Ebenezer's 2013. Reviewed from notes.

A- Crimson red body into a goblet from the taps. Small off-white head builds up to a finger high and has decent retention and foamy texture. Fizzy ring leaves spotty lace.

S- Big dark fruits and some nice dark burnt/roast candi sugar. Raisin, fig, plums, brown sugar and Belgian yeast spice come to mind. Alcohol is non-existent here.

T- Spiciness opens up more here compared to the aroma for me, that classic Trappist yeast spice. Big dark fruits, roasty candi sugar tobacco, fig, brown sugar, nutty malts and some toastiness. Vinous in a way.

MF- Fairly dry but pretty thick and oily with a good alcohol heat which adds to the flavors and big feel of the beer nicely. Spicy bitterness and lower end carbonation.

Quite fruity overall with a nice Trappist yeast spice. Good malt complexity in there as well.

Had on-tap at Avenue Pub New Orleans. Served in a snifter.

A- Pours a medium brown color with a 1/2 inch tan head that retains a bit before becoming a thick ring around the edge of the glass and a half sheet of surface foam. Semi-resilient lacing trickles down the glass leaving spots behind.

S- Your classic quad aroma with plenty of Belgian candi sugar, roasty malt and a bit of glass. Alcohol pokes it's head out lending a bit of oaky character.

T- Tastes even more glassy than it smells but it's smooth and the alcohol is barely noticeable. Some more candi sugar but it's not that sweet overall. The toastiness is there too but it's subdued as well.

M- Soft and slick with medium carbonation and a fullish body.

O- A very straightforward quad that's good but has me wanting more flavor. Nothing overly exciting about this one. Hides the alcohol well though.

Pours a hazy medium brown with copper highlights and a half inch khaki head that dissipates into a layer of film.

Dark candi sugar, figs, and a underlying vinous note form the initial aroma. Sweet, goal notes add complexity.

There's a vinous character underlying the flavor profile, which is eventually overtaken by deeply caramelized, sweet malt, becoming toasty, nutty and dry at the finish. Prune and plum surface late.

Full-bodied, with low carbonation and moderate alcohol warmth, it lingers on the palate without becoming cloying due to the wine-like underpinnings.

Very interesting juxtaposition of flavors for a quad. Not cloying, and the toasted malt character is intriguing. A little hot. I'd love to seer some age on this to let the esters come out.

2011 bottle

A: Pours a murky brown with two fingers of khaki head that fades into a thin cap with decent lacing.

S: Belgian spices and candy sugar up front with dark fruits and sweet breads following. There are also notes of sweet, fermented fruits and some light wine-like aromas.

T: Belgian spices and candy sugar here as well with sweet bread, dark fruits like prunes, and buttery, fermented fruits. There is a slight alcohol presence toward the finish.

M: Medium body with mid-high carbonation, this beer is light and drinkable considering the abv.

O: A great quad overall. One of the best examples of the style with a lot of depth and nuance while being incredibly drinkable.
