak. I'm glad they did, this is a unique twist on a classic. Aromas traditional to a quad and familiarly Pannepot-ish, rich and malty, sweet, fruitcake, spicy, raisins, and laced with a mild funk. Crazy. Flavor is indeed affected a bit by the "wild", but not as much as I thought from the smell. Still very assertive and lush - rich, spicy deep quad flavors, smooth and bready, with a slight pang of earthy funk, not sour. Umami. Very even yet lively on the palate, and fun and interesting to drink. Definitely a great twist on one of my all-time favorites.

Enjoyed on tap at Ebenezer's pub. Expensive glass, worth having a masterful blend of cherry and wild yeast. An imperial stout aroma. Only a Little head on black coca-cola looking body. Very tasty and drinkable, and leaving some taste on my palate. Goldilocks not too sour and a little sweet.Very drinkable for this level of abv, which did not show its boozy side.

On tap at Ebenezer's Pub
A - dark murky brown with a khaki frothy head. Effervescence from the bottlm replenishes the head for a while. Nice lacing as I drank.
S - tons of dark fruits and caramel along with some spice that reminded me of nutmeg. There was a bit of Brett funk, but nowhere near what I expected. I had expected the Brett to change the beer, but really all it did was add a slight complexity to a stellar brew.
T - very sweet burnt sugar followed by a great nutty bitter finish.
M - Full bodied and slightly sharp carbonation, but it still worked. With as sweet as the beer is, it seemed to leave a slightly dry tannic finish on my tongue. No booze at all.
O - confirms that De Struise is the best quad maker in the world. Just an awesome variation on an already impressive beer. Definitely would love to try again (but still prefer the regular).

Huge thanks to tpd975 for cracking this bottle at the RBWG at Redlight Redlight. Served in a tulip-shaped taster glass.
A - Looks a lot like regular Pannepot - dark, dark, brown color that verges on black. Big off-white foam that eventually dissipates to a thin cap and leaves a little lacing. Maybe not quite as attractive as the normal version, but still quite nice.
S - You can definitely pick out the funk - I actually find regular Pannepot a little funky to begin with, but this is substantially more amped up. There's a lot of sweet fruitiness to the brett, with some light acetic acid and red wine in there as well. As expected, there is the regular backdrop of anise, dark fruits, and spices, but they've been pushed into the periphery. No trace of booze in the nose, which is an improvement over other Pannepots. Wonderful stuff.
T - The taste is a bit of a letdown compared to the aroma - it's a bit medicinal and slightly sour, and there is a large amount of earthy and tannic bitterness in the finish that I don't remember being present in any other variant of this beer. This is all in addition to the dark fruit and licorice malt backbone. Spices are less present here than in the nose. Again, it's less boozy - I was beginning to wonder if it was 100% wild fermentation (and thus a lower ABV), but after the description it starts out as regular 10% Pannepot before going into the barrels. I guess the added flavors and aging have tempered the heat of the young beer a bit. It's probably a 3.75 but I'll round up and be a little tougher elsewhere.
M - The carbonation is a little lower than I expected, particularly for a Struise beer. I actually thought it could use a little more sprtiz and effervescence to highlight the gueuze-like qualities. Soft, smooth, medium-full body, with a nice dry finish and minimal heat.
D - A very interesting experiment, but again I'm not sure it improves on the original beer. The aftertaste was pretty intense and would slow me down more than the ABV, although the entire 750ml bottle would slow down even the most intrepid drinkers by the end. I'd certainly have it again, but I doubt I'll ever have the chance - unless Urbain makes more (wink, wink, nudge, nudge).

This was the 2007 version poured at the Copenhagen Beer Celebration. Poured into a tasting tulip glass.
Appearance: Pours a cloudy mahogany with a finger of tan head that fades to a ring around the edge of the glass.
Smell: Sweet with some dark fruit and caramel notes. I'm also getting some vanilla and mild alcohol warmth. Not getting too much from the wild yeast, maybe it cut the sweetness a tad.
Taste: This one retains the maltiness of the original with some caramel and vanilla notes. Getting some dark fruit and a very mild tartness. The finish is slightly bitter and sweet. I'm having a hard time describing the actual difference the wild yeast made, but they were there and I enjoyed them. I guess I need a more sophisticated palate.
Mouthfeel: The body is syrupy with medium carbonation and a super dry finish. I think the extra dryness comes from the wild yeast.
Overall: This is a very nice beer. The finish just sucks the moisture out of your mouth. The wild yeast seems to have lightened things up a bit and added a tart note, but this is not a sour beer by any means. Very good.

A: Medium brown. Single (tan) fingernail head.
S: Like the other Pannepots, this smells of dark dried fruit, spice, and hint of funk. Not as bold as the others in smell, but inviting nonetheless.
T: Mostly dark fruit with touch of vanilla, oak, and spice. Mild tartness here, but not quite what I was expecting (not in a bad way though). Hint of sweetness towards the end. Decently complex, all things considered.
M: Medium/full bodied with appropriate carbonation.
O: A fun twist on an old classic. Thanks for bringing this treat to Copenhagen in your 30-tap unit, Urbain!

First beer of the day at Ebenezer's last weekend. Had a small taste of this at a previous Ebenezer's venture but got a proper pour this time and enjoyed it much more.
Poured into an Ebenezer's glass looking much like the other Pannepi. Dark brown body with a beige head that retains quite well, eventually reducing down a partial cap near the end. A bit of lace left.
Bretty funkiness is prominent in the scent, but the intense chocolate/yeast/dark fruit of the base beer shine through and meld well.
Like the scent, a good balance and melding of flavors. Has all the yeast, dark cherries, red wine notes, chocolate and leather of Pannepot, with a good dose of brett, light fruity notes and oak brought on by the Wild.
Very smooth mouthfeel, exceptionally drinkable and light for 10%.
Quite a complex beast, easy drinking, could've easily drank 2 glasses of this. 2006 Pannepot still regins supreme in my eyes but this was one of the better variations I've had.
