From a 22oz bottle in CA.

Pour: A lovely, interesting color. Hazy golden copper that doesn't look much like beer. The head is dramatic, two or three fingers, and settles almost instantly. It'll sound strange, but put your ear up next to the glass, and you can distinctly hear the head dying. More like cider than beer. Once the head is gone, it stays gone. Zero lace.

Smell: Herbs all the way. Bay leaves are common enough that I can recognize them, peppery lemon musk, as well as something tropical/sweet. Zero hop, but a little hint of malt in the background. Almost smells like a very mild sour ale.

Taste: Kind of like a juicy pink sweet tart. Some ‘sour ale’ vinegar in the middle, and a tiny bit of bitter in the very finish. Can’t find any hops. I don’t have much experience with herbal beers, but this is interesting. Cidery.

Mouthfeel: Thin, sharp and shallow carbonation, dry and sour to finish things up. The taste is odd, but the mouth makes you keep drinking.

This beer certainly deserves a try. Just remember to listen to the carbonation.

Review from BeerAdvocate Magazine Issue #57 (October 2011):

In the same vein as their Yerba mate IPA, Morpho again chooses the road less taken with the use of hibiscus flowers and bay leaves. Not sure if we are drinking beer or a shaman’s tonic. Extreme it is, and it receives at least that much appreciation from us.

LOOK: Fizzy garnet

SMELL: Bay leaves, floral, sweet, herbal, tea, soft

TASTE: Slick, heavy herbal, perfume, sweet malt, mild tartness, potpourri, estery

Organic Ale brewed with Yerba Mate, Hibiscus Flowers and Bay Leaves.

Pours a crystal clear medium/dark orange with a big off white/yellow tinted head that pours thick and fluffy but is short lived.

Nose is full clove, medicinal spice and huge bay leaves. The medicinal nose is off putting but the bay leaf nose is pleasant if you like bay leaves. Almost smells like a spiced pasta sauce!

Mouthfeel is medium/thin with lots of carbonation and fizz. While the mouthfeel is not bad or "uninviting," the crazy flavor profile supercedes just about anything else. Retains a very fizzy/high carbonation even after being open for a while.

Flavors profile is full on clove, black pepper, green pepper/celery, salt and overwhelming bay leaf. There is an interesting floral undertone in the flavor profile but the heavy green spice/bay leaf character just heavy handedly over-rides all else.

I had trouble swallowing the first taste; then gave it a second and third try in order to be fair. Candidly, for my taste, I could never drink this - it tastes like medicine. However, being as objective as I can, I suspect that there are people who like a green/bay leaf/vegetal flavor profile. Almost has a green "wheat grass" character to it. All in all, it tastes (to me) like "bad healthfood beer." Not for me.

This beer lives in its floral aroma cut by the savory citrus of bay leaf.. Deceptively dry given the deep pink appearance, I could see this being a great beer to have at my next lunchtime picnic. Enough aroma to keep me interested and the soft mate finish won't be too harsh in the sun...

It does take a few sips to wrap your tongue around this one, however, as it takes you by surprise given what you might expect from a pink beer..

On-tap in the Rogue Pub on Union St, San Fransisco on 3rd Feb 2013.

Red with a copper hue: on top a thin covering of almost salmon pink bubbles.

The nose and taste were simular to 'gluhwein', with extra cloves thrown in for good measure. Strange but interesting brew and a good night-cap after an evening trying most beers on the bars chalkboard.

White with rose-ish accent to the head. Ruby red color.

Massive herbal smell- very much massive tea influence. Lots of spice- kind of berry-ish.

Again- red berry on the first tasting note. Spice I can't really define (beyond being tea like). A bit of bitterness on the end of the taste. Not overly dry, finishes well.

I guess I'd call this a spiced berry beer if I didn't read the bottle. A nice example of what can be done with herbs in beer, and definitely worth a try on that account, but not one I'd keep a regular part of the stable.

A-Pours clear, rusty copper with almost no head, just a few tiny bubbles rising to the surface.

S-Very reminiscent of the Alba Scots Pine Ale. The bay leaf herbaceousness comes through in a big way. There's a touch of floral aroma and pine needles.

T/M-Definitely an interesting beer. Slightly sour, with smoky mate flavors layered over strong sharp bay leaf herbaceousness. Biscuity malts lay a solid foundation for this interesting flavor profile. However, a serious lack of carbonation all but kills the finish, and prevents what could've otherwise been a successful marriage of flavors. This is very nearly flat.

O-Lack of carbonation hurts the drinkability. However, this is an interesting beer worthy of your attention.

appearance - pink/yellow mix, an interesting look, small head with minor lacing.

smell - lots of bay leaves, some mate bitterness, very spicy/herby, is there grains in this?

taste - super bitter from the bay leaf/mate combo, medicinally bitter, not appealing to me at all. some pepper and tossed the rest out of my 2 oz pour

mouthfeel - surprised this is so highly carbonated, interesting body...i want to say thin, medium and thick. taste makes me want to get it out of my mouth as quick as possible

A - Pours a clear red-orange with a finger of frothy, slightly pinkish head. The head fades down fairly quickly leaving behind some nice lacing.

S - Aroma is a mix of sweet caramel malts, yerba mate, hibiscus, bay leaf, other spices, lemon zest, and a bit of other fruity esters.

T - Starts off with a mix of sweet caramel malts with some hibiscus, lemon zest, and yerba mate. Through the middle, some bay leaf and other spices some through with some more herbs and a bit of honey. The finish is a mix of sweet bready malts, hibiscus, yerba mate, lemon zest, spices, and some fruity esters.

M - Medium bodied with moderate carbonation. Feels smooth with a sweet and herby finish.

D - Very drinkable. Nice balanced beed. The herbs and yerba add some nice complexity without being overpowered.

A - Poured from a 22 oz bottle into a champagne flute. Bottle tells me that this beer is organic and brewed with Yerba mate, hibiscus flowers, and bay leaves. My recollection from reading about this beer elsewhere is that no hops were used. The text also says that this beer is an ode to the morpho butterfly, also pictured on the bottle.

First pour resulted in a small amount of head and some pretty champagne like bubbles rising from the bottom. Head is white with hints of pink. Beer itself is kind of a pInk amber color. It feels appropriate. Later pours took a little effort to get any head, and it disappears quickly each time. Not much lacing.

S - a very pleasant floral vinegar aroma is evident when you pour the beer. It lasts throughout - remarkably fragrant. Especially considering its in a champagne flute.

T - taste follows the aroma with this beer. A nice scrubbing of floral vinegar. I'm not very sophisticated when it comes to herbs and flowers, but I'm guessing this is the bay leaves and juniper. It's kind of like perfume you can drink. In a good way.

M - somewhat thin. Bubbles a bit when you roll it around inside your mouth. Mouthfeel was refreshing but overall not that noticeable. Not astringent, not smooth, not a real factor.

O - a cool beer to try at least once. I have had this a few times, including on tap at Mill Valley Beerworks, who brewed this with Mate Veza and deserves some credit for this very interesting beer. They serve it in a curved stange glass from Stiegl. That is the best glass for this beer. The closest I have is a champagne flute. The beer is extremely aromatic and if you pour it into even a pint glass I think it is a little overwhelming. Also, this beer is best when paired with food. I have enjoyed it most with chicken, but I can imagine it would go well with pungent cheeses. It is also one of the best organic beers I've had. That said, it's also a little unusual, so it is probably best recommended to beer enthusiasts who want to try something new. Though, for the style of botanical beers, it is pretty accessible, in my opinion.
