Enjoyed on-tap at Bar Volo, with the owner of Beaus. A complex aroma of coffee and yeast. Black with a notion of head. Medium mouthfeel, or even a tad below for its style. A story in chocolate, and yeast. Very drinkable, more of a single stout really. A touch of sourness mid-sip.

Bottle: Poured a pitch-black color stout with a large dark brown foamy head with good retention and some lacing. Aroma of light coffee notes with some medium black chocolate bitter notes also discernable. Taste is a mix between some medium dry black chocolate notes with some light roasted malt notes which is well round off by some oat notes. Body is a bit light for style with good carbonation and no apparent alcohol. Not bad overall but a bit too thin for style while lacking some character. I also don’t get the Belgian yeast part of this beer.

Matt's Sleepy Time Belgian Imperial Stout shows shimmers of clarity along the base but, by and large, looks like a deep body of water overhung by storm clouds. It is not black but might as well be given its murky darkness. Despite there not being any choppy waves of head, I still wouldn't be traversing those waters. Looks dangerous.

I swear whatever strain of yeast this is I can find it in my spice rack. That, or it's been hanging out with my spice rack. Strong notes of anise, pepper, ginger, and clove dominate to such an extent that it's hard to say what it'd smell like had the Belgian yeast not provided its perfume free of service. It’s especially burly at first but calms down a tad with air.

The beer hits virtually all the typical stout notes - cocoa, coffee, toasted nuts, roasted barley - but also features (due to the spice) the taste of chilies and (owing to the oak) the faintest hint of bourbon in the finish. At times, it can be very Vegemite-like and is oddly savory (more so even than spicy or sweet). There's also just a bit of brambly fruit (blackberry in particular).

The spice doesn't have nearly as strong a grip on the palate as I had anticipated. In fact, the aftertaste doesn't stick around long at all (fortunately neither does the alcohol, which is nearly undetectable anyhow). Still, brief hints of candied ginger show with warmth and that alluring play between spice and stout keeps me coming back for more.

Dive into Matt's Sleepy Time for a spicy, dark chocolaty, before-bed treat. The use of (a particularly expressive) Belgian yeast and oak chips have given this beer a more complex, assertive and intense nature than your usual stout. It may be a slightly acquired taste but it's undoubtedly one of the more successful "Belgian stouts" I've come across.

On cask at Volo, served in a tulip.

Pours almost black, some mahogany highlights. Few fingers of fluffy and soapy offwhite head, no lacing but fantastic retention. Nose mild chocolate notes, some tripel-esque esters, some pear and a raw banana peel scent becomes really apparent with warmth. Taste has this banana peel again, milk chocolate, mild green apple and vanilla. Some harsh alcoholic qualities becomes evident halfway through the sip, and burns. Odd for a relatively low ABV (in terms of being imperial). Lacks a degree of body here, and I find this to be a very confusing offering overall. Some qualities of a tripel and imperial stout are blended in a less than impressive way, lacking coherence. I was befuddled by this, and was left indifferent and unimpressed. I recall having this when it initially debuted at Volo last summer and being significantly more impressed , but either by a function of palate development or otherwise, I can't say I feel the same way about this now as I did then.

On tap at Volo, served in a snifter.

Pours a clear dark ruby red, black away from the light, thin light tan head forms and quickly settles to a thin ring around the glass, no real lacing and the dies quickly.

Smell is neat, quite oaky, alcohol, dark fruit, a bit of brown sugar sweetness, light chocolate wafer and a touch of roastiness, vanilla, not bad.

Taste is similar, sweet up front, chocolate, some roast, caramel, a bit of dark fruit, oak, vanilla, alcohol, I like the fruit character but the oak was a touch astringent.

Mouthfeel is light bodied, almost thin, with rough carbonation, maybe not so much highly carbonated but not so well integrated. Some significant warmth going down. Won't roll with the big boys, but a good experiment.

A: Brownish-black with ruby highlights, light-tan head, thin ring of retention, good lace.

S: Java, bakers chocolate, light spicing (cloves?), molasses

T: Molasses, java, bakers chocolate, cloves, brown sugar, balanced bitterness, warming alcohol.

M: Moderately full body has a light acidity.

D: A good drinker... actually quite dangerous at this strength!

Bottled on 11/27/12. Poured in to tulip glass.

A - Poured dark brown and settled black with two fingers of fluffy light brown head.

S - Big roast and Belgian yeast aromas up front with some chocolate in the background. Not getting any of the oak.

T - Belgian yeast dominates the palate up front and throughout. Some roast, chocolate, and a very faint touch of oak come through as well but the Belgian yeast flavours completely overpower and make this difficult to drink.

M - Medium body and creamy. Light carbonation. A nice body.

O - Very one dimensional.

600ml bottle from the Ottawa LCBO - part of a mixed 4 pack for $22

Appearance - Dark brown colour with an average size frothy light brown head. I can't make out the amount of carbonation showing and there is some fairly good lacing. The head lasted for 5 minutes before it was gone.

Smell - Malts, chocolate syrup, coffee

Taste & Mouth - There is a below average amount of carbonation and I can taste malts, chocolate syrup, and coffee. There is also a bit of a yeasty spiciness and a graininess.

Overall - Some nice chocolate flavour going on and some interesting grainy/yeasty taste. Not your typical Imperial Stout. My bottle is going on a year old, and it has held up very well.

The first in a new series of small batch beers from Beau's - a brewery who have impressed me by putting together a very nice regular lineup.

Pours a rich dark brown with a creamy tan head that dropped to a film and left some nice streaks behind. Misses the boat on the blackness a bit, but carrying on... Smooth, roasty aroma puts me in mind of a café mocha, though as it warms up the fruit gradually take over and I start to get more and more plum. Its much the same with the flavour, which initially seems characterised by a smooth roast (coffee, cream chocolate), but then has increasingly noticeable fruit tones. That's not to say that the fruit ever dominates the flavour, and I would have preferred perhaps a bit of cherry in this to amp up the Belgian aspect. It certainly doesn't drink like an imperial stout, and I have a hard time believing the listed ABV of 8%, either something's askew or these guys have a darn good talent for hiding the alcohol! Slightly thin body would match the flavour better if it was bulked up and smoothed out.

Overall, a very quaffable offering that didn't take too long to polish off. It seems that one of the hallmarks of this brewery is that they can put together some insanely drinkable offerings. Stylistically this doesn't really tick the boxes for an imperial stout as it doesn't really seem big enough, and as a Belgian offering it doesn't seem Belgian enough. A beer like this could fall between a number of stools, but somehow I still liked it. It will certainly be interesting to see what the upcoming offerings will be.

Look at Canadian craft brewers making some noise! Throwing down the gauntlet with a Belgian Imperial Stout that is aged on oak staves. The darkness draws us in and a cropped lacing does its job. Hints of mocha, blackberry jam, musk and burnt bread come to mind within the first few sniffs. Creamy body with a snappy crispness. Complexities try to cram on to the palate all at once; choco-roasted malt, herbal phenols, warming fruity alcohol and a kiss of hop bitterness. Suggestions of anise, charcoal and black peppercorn in the middle. Dry maltiness is strong but lets every- thing slowly unfold. Dark unsweetened chocolate and alcohol in the finish.

Bottled November 27, 2012.

Beer is very dark brown, almost black. A large tan head on top. Moderate retention, nice amount of lace.

Nose prominently displays Belgian yeast, oak, roast malt, anise and dark fruit flavours (plum, fig).

Taste contains oak, chocolate, dark fruit (fig, raisin), coffee, vanilla and Belgian yeast. Some anise. A bit smoky. Moderately bitter. Dry. Lots of flavours going on, but all integrated well with each other. Definitely get both sides of the story: Belgian ale and stout (though certainly leaning towards the latter).

Full bodied, moderately carbonated.

Overall, a good beer, The best I have had from Beau's. Have been interested in trying this one for awhile and am glad they brewed it again. Does not fit well into the imperial stout category, but it is a tasty brew.

APPEARANCE: Pours out clear dark brown and yields a three finger, medium looking, creamy, light tan head with excellent retention. Head slowly fades to a full wisp and sticks to the sides of the glass a bit. Transparent dark brown body with lower levels of carbonation evident. A half wisp remains leaving dots of lacing down the sides. Head is fine, but the body is just too clear and light colored for the style.

SMELL: Roasted and spicy notes with a touch of chocolate on the nose. Quite mild; had hoped for more character here.

TASTE: Lightly roasted flavors and some spicy yeast up front; definitely Belgian in style. Some caramel and roasted notes with touches of milk chocolate at the swallow. A medium but lingering finish of caramel, roasted barley, with spicy clove and yeast notes a well. Touches of bitter chocolate is there in the finish as well. Flavorful and interesting enough.

PALATE: Medium body and slightly higher carbonation. A bit light on the palate, creamy enough, goes down fine with a bit of a scratch at the swallow and finishes slightly dry.

OVERALL: A solid beer, but Belgian stouts never seem to know what they’re doing. They’re neither roasted and chocolate heavy in flavor, nor spicy and fruity enough like Belgian strong dark ales. They’re kind of caught in the middle somewhere. This one is interesting enough, but doesn’t really come out boldly and make a statement. Check it out if you’re a fan of the style, but not if you’re craving a strong stout or a Belgian dark ale. Thanks again Hopsolutely! The Beau’s pair was a lot of fun.

Basically completley black, 1.5 fingers of tan head, good lace and retention. Smell is chocolatey with spice, belgian yeast is pretty in your face, orange peel like citrus is also here with a bit of sweet sugars as well. Taste is spicy, roast and anise, lightly sweet as well, a bit herbal with some coffee bitterness, spicy in the finish. Medium carbonation, medium bodied. Just OK, some interesting things going on here, and I could have another glass of this again but not something I would go out of my way for.

on tap: Puts a dark brown-black ale in the glass, puffy tan cap, good kacing, soft carbonation. Aroma is musty-Cocoa-toasty, belgian yeast evident here. Flavor is lightly sweet but toasty-nutty with smoke undertones, not mucj hop balance, what there is is woody oak tones, long roasty chocolate finish. Interesting and tastey, no hint of the strength of this beer.

Appearance: It has a nice dark brown, almost black color to it. It has a nice thick beige head that dies down slowly and leaves little lacing.

Smell: The aromas definitely give out hints of Belgian yeast, sweet roasted malts, chocolate and light dark fruit.

Taste: Like the aromas, it has a some Belgian yeast, roasted malts, chocolate/coffee, some oak and a touch of vanilla.

Mouthfeel: It has a low carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.

Delighted to finally track down a bottle of this limited release. However am reviewing it specifically as a Belgian Imperial rather than an American Double, as I found the Belgian yeast overwhelming pretty much all other flavours in both aroma and taste.

Beautiful dark colour with coffee coloured head and silky mouthfeel. Not oily, but a creamy, thick texture. On the nose the Belgian yeast was predominant, with faint hints of roasted malts in the background. This may have been a result of the age of the bottle, as likewise in the taste the yeast was definitely in the forefront. Hints of oak, but less complexity than I'd expected.

Perfect for anyone who enjoys Belgian beers!

600 ml bottle served chilled into beaus glass. Colour is black with impressive lacing and film, dark tam head they is quite plentiful and then dirs durn.

S- spicy with anise and light alcohol, raisin and bitter cocoa, dark malts with nuttiness and a hint of roastiness. Lots if vanilla and some herbal character.

T- smooth dark malts, dark chocolate, then oak starts to drive the flavour. Spicy and plenty of oakiness to it, dark roast malts add a rich dark chocolate and caramel character and rich fruit character. Alcohol blends with the yeast to create a filling upfront bit and spice to it. Barrel character doesn't come through much until it starts warning up. Dry and oaky on the finish, some tannins stick around.

M- good upfront bitterness.a bit of a herbal licoury feel to it though. Also the carbonation is quite smooth and light, you do pick up more of the thicker barrel character as it warms.

This is definitely a bedtime stout, overall I would say it pulled it together quite well. At times it seems like the yeast and barrel aging might overpower the beer it manages somehow. Roastiness on this was intense and tied well with the oakiness. It just sees a bit brash and rough, I might see about getting a bottle to age to see if I like that better. Maybe it's the alcohol creeping through the palate on this but it just feels like it could be better.
