Pours an interestingly rich dark amber with glistening raspberry highlights. A generous pour yields a dusty-colored frothy two-finger head that fades to a collar of large bubbles that leaves decent lacing down the glass.
Aroma is sweet with some interesting malt notes, hints of sugar, honey, caramel. Red delicious apple, pear and a touch of apricot, fig and banana. Some subtle herbal and floral notes as well. Subdued on the whole, but a pleasant earthy, sweet malty aroma.
Taste is complexly earthy with a strong malt backbone accentuated by an interesting and complex herbal and floral profile. Nutmeg, licorice, pepper... more green plants and some subtle floral notes... chamomile tea. I'm digging its earthiness. A very pleasant malt profile to boot. Not as sweet as the aroma, which i'm liking.
Body is moderate with ample, very-fine carbonation. works well with the flavor profile and the natural, earthiness goin' on. A lingering slickness with a somewhat herbaceous lightly dry finish.
All in all, an impressive interpretation of the style. Really well balanced, not too botanical or medicinal, yet definitely distinct. While different from other Gruits in the use of Trappist yeast, this is easily one of the top Gruits I've had the pleasure of drinking.

Pours a sediment free tobacco amber color with a creamy,high beige head that never completely dissipates and leaves some nice lacing on the side of the glass. Smells of rotting cherries and plumbs, and flowers, some herb licorice, and a whiff of brandy. Flavors are complex, I get the decaying fruit of cherries, apples and plumbs up front, some biscuit of malt, quite sweet which then morphs oddly into flavors of teas and licorice and a general muddle of musty fruit and spice blend. Interestingly unpleasant. Mouthfeel is creamy and sweet with smooth carbonation. There's nothing necessarily infected nor can I pick out a process flaw, but the flavor and aroma are so unpleasant that the appearance and mouthfeel are completely overshadowed by the negatives. Could this be simply a bad combination of ingredients? I don't know /but I had a hard time recalling a beer I've liked less. I've enjoyed every beer from this brewery, this one did not float my boat.
