Hibernation ale is both colorful and aromatic. The beer offers good clarity and an aroma that features scents of chocolate, alcohol, and a touch of brown sugar. The beer itself is medium to full in body with taste sensations that include cocoa, sugar, malt, and a touch of citrus/plum. The taste is sweet overall, but there is a very nice balancing effect from the dry hopping. The flavors go from sweet, to dry, and back to sweet leaving a pleasant, candy- like aftertaste.
Many reasons exist to enjoy this beer and chief among them is the delicious complex flavor. I really like the way the beer balances itself. It is sweet overall, but not by much. The dry- hopping and the alcohol provide enough bitterness to balance the taste. Some might think the overall flavor is too candy- like but I find it just right for a winter seasonal.
The alcohol level of Hibernation Ale is greater than average so one needs to be careful not to consume too many too quickly. With such a rich, delicious taste, it is easy to imbibe too many and let the effects of the alcohol sneak up on you. I sampled two bottles which seemed just right. The great taste and the warming effects were both right in sync.
Overall, Hibernation Ale is a very good product from Great Divide and one worth trying if you get the chance. It is brewed only a few months each year so you need to act quickly. A few more weeks and you will have to wait until the next brewing season to begin. And this is a beer you dont want to wait for. It ranks among my favorite winter seasonals.
