Modiale 2007. A little white head on cloudy orange. Appealing aroma of spice and yeast. Taste is great, fortified with rye, a good saison in a great style. Sourness in the finish. Good medium plus mouthfeel. Lace in the glass. Refreshing. Had it again in 2008 and was not as enticing.
Had a bottle in 2011 and confirmed it rather ordinary, very barnyard aroma though fresh bottle.

Last half of the bottle. Cloudy peach juice. Nice marshmellow head, great retention. A few floaties.
Yeasty. Almost hefe-like with some nice banana-bubble-gum notes. Different, but really quite nice. Hard to explain, certainly Belgian, but has a kind of German character to it.
Rye really (perhaps obviously) stands out in this one. Peppery spice throughout. Pronounced yeast contributes some nice light fruit. Get the bubble-gum again in the finish, perhaps my favourite part of this one.
Mouthfeel is really great. Light taste, but feels quite substantial. True to style. A very nice saison.

A- It's a gusher. Beer keeps rising out the top and careful pours yield glasses of pure head. So there's probably something wrong.
Golden with a copper tint. Once the head recedes to a normal level, I notice it's creamy dirty-white (almost beige). Big chunky lacing. Looks good. Gets a lot cloudier as you get to the end of the bottle.
S- Light grapefruit in the hops. Lots of nice smelling alcohol. Kind of smells like dry oatmeal. Poured a second glass and am getting a yeasty smell. Passion fruit.
T- Hops seem greener. Smooth tasting but alcohol is extremely present. Almost tastes like vodka. My girlfriend a I agree it's pretty homebrew-like.
M- Very smooth. High carbonation. Not particularly dry.
D- Quite good. Interesting taste and texture but still manages to feel light. Alcohol taste a bit too strong though.
Good beer. Makes me want to try some other Hopfenstark saisons.

This bottle was a mild gusher with a head to match: I poured it as slowly as I could muster and still ended up with over half a glass of bubbly froth. It kept growing in the glass until it was about to overflow, so I drank from the top and set it down. After looking away for a few seconds I looked back to find it spilling over the edge all over the table; it then did this a third time! This must be the most persistent head I've encountered. Said agressive head is light orange-beige in colour and sitting atop a hazy, glowing golden-orange body which sports tons of visible carbonation. Lacing in sheets. Exceptional retention.
Smells like a serious saison. Lots of astringent lemon, corriander, pepper and assorted other spices, cotton candy, flowers, rye reminiscent of good Canadian whiskey, funky earthiness.
The sweetness in the nose isn't coming out as much in the flavour, leaving the taste a little on the dry side for my liking. This would be my only main complaint however; this stuff is pretty alright. Makes me think of what Unibroue's Blonde de Chambly would be if it was done right. Spice is quite present but expertly balanced, with coriander, pepper, clove (along with some slight weizen-like banana) and possibly a handful of others blending into each other seamlessly. The base is quite drying; barely any sweetness comes through. The certain astringency I've come to expect from beers brewed with rye is met with tart green apple, lemon pith and earthy hops (the specific quality of which seems to get lost amongst the spices). The version I have here is at 6% ABV, so no alcohol is showing nor would it be expected.
This is one of these beers that feels full while remaining light. Reminds me a little of Chimay here, really nice. Somehow the seemingly copious carbonation doesn't really tickle the tongue as you'd expect.
The drinkability is somewhat curbed by the astringency and carbonation (producing lots of annoying frothy burping), though I'm sure this would go down exceedingly well on a hot summer day. Great stuff anyhow, this 750ml was just too much to tackle on my own.

Bottle: Poured a cloudy dirty beige color ale with a huge light dirty brown color head with great retention and some very good lacing. Aroma of funk and farmyard is quite intense with some light apricot and some light spices. Taste is quite complex to describe though yeast is properly the main component that produces a very funky taste with light fruit notes of apricot and candy. Body is full with limited filtration and great carbonation. Very well brewed and somewhat disappointed that I can't find this more easily.

Ok, for me this is a rare beer. Very hard to get my hands... but finally got it. I have lots of expectation.
The color is orange and the beer is hazy. Nice foamy head on top. Soapy look. The aroma is tropical fruits, very intense. Light notes of sugar too. Citrus and grapefruits. Nice and watery! Lets dive in! Fruity. Oranges and citrus. Bitterness is light. Very refreshing and drinks so easy its crazy! Dry and effervescent in the mouth. This is a summer beer... very good and refreshing.

Cloudy and bright golden in color with a huge towering head of white foam that came up and over the top. Settled down gently with a good bit of side glass lacing along the way, really nicely done here I have to admit. Aroma was rich, light fruit, apples, bananas, and hints of lemon zest are all over this one. Really complex and a nice light aroma here. As it warms becomes a bit grainier though the hops still stay prominent with the rich lemon touches. Smooth flavor and a nice light to medium feel on it. Lively carbonation keeps it dancing across the tongue throughout. First notes to come across are a rich mix of lemon and light banana. Fresh grass and a nice touch of grain starting to pile on now, but it is still staying very bright overall

A: The beer is hazy golden yellow in color; it poured with a thin layer of bubbles covering the surface that eventually faded into wispy patterns.
S: There are light to moderate aromas of spices, sourness and yeast in the aroma.
T: The taste is very similar to the smell, except that the spiciness from the rye prominently stands out, but is not in any way overpowering.
M: It feels medium-bodied and somewhat dry on the palate with a moderate amount of carbonation. A light amount of dryness persists through the finish.
O: The beer isn’t that difficult to drink because the flavors in the taste (particularly the rye) are well balanced. The spiciness also lends some properties that make this saison refreshing.

I had this on-tap at Max's during Baltimore Beer Week. Served in a sample glass.
Appearance: Pours a cloudy amber with a small amount of off white head that leaves a ring around the edge of the glass.
Smell: Some light, sweet malt and citrus notes. The dominant smell here reminds me of a garbage can on a hot day.
Taste: Unfortunately, just like the smell. I just couldn't get past the trash note. A bit metallic in the finish.
Mouthfeel: The only problem with the mouthfeel was that I had to take another sip to rate it. Medium body with tingly carbonation and a mildly dry finish.
Overall: I don't know if this keg is off or what, but this beer was just terrible. It literally tasted the way hot garbage smells. I would try another sample if I get the chance just to see if this is really what it is supposed to taste like.

750ml Bottle from Marche Omni QC for $8 - listed at 6.5% ABV
Appearance - Clear yellow colour with an average size white coloured head. There is an average amount of carbonation showing and there is some fair lacing. The head lasted for around 2-3 minutes before it was gone. There are a few small chunks floating around.
Smell - Apples, corn, breads/grains, yeast, banana
Taste & Mouth - There is an above average amount of carbonation and I can taste malts, corn and apples. There is also some bread/grains/yeast and a bit of banana an clove.
Overall - Very drinkable and somewhat muted flavour wise. There are a variety of flavours but none really stand out above each other. A decent brew.

On tap at DBGB's in NYC: pours cloudy orange in color with a creamy 1 finger white head that faded slowly, leaving good foamy lacing as it slides down.
Smells of sweet malt, spices, rye, grains, floral hops, flowers, herbs, grass, pepper, coriander and something else like cinnamon or brown sugar; the nose is on the sweet side, but still quite interesting and nice to inhale.
Tastes of sweet malt, spices, rye, toasted grains, floral hops, flowers, herbs, grass, pepper, coriander, brown sugar, grapefruit, sour apple, pear, yeast and a funky buttery aftertaste leaves a dry finish that tingles with orange peel and spices as it slides down. A really nice saison that's fruity and tart, yet still complex and very enjoyable with a nice amount of spice heat.
Mouthfeel is creamy and oliy slick, with a medium body, light fizzy carbonation, and tart funky end that trails off dry. Really nice and complicated, this went down very easy and slid down easier than it should considering the great flavor and ABV. A really enjoyable beer that I highly recommend if you can find it.

Gusher initially, though I think that's attributed more to it's inability to settle from getting banged around in my bag for the better part of the day. Nonetheless, poured a golden brown with two fingers of white head that falls to a nice thick collar. Unfiltered. Nose has a whole bunch of funk/farmhouse-iness, hints of tart fruit, orange, citrus rind, some spicing and generally pungent thorughout. Taste has more of the funkiness from the nose, tart lemon and orange notes, unripe green apples. Spritzy mouthfeel, spicy with a bit of 'bite' to it. Almost gueuze-like in some aspects, oddly and interestingly enough. Refreshing, interesting, funky and fruity.

sampled oct 17/08 on tap at volo as part of cask days 2008.
pours hazy orangey amber with tons of fluffy white head. the head drops slowly and leaves lots of spotty lace behind.
aroma is great. citrus. caramel. light spice. mild funky component. hint of alcohol. some grapefruit and tangerine. light sourness. some coriander. bit of sweat sock funk.
taste is great. much like the aroma, but with less funk noticeable. there's also the addition of some light caramel and sweet citrus.
mouthfeel is good. fairly low carbonation. medium-light body.
drinkability is great. love the depth and bit of funk giving it that extra flare. nice balance too. i was happy to go back for several samples of this one and it was one of my favourites of the fest.

Didn't see "Hopfensterk" comin' from Canucklehead origin, but, hey, there you go. This beer pours a relatively clear bright straw topped by over a finger of white foam. The nose comprises some spice, sour grapes, sour apples, and some light toffee. Didn't see those sour notes coming. More surprising, they were even more prevalent in the taste, where they were joined by some cobwebs as well, not unlike an unblended lambic or gueuze. I'm all for experimentation, but this is a bit much, deviating a little too far for me to really appreciate/enjoy. The body is light, with a lightly active carbonation and a crisp, dryish finish. Thanks to the overt sour notes, can't see myself ever trying to get more of this later on.
