Poured from bottle (with interesting shape) into clear wine glass. Persistent thick 2-3 finger creamy head, good retention and clumpy lacing. Color is a slightly hazy mellow gold - very eye pleasing.

Aroma is similar to a tripel - a little wild a little floral a little tart. Very fresh and refreshing smells.

Taste is crisp and dry. I think I taste some ginseng and bitter orange, even some honey? Label says ginger, coriander, green pepper, and chamomile. The brewer's combination of ingredients is sublime.

Light dry and crisp - very nice for meals or sitting under Tuscan sun.

Small 11.2oz bottle is very pricey though - why are all Italian micro-imports double or triple the price of German or Belgium micros?

330ml bottle purchased from Slowbeer by @LaitueGonflable.

Pours a solidly hazed peachy golden colour, with a frothy, rocky head of white. Minimal lace, possibly due to the relatively light body. Minimal carbonation, but everything else looks the business.

Nose is round and pleasant with Belgian characters coming through strongly. Decent peppery note as well, perhaps even a bush spice darkness. Slight juniper notes and a bunch of herbal notes—maybe basil. It's quite fragrant and bright—good stuff.

Taste is very similar, with that peppery spice and clean fragrant herbal notes coming through strongly, but it's backed up with a very nice sweet apricot character. Feel is very smooth and clear. It could use a little bit more rustic fragrance, or even a touch of acidity, but as it is, it's simple, but smooth and really quite pleasant.

Yep, this is good stuff. I'm really happy with it overall. It's solidly in style, albeit an approachable and pretty simple interpretation. But this simplicity makes it really very drinkable and enjoyable. Very good stuff.

A: Semi-hazy golden colour with a tall and puffy foam head that lingers a while and leaves a healthy amount of lacing.

S: Heavy spice aromas of clove, pepper, and faint ginger. Lemon zest, apricots, and a solid herbal/floral element. Quite varied and complex.

T: Varied spices, floral elements, grainy wheat, hint of sour lemon, tart apricots, and underlying honey notes. Pleasingly bitter with a semi-dry finish. Delicious.

M: Lighter bodied with a low-medium carbonation level. Appropriate oily character with a bit of a grainy texture.

D: A good, solid, satisfying farmhouse ale of which I'm glad I plucked a couple bottles off the shelf. Fairly respectable pricing at the LCBO also helps.

A: Pours a hazy gold with a puffy, pillowy white head. Little chunks of yeast can be seen gathering at the bottom of the glass.

S: Soft and spicy on the nose with aromas of biscuit, caramel, Belgian ale yeast, coriander, grassy hops, and ginger. I'm not really picking up the green pepper or the chamomile.

T: Notes of green apple, unripened pear, green pepper, mild ginger, coriander, chamomile, lemon, bitter orange, spicy yeast, grass, biscuit, caramel, and honey wash across the palate. The finish is smooth and lingering with a pleasant combination of spicy Belgian ale yeast, pepper, biscuit, and orchard fruit.

M: Light in body, chalky, firm, and very dry. Carbonation is just intense enough to keep all of the spice flavors from running rampant. This is very drinkable for an ale of nearly 6.0% abv.

O: Having been somewhat disappointed by Birrificio del Ducato's Via Emelia (not a bad pilsner by any stretch, but it was perhaps built up too much by those who recommended it to me) and then impressed by Chimera, I can say that Nuova Mattina is an excellent take on a Belgian saison. The decidedly nontraditional spice flavors really work in this beer. A great effort overall from a brewery to watch.

Had this on tap at Max's during their Italian Fest.

Non-opaque golden color with a thin head. You can smell the herbs and wheat, as well as taste them. I'm a fan of spice wheat beers, so I liked this saison. A nice wheat flavor to it with the spices that aren't overpowering, but definitely present. The ginger is refreshing. Slight bitterness that I didn't mind at all. Overall, I think the mouthfeel and drinkability were good with this beer. Not quite as high as a good Witbier, but still similarly enjoyable.

Funky shaped bottle from the LCBO, 330ml into a tulip. Due date (best before): April 15, 2013.

Hazy golden brown with a really dense, lofty white head. Great retention and lacing. Nose has lemon, citrus rind, wheat, yeast and a wee bit of spice. Perhaps a bit of tartness. Well balanced and has all the right indications that this will be a solid saison. Gentle but quite complex spicing (cloves and nutmeg?), floral, wheat and more citrus. Medium light body, with a nice texture. Carbonation is medium. A refreshing saison, cool spice character. More carbonation would've helped this pop more.

Picked this up at the LCBO. Pours a very nice, hazy, dark orange with a good amount of white head. Lots of spices and grain come through in the taste. Not an overpowering spice flavour though. Very interesting offering that isn't difficult to drink. Just a crazy kind of flavour for a beer. I'd consider picking this one up again.

Hazy orange colour, 1.5 fingers of rocky head, good amount of lace left. Smell is yeasty and very floral, a good portion of spice, ginger is the most apparent spice in here, lots of flower presence though, some candy scents. Taste is very floral upfront followed by some yeasty points, spices come in, pepper and ginger, light orangey flavours are there, but packed with floral notes especially in the finish. Medium high active carbonation, medium body, carbonation is quite prickly though and assaults the tongue. This was a nice little beer here in a fairly odd shaped bottle, maybe the most floral beer I have ever tasted, thanks to boney for sending this little gem my way.

Served in a bottle at Carnevino (Venetian) in Las Vegas, NV

A: Pours a hazy bright golden orange in color with moderate amounts of visible carbonation. The beer has a half finger tall fizzy off-white head that dissipates but never completely disappears, leaving a thin ring at the edges of the glass. Moderate lacing is observed.

S: Aromas of ginger, green pepper, coriander, and tea combine with the pale malts and floral hops. There is a slight sweetness in the smell as if from honey.

T: The taste starts with the pale malts, followed by just a hint of the honey sweetness but leaves you with wonderful herbal flavors - specifically the coriander and green pepper with a subtle hint of ginger and tea. Subtle spiciness and just a hint of bitterness.

M: Light to medium bodied with heavy amounts of carbonation. Quite dry in the finish.

O: Very enjoyable and certainly one that I would like to have again. The flavors and smell were spot on for the style. The herb notes really complemented the flavor and the smell.

Pours with a very generous pure white almost whipped cream like head that holds very nicely but some spotty lacing; very hazy darker marigold, almost orange, hue.

Aroma has quite a few different fruit notes happening; apricot and some apple; a little earthy and yeasty as well with a faint grassy hoppiness; becomes more woody as it warms. Taste is not nearly as fruity as suggested in the aroma, and comes out a bit tart, yeasty, and I swear almost a little funky (if ever so slightly); bit of a citric finish. Really nice stuff, snappy and a little murky at the same time. MF is thinner to medium with just the right amount of spritzier carbonation, and the body is actually quite chalky which was not optimal for me. Really fantastic on the drinkability scale. Interesting movement of flavors, and certainly a well-crafted brew. Very easy to quaff, and a really good example of the style. Nice stuff.

Bottle from Belmont Party.

Poured hazy orange color with a large frothy white head that was mostly lasting with excellent lacing. Moderate yeasty spice and fruit aroma. Medium body with a sticky texture, soft carbonation and large particles. Medium to heavy sweet&sour citrus flavor with a medium sweet finish of moderate to long duration.

Solid refreshing beer.

11.2 oz. bottle into a Duvel tulip. No apparent dating.

A: Big, fine fizzy white head caps a clear, golden body. Head like Duvel, interestingly, body less pale, more bronzed. Good carbonation up through the body. Pretty.

S: Intruiging nose. It smells like a fine German lager--clean, bare malt smelt right up front. Then comes just a bit of spice, and some straw. A slightly alcoholic finish. Not quite what I expected, but not at all unpleasant.

T: Pretty good taste. Not exactly similar to a Belgian in the same style, but good nonetheless. Again, that sort of German malt profile dominates the sweetness, but there's some nice zippy clove notes. Grassy towards the end, really good. I'm very pleased with it. Different, but solid.

M: Mouthfeel is alright. A little bit cloying and sort of sticky, I think a bit more carbonation might be good.

O: Definitely worth a shot to switch things up in this category. It's not Fantome, but it's nice. Can't recall the price, but a good beer to shake up a style sometimes filled with dreary renditions.

330ml Bottle from the Ottawa LCBO for around 4$

Appearance – Hazy amber colour with an above average size fizzy off-white coloured head. There is an average amount of carbonation and there is some decent lacing. The head lasted for around 4-5 minutes before it was gone.

Smell - Grains/wheat, citrus, coriander/cloves, yeast

Taste & Mouth - The beer has a high amount of carbonation. I can taste grains/bread mixed with citrus and some faint yeast. There is also some clove and ginger flavour mixed with a peppery spiciness and some caramel. It finishes with a spicy and lightly sweet aftertaste.

Overall – Definitely an above average saison. There are some nice complex flavours that keep the beer interesting throughout the glass. Not something that I'd go out my way to have again, but still a beer that I'm glad I chance to try.

11.2oz bottle to wine glass. Beautiful orange body capped by white head. Lots of carbonation. Smells fresh AND refreshing. Cracked peppercorn, lemongrass, orange zest. Spicy ginger (perhaps thanks to the label), fresh cut grass. Very high carbonation, dry finish. Lingering spicy notes. Honey, spring blossoms, Key lime. Lovely. Refreshing. Warming after feel.

Great custom bottle design.

Nuova Mattina pours a bright yellow/orange color with some haze and a small but sturdy head. Nose of apricot, huskey grain, nutmeg, rye and multigrain cereal. Light in body with some fruity, bitter and herbal hop characteristics. No alcohol presence. Refreshing and very drinkable. A well made and very enjoyable twist on the style.

Pouring a bright orange-gold with a crazy 2.5 finger head that lingers for the entire glass, Nuova Mattina is bright and refreshing to the eyes, nose, and mouth. Floral aromas with lots of honey, clove, belgian yeasts, biscuit, and hints of hibiscus waft from the glass and greet the nose.

Is it unusual to equate the taste of a beer to sunshine? Well, this is that bright and forward. There are present flavors of honey and coriander, as well as a subtle spiciness of pepper and hops. And ever so vaguely in the background, one can taste a small amount of ginger.

Overall a well made beer that is balanced and fun to drink. Recommended.

@ Tasty Beverage

Hazy gold covered by a moderate layer of stable creaminess. Lovely aroma...herbal, floral, and spicy with a gentle sweetness, some dried fruit, and cereal grain. The flavor is more notably yeasty with softly sweet doughy notes and slight pepperiness. Not super spicy, but there is a dry and bitter floral quality. Medium-light body has some creaminess, though it seems to thin out towards the end of the glass and the carbonation is fairly gentle. A pretty nice Saison...
