This was my first Doppelbock and it was an extremely enjoyable experience.
From other reviews, I was expecting a little more of a head to the beer, the beer has a relatively thick consistency on pour
The smell was caramel-like with what I thought was a hint of grape/berry-like smell, but as I drank it, the predominant smell was caramel-toffee-like.
I bought it in the bottle cold, and I drank it slowly over about an hour - as it warmed, the sweetness of it came out.
My favorite part is that bready taste that kicks in just as you swallow.
Although a high ABV, it didn't taste like it did. I wish I had had some cheese to have with this, this is the perfect beer to enjoy over a period of time - I think it would greatly benefit with a food pairing.

Served in a snifter.
Appearance: Clear red amber with slights haze from the pour. Off-white head maybe 1/3" with a hard pour and light bubbles to its frame.
Smell: Very light maple hop scent. Comes and goes.
Taste: Can you say awesome? Very good relaxing bitterness offset with a bit of sweetness to it. Has maple syrup likeness to it that is very addicting and perfect for this weather we're having.
Mouth: Medium body, feels light with averse at best stickiness.
Overall: i haven't read a review yet for this beer but I can see the reviews being a over the place. Definitely more of a warm weather beer, really doesn't need tweaking and honestly I would be glad to buy another bottle. Salud.
