This brew pours a pitch black (no light goin' through this one) with a small amount of deep caramel colored head that fades quickly. The smell is subdued in this, maybe because it's a year old. The beer smells of chocolate with roasted bread character along side, a bit of dark fruits comes through but mostly this smells like rich chocolate, both sweet and bitter.

The flavor has to be one of the mellowest for an RIS I've come across. This flavor is big chocolate malt that comes across on a very light body, much less heavy than expected. Big on sweet milk chocolate in addition to a back end that resembles dark bitter chocolate. At 11% or more now the alcohol is very well hidden. I have to imagine it's the wild yeast that sets this apart with its light body and great drinkability. The flavor I'm getting normally comes from a beer that's thick as syrup (not so literally). But this is very light bodied and drinkable for the style.
