On tap at Max's tonight.
The beer pours a bright, solid gold color with pretty good head retention and lacing. The nose is all saison goodness, showing considerable clover honey, orange citrus and clove. The flavor profile generally replicates the nose in this rich, moderately sweet saison. There's enough hoppy bitterness in the finish to keep it all in balance, and I'm amazed by the richness and length in the finish. Drinkability is quite good, considering the abv.
Really hard to believe the abv. in this beer is only 5%. While the beer isn't boozy or hot, I just don't see this amount of flavor very often in beers with this little alcohol. Very, very impressive.

Bottle at one of the American release events @ Beer Table, Brooklyn. Day 2.
Pours cloudy dark orange, thin, soapy bone-white head.
Nose is sharp, nice dose of bretty farmhouse sits atop some more orangey goodness, with a nice grassy note wrapping everything up.
Taste is sharp, bretty up front (musty, barnyard), some orangey round citrus following and a big, very pronounced herbal note that lingers to the finish. My new favorite of the three saisons sampled, with all three being excellent. This one is fascinating.
Mouthfeel is light, a crisp carbonation keeps things moving. Nicely done.
Drinkability is superb, light and crisp and yet supremely flavorful. Beautiful.

750 ml bottle, thanks Ralph! Hopfenstark does some badass saisons.
Pours a very cloudy dark amber/orange, huge and thick white head forms, very chunky looking, tons of lace, really nice. Smell is great, very spicy, some honey and sweet toasty malt, yeast, cloves, lots of spice, cardamom, very intense, nice sourness and funk, great. Taste is great as well, honey sweetness, very fragrant, perfume, some light tropical fruit, sweet and sour middle, ginger and spice, lemons, funky sour finish. Mouthfeel is light to medium bodied with high carbonation, very refreshing. Has a nice zing to it, great saison. Thanks Ralph!

hazy golden yellow color came through immediately. Lots of sediment in here now as well. Huge carbonation profile could be seen with lots of chains of bubbles cascading up to the top of the glass to reinforce the huge champagne like head that came over the top of it. Lots of side glass lacing and a copious foam that would not quit. Very nice aroma here, lots of light grain, hints of grass, light lemon and a touch of grape. Nice airy smell gave way to a very nice flavor. Very light, and perfect for this summer day. First way was a slightly tart fresh grass like flavor. Some hints of peaches, pears, and a touch of tartness as well. Very nice light cereal grain flavor in the middle which became a touch bready as it warmed. Long finish of dried out bitter earthy notes and a touch of light fruit

750ml bottle poured into tulip 11/9/12 bottle sent my way by unibroue4ever cheers Yannick
A a bright golden yellow with lots of hazy from tiny suspender particles, a little dead on the pour with just a thin film after a aggressive pour but it somehow leaves a few pencil thin but distinct rings of lace
S a little funky yeast and bubblegum, lots of spice and some orange marmalade, sweet grains, some peach, pear and pepper and faint booze, smells awesome
T right along the smell but more grains and fruity notes, it tastes as good as it smells and that is a good thing, just a little sour apple and the mild funky yeast balances well with everything else its very well executed
M a little still and very slick, fairly thick and a lingering aftertaste of spice and cereals but I felt this was the only low point in a wicked brew
O tastes and smell is about as solid as it gets but the minor things could use some attention, that being said this is very drinkable and the booze is hidden quite well
I can see why this obscure offering popped up on the Canadian top 100. Thanks again Yannick for sending me this bad boy

750mL brown glass pry-top high-shouldered bottle thanks to Fred! No label.
Pours a super frothy hazy bright golden hay color with lots of bone white head that has great retention.
Nose: The first thing that comes to mind is lemon and white pepper. Golden hay, orange pulp, and a little fruitiness from the yeast. Super bright and reminds me of a field in Spring.
Palate is crisp and clean. Dry, but fruity at the same time. Not a lot of hop presence here, but I think it's the yeast that dries it out a bit. Citrus zest is a big flavor here, lemon, lime and orange. A little of that bitter citrus oil flavor too. Grass comes in towards the end.
Notes: A wonderful, wonderful saison. Excellent balance, nice dryness without any real hop profile. Fruity, but it's kept in check. Well done!

300ml at Volo. Arrives a pale golden, just a thin ring of bubbles. Nose is citrus heavy with a hint of tropical fruits, a touch of honey and a light tartness. Similar in the taste, quite a rounded chewy body with a solid sweet middle, finishing off with a medium tartness and a light drying. Hints of grass, lemon peel, sour apples. Perhaps not as refreshing as some of the drier version of the style this saison suits the winter months and is immensely drinkable, packs a real punch for the ABV. Gladly drink it again.

On-tap at Local Option. I love having Canada represented at my local bar. Served in a chalice.
A - A nice white foam settles to a near-complete cap, splotchy lace, and a thick collar. The body is a transparent golden yellow color.
S - Slightly grape-forward, with a hint of Pez - reminds me of certain Fantôme batches I've had - stone fruits, and minimal funkiness. The white grape flavor is actually reminiscent of an authentic Kölsch, but there's some spicy and peppery farmhouse yeast too.
T - Again, it's a fairly tame Saison, with lightly sweet pale malts, stone fruits, bread, wheat, and a hint of toffee. Yeasty finish, with negligible wild character.
M - Medium body, pleasant soft carbonation, juicy texture, and no perceptible alcohol.
D - If you're looking for a nice, albeit traditional, Saison this is a good option. The goblet went down quite easily and I could totally have had another one if Tony hadn't been so generous with the samples.

Sampled at Le Mondial.
Poured from a pitcher which i have to assume was from a tap since that's all they had.
Appearance: A totally cloudy peach-orange color with some head though there was lots of sticky foam in the pitcher.
Smell: Real nice smell. Meadow full of flowers, light mint, a slight sourish twang and overripe fruit.
Taste: Herbs, oranges, sourish peaches, fleshy fruit, banana chips and a type of flower that i can't pin down. Real nice.
Mouthfeel: Real smooth with a very low carbonation and balanced bitterness.
Overall: A very enjoyable saison that i would love to drink on a patio.

Poured from the bottle a hazy golden-orange color with one finger of bright white head. Some sediment in the glass – most left behind in the bottle.
Earthy aroma of horse blanket and yeast with lighter green apple, pear and herbal notes.
The taste was bright and tart with green apple, pear, banana, pepper and yeast.
Medium bodied and crisp with a light-to-moderate carbonation.
A very nice Saison out of Quebec from Hopfenstark.

Clear pale orange colour, light white head, no lace to speak of. Smell is yeasty with lots of tropical fruit, lemon, lightly funky, wheat and some vanilla, nice malt bill as well. Taste is quite fruity, yeatsy with a subtle understated tartness, fairly dry with some candy flavours, apple in finish with light medicinal properties. Light carboabntion, medium body with a light feel that is quite nice. Nice light saison, above average and fairly easy drinking.

Served in a tulip glass. Bottled in July, 2012
A: Beautiful gold straw yellow colour, cloudy with a very quick initial large bubble frothy white head, with lots of micro bubbles exploding up through the head. Retention is medium after the head dies down, staying on top quite some time, and leaving plenty of lacing on the sides of the glass as it goes down.
S: Aroma is of slightly sweet grass/yeast, and you get a nice green apple sourness, almost cider like.
T: Starts off with nice grains and yeast flavours followed by some different stone fruit, maybe some peach/nectarine... Finishes with a more herbal, tart (again apple, or something mildy citrus) and at the end a dry bitterness. I get a bit of this funky (bubblegum? as others mention?) flavour, but only on the first few sips, then it mellows out or my palate ignores it... very interesting flavours for a saison here.
M: Medium carbonation at the start that then turns very mellow and smooth as it finishes. Well balanced, just a hint of alcohol and a refreshing sparkle throughout
O: Not a completely typical Saison, which Hopfenstark is not about anyway. Instead of being overly grassy/yeasty/citrus-y you get more herbal, fall fruit, but still with a nice amount of grains/citrus and a nice yeast(hop?) profile in this one that as it seems from other reviewers is hard to narrow down what exactly some of the flavour/smells are. But you can tell this is a well crafted brew in the balance of the beer and the overall flavour composition....If I had one complaint is that perhaps it just has too much sour apple. After a couple of glasses it starts to be a bit much and you feel like you're drinking more of a cider than a Ale. Overall, enough complexity to keep you interested, enough drink-ability to make you go through the bottle quickly until you're over soured. Overall a very nice Saison that I'd definitely recommend trying.

Draft: Poured a dirty opaque beige color ale with a large foamy head with super great retention and some good lacing. Aroma of spices and herb with great rustic malt notes. Taste is very refreshing with great notes of spices and herb (something similar to coriander stands out but I couldn’t say what exactly), some rustic malt notes and some light funky ester. Body is quite full with some very limited filtration and good carbonation. Very nice beer which I would love to have more regular access to.

The color is within the appropriate range for the style, sitting right about in the middle at a thickly hazed gold. A pure white head caps it, chunky and dense, at over one finger tall. Retention is excellent, and some thick, patchy lacing sticks very well.
Earth and spices complement lots of ripe fruits on the nose. White grape comes in and out in flashes. A peppery bite I'd expect from a saison comes out with it.
A little funky earth and very light hops bitterness counters the fruity sweetness nicely, and the spices don't overwhelm but avoid being overwhelmed themselves. It's herbal, but not as much as I'd expect from the label, which may be a good thing. This is a nice, refreshing, deep and flavorful saison.
Frothy up front but with a carbonation that tames itself after the inital sip, the refreshing light body still has depth to it while remaining smooth and nipping the palate.
