Huge thanks to tpd975 for cracking this bottle at the RBWG at Redlight Redlight. Served in a tulip-shaped taster glass.

A - Looks a lot like regular Pannepot - dark, dark, brown color that verges on black. Big off-white foam that eventually dissipates to a thin cap and leaves a little lacing. Maybe not quite as attractive as the normal version, but still quite nice.

S - You can definitely pick out the funk - I actually find regular Pannepot a little funky to begin with, but this is substantially more amped up. There's a lot of sweet fruitiness to the brett, with some light acetic acid and red wine in there as well. As expected, there is the regular backdrop of anise, dark fruits, and spices, but they've been pushed into the periphery. No trace of booze in the nose, which is an improvement over other Pannepots. Wonderful stuff.

T - The taste is a bit of a letdown compared to the aroma - it's a bit medicinal and slightly sour, and there is a large amount of earthy and tannic bitterness in the finish that I don't remember being present in any other variant of this beer. This is all in addition to the dark fruit and licorice malt backbone. Spices are less present here than in the nose. Again, it's less boozy - I was beginning to wonder if it was 100% wild fermentation (and thus a lower ABV), but after the description it starts out as regular 10% Pannepot before going into the barrels. I guess the added flavors and aging have tempered the heat of the young beer a bit. It's probably a 3.75 but I'll round up and be a little tougher elsewhere.

M - The carbonation is a little lower than I expected, particularly for a Struise beer. I actually thought it could use a little more sprtiz and effervescence to highlight the gueuze-like qualities. Soft, smooth, medium-full body, with a nice dry finish and minimal heat.

D - A very interesting experiment, but again I'm not sure it improves on the original beer. The aftertaste was pretty intense and would slow me down more than the ABV, although the entire 750ml bottle would slow down even the most intrepid drinkers by the end. I'd certainly have it again, but I doubt I'll ever have the chance - unless Urbain makes more (wink, wink, nudge, nudge).

This was the 2007 version poured at the Copenhagen Beer Celebration. Poured into a tasting tulip glass.

Appearance: Pours a cloudy mahogany with a finger of tan head that fades to a ring around the edge of the glass.

Smell: Sweet with some dark fruit and caramel notes. I'm also getting some vanilla and mild alcohol warmth. Not getting too much from the wild yeast, maybe it cut the sweetness a tad.

Taste: This one retains the maltiness of the original with some caramel and vanilla notes. Getting some dark fruit and a very mild tartness. The finish is slightly bitter and sweet. I'm having a hard time describing the actual difference the wild yeast made, but they were there and I enjoyed them. I guess I need a more sophisticated palate.

Mouthfeel: The body is syrupy with medium carbonation and a super dry finish. I think the extra dryness comes from the wild yeast.

Overall: This is a very nice beer. The finish just sucks the moisture out of your mouth. The wild yeast seems to have lightened things up a bit and added a tart note, but this is not a sour beer by any means. Very good.

Enjoyed on 11 May 2012

A: Medium brown. Single (tan) fingernail head.

S: Like the other Pannepots, this smells of dark dried fruit, spice, and hint of funk. Not as bold as the others in smell, but inviting nonetheless.

T: Mostly dark fruit with touch of vanilla, oak, and spice. Mild tartness here, but not quite what I was expecting (not in a bad way though). Hint of sweetness towards the end. Decently complex, all things considered.

M: Medium/full bodied with appropriate carbonation.

O: A fun twist on an old classic. Thanks for bringing this treat to Copenhagen in your 30-tap unit, Urbain!

First beer of the day at Ebenezer's last weekend. Had a small taste of this at a previous Ebenezer's venture but got a proper pour this time and enjoyed it much more.

Poured into an Ebenezer's glass looking much like the other Pannepi. Dark brown body with a beige head that retains quite well, eventually reducing down a partial cap near the end. A bit of lace left.

Bretty funkiness is prominent in the scent, but the intense chocolate/yeast/dark fruit of the base beer shine through and meld well.

Like the scent, a good balance and melding of flavors. Has all the yeast, dark cherries, red wine notes, chocolate and leather of Pannepot, with a good dose of brett, light fruity notes and oak brought on by the Wild.

Very smooth mouthfeel, exceptionally drinkable and light for 10%.

Quite a complex beast, easy drinking, could've easily drank 2 glasses of this. 2006 Pannepot still regins supreme in my eyes but this was one of the better variations I've had.

Dark brown with a dense, tan head with good retention and moderate lacing, this isn't as good as the regular Pannepot. The nose is quite excellent. A blend of the regular Pannepot with a mild Brett influence, this is complex and nuanced with a little smoke, a little chocolate and a moderate spice character. Great balance on display here. Some dark fruit and alcohol appear. The Brett character is excellent. A little understated (and thankfully so), there's just a touch of funk to keep things interesting.
The palate is solid. Smoke, fruit, plums, and a light spice are all present, along with some toast, Brett funk and a light sourness. Just a touch flabby, I find the finish a little disjointed. The Brett character is light, with a mild funk and some tannins. Some brown sugar is also present. Medium in body with low carbonation, this beer has a great finish, long-lasting with toast, spice and chocolate. Excellent stuff.

Pours a dark, murky, brown-red with a thin ring of light tan foam. Leaves some nice lacing behind.

Sweet cherry and Belgian spice on the nose. Sweet acidity and some barnyard funk. Earthy and musty with a hint of caramel. Nice complexity.

Blegian spice and sweet cherries on the tongue. Much like the nose. Earthy oak. Cherry is the dominant fruit followed by red grapes. More earthy and funky than sour. Nice brett presence. Interesting take on the regular Pannepot. I like it.

Mouthfeel is earthy and dry with a touch of sweetness. Almost saison-like. Slightly tannic. Good carbonation.

Overall, I like this beer quite a bit. A nice addition to the Pannepot series. Tastes more like a fruity brett saison than anything else. I found my glass to be enjoyable, but due to the rarity of this beer I don't think I'll be seeking out another. Worth trying if you have easy access.

2008 Bottle; Sampled June 2010
Interesting, the beer has a light pellicle on it in the bottle, so is obviously still actively fermenting. Oh well, I am going to cut that short by opening this today. I decided to serve this just lightly chilled, perhaps in the mid 60s. A soft pour produces almost a finger of darkly browned, dark-tan colored froth. The beer is a concentrated, dark brown-plum color that shows a clearish, dark plum hue when held up to the light. Interesting, the aroma smells of overly ripe cheese that is not quite rancid, though a rich plum like fruitiness is perhaps a stronger influence on the nose. Some alcohol contributes to a warming sensation in my nose and this mixes with some fruity acetate type aromas. Richer notes of molasses, dates and prunes as well as some lightly toasted dark grain all remind me of a dark, rum soaked holiday cake or even fruit-cake. The ripe cheese note along with the acetate definitely is the most noticeable part of the aroma (it sort of reminds me of rotting fruit), but it is not so strong as to be objectionable and there is just enough other things going on here that the nose is fairly enjoyable.

Lightly sweet tasting up front, the beer has a richness to it through the middle and actually feels quite a bit lighter than one might expect from a beer of this strength. Still there is a lot of viscosity to this brew and the palate gets coated well enough that a rich, dark malt character lingers on after each sip. A healthy carbonation helps to make this beer more drinkable; though despite all this the beer is most definitely a sipping beer. The ripe cheese quality is more reduced than it is in the aroma, but the rotting, though really more fermenting, fruit character seems to be a bit more noticeable. Flavors of concentrated plum (though not quite prune), fig, some date like notes and fermenting raisin are each present and are accentuated by a light tartness. Malt / dark sugar flavors are also found here with notes of molasses, sweet rum, rich almost umami like concentrated malt flavors, light toasted grain flavors that have been soaked in brown sugar add to the general richness here. Some nail-polish like flavors as well as higher alcohols add a warming, almost heat to the finish.

This is actually quite vinous in character, though admittedly in a foxed sort of way; the aroma starts to pick up notes of Concord grapes as does the flavor. Really though there is a soft oak character here (that contributes a touch of oak-spiciness, hints of buttery richness, and a soft wood character) as well as a berry-like wine character, and flavors that I just can't quite put my finger on, but most definitely make me think of a complex red wine.

This manages to be quite rich and decadent, but without having a heavy body; the wild process has definitely dried out the base beer here. This ends up much more enjoyable than it started out as, but still falls short of that brilliantl 2006 batch of Pannepot that I finally polished-off my last bottle of recently. I really like the texture that this beer achieves, rich without being overly heavy, or anywhere near cloying actually. While the acetate, touch of acetone, and higher alcohol heat is always present, it isn't at such a level that I can't enjoy this beer; without it and with more sourness, this beer would be thoroughly brilliant. As it is I'll have to settle for the subtle oak, signature wine influence and rich Pannepot flavors, something I am perfectly happy to do.
