A - A mammoth five finger's worth of audibly fizzy very active head that is equal parts dirty khaki and rose in terms of color... The head quickly fizzes away before showing modest retention at two fingers... Once the head ultimately fades there is a veil rich slightly veil of lacing... The color is an intriguing mix of light muddy brown and a faint ruby red... A modest bit of quickly paced carbonation rises throughout...

S - A very interesting aroma... Candied apples... Fresh cut grass... Some floral notes... A hint of brown sugar... A mix of over ripened fruit... Wonderful depth and complexity as each individual component compliments the others exquisitely...

T - The flavors that materialize on the palate our not what I expected based on the nose... A grainy alcohol presence permeates... A definite funk presence emerges next... A hint of bananas... Some burnt sugars... There is a slight medicinal presence as well... The flavor profile is not quite as well put together as the aroma...

M - Medium bodied... A bit sleek... A bit sticky... Dry throughout... A bit gritty on the finish...

D - A tale of two beers... Very nice appearance and aroma gives way to a slightly disappointing flavor profile and mouth feel... A few minor tweaks could make this one excellent, but in its current form it lacking in several areas...

750ml corked & caged bottle poured into a Piraat tulip.

Pours a hazy amber with a very thin light yellow head and some light lacing. Nose is funky and tart with some sweet maltiness.

Taste is very funky and sweet, not too much hops or bitterness. It's got a nice funky taste to it. It's got a decent full mouthfeel with good carbonation.

A: Cloudy, warm copper.

S: Fresh, green apples and raspberries. Crisp, tart, and bright.

T: Fruit forward with a building tartness. The slight sour flavor dissipates and gives way to yeast and malts, like fresh, whole wheat bread.

M: Carbonation gives the initial impression of lightness and crispness but, as the bubbles settle, this gives way to a full bodied mouthfeel.

O: Another exemplary Belgian inspired ale from St. Somewhere. Great balance in flavor; a clear, sunny spring day distilled into a bottle.

Cask at Aromas in Athens, GA.

Pours a hazy dark amber color with a large-bubbled, one-finger off-white head. The head recedes into a wispy layer on top leaving decent lacing.

Smells very good - mixed fruits, mostly berries, with a good deal of brett that doesn't seem as funky as others. I'm not 100% sure what a hibiscus smells like but perhaps it tempers some of the barnyard aromas.

Tastes similar to how it smells. A good amount of mixed fruit flavors up front are soon overtaken by a delicate tartness that has a good dose of earthiness. As the sip progresses an almost musty taste that isn't as off-putting as it sounds joins in before a crisp and somewhat tart ending.

Mouthfeel is good. It's got a smooth thickness with soft yet prickly carbonation.

Drinkability is very good. I finished my glass and ended up having a few more samples.

Overall I thought this was a very interesting beer with just the right amount of tartness introduced. I'll be interested to try the bottle version once it's out to see how it compares.

Funky bold tastes.750 ml. Bottle from Village Merchant. Pours light coffee brown with no lasting head. Aggressively carbonated, but much of this affect may be derived from the hibiscus. Wild strong bitter aroma. Above average mouthfeel. Tasty, funky stuff that's sweet and sour, bretty and yeasty. Very drinkable and unique.

Pays Du Soleil translates to "country of the sun" or "land of the sun", which is pretty much like Terre Du Soleil except that 'terre' refers much more to the actual earth. Are they the same beer? ...

Appearance: Hazy amber-orange body beneath a short head of off-white foam that drops readily to a thin collar. Spotty lace is left behind on the glass.

Aroma: Fruity with soft citrus, tangerine, apricot, berries, green apple, red apple (it's initially a touch tart, and then juicy...), and some unidentified tropical fruits. Floral, and subtly perfumey. Soft spiciness.

Flavor: Follows the aroma. Fruity and gently spicy. The malt is very lightly caramelish, and simply acts as a base for the yeast to perform upon. Gently tart. Alcohol becomes noticeable as it warms. Finishes dry and peppery.

Mouthfeel: Medium bodied with a limited carbonation. Smooth.

Drinkability: Nice. Fairly complex with a great fruity component and a hint of spiciness. Enjoyable. The alcohol is noticeable but not detrimental. Beyond its limited appearance it's actually quite charming!

appearance: served in hopleaf tulip, bright amber body, nice beige ring

smell: tart grape juice, apricot, sweet candied sugar, belgian yeast

taste: quite sweet - white grape juice, sugary apricot, sugary yeast, tangerine, white pepper, floral, bubblegum. a mixed bag of bold flavors -a little big for a saison, but nice, and well spiced

mouthfeel: nicely spiced, peppery hot finish

drinkability: good

750ml bottle

A- Corked and caged 750ml bottle poured into a snifter. The year 2009 is printed on the cork. Pours a dark brownish amber color with a huge off-white head with great retention and lacing.

S- The aroma is very floral and fruity with a nice tartness along with some spices and some yeast as well.

T- The taste starts out with some fruity notes and spices that is mildly tart. The finish is dry and yeasty.

M- The mouthfeel is light to medium bodied with a good amount of carbonation.

D- Overall, another solid beer from Saint Somewhere. Hopefully they will continue to expand their lineup with new beers.

Pays du Soleil is a dark copper or amber color. It's full of haze, but light gives it nice orange highlights. A tan head covers the top and stands about one and a half fingers tall. Carbonation appears very active, but retention was still quite good. Lacing was definitely light and somewhat sparse.

The nose is definitely spicy up front. I'm getting pepper, clove, and some other ancillary varieties. I'm pleased to report that Belgian yeast is in the mix and smells nice. I wouldn't complain if it was a little stronger, but at least it's here. Light dark fruit is noted. Smells like plum to me. Apple and pear are also present to a lesser extent. Earthy and musky notes round it out. Alcohol is held in check pretty well.

The flavor's alright, but isn't great. It's nice and fruity up front. Apple and pear flavors kick it off. It has a nice malty flavor. Earthy notes and musk are prominent throughout. Belgian yeast is certainly tasty. Spices emerge and really take over the flavor. Tastes a little too spicy to me. Pepper and clove add a nice flavor, but there's something here that is out of place and hurts the overall flavor quite a bit. It really is off-putting, but I don't quite know what it is. Alcohol is more noticeable here and is perhaps a little too prominent. Finishes with a spicy blast.

Pays du Soleil has a medium body. Carbonation is active and quite buzzy. It's not smooth, but isn't bad by any stretch. Drinkability's pretty average. The spicy flavor is intense and gets old quick. Couple that with the weird spicy flavor and it's downright exhausting to get through a bottle. I don't hate it, but I didn't really enjoy it.

Saint Somewhere needs to tweak Pays du Soleil a bit. There's definitely something here to improve. The spices need to be toned down. One seems to throw the flavor, but I have no idea what it is. Less alcohol taste and bubbles would also help. It's not a total disaster, and is probably worth a try. Here's hoping Saint Somewhere tweaks this one just a little. It has potential.

On cask at Tap and Table in Emmaus PA. The beer appears a hazy brown with little head. This really reminds me of Victory's Wild Devil, but I don't think that's a good thing. The brett dominates the beer in an earthy, tangy mix of bitter greens and lemon rind. I like sour beers, but I failed to finish this one. I think it might better be classified as an American Wild Ale.

Cloudy copper color with a large head that quickly disolves into a thin skim. Acts a lot like a sparkling wine. Not much for lacing either.

Smells very Belgian like. Fruity yeast esters and Belgian quality malt and candied sugar.

Strange combination of flavors but it works in this beer. A lot of yeast esters with the malt profile of a darker Belgian beer. Sweet, fruity flavor with caramel and earthy qualities.

Feels very light and thin for an 8% ABV beer. Carbonation seemed to have lost all its spirit during the pour as it is now relatively flat.

Interesting enough beer. Did not execute in all areas but was good were it really mattered.

Pays du Soleil (2009) blows the mushroom-style cork out of the bottle before a person can even get the cage off! This one pours up very effervescent similar to a champagne beer leaving a rather frothy, frappé-style head that smothers the cloudy, deep ochre-orangish amber body. The aromatics are a bit muted when chilled, but become more prevalent when it warms to room temperature. The sweet, toasted maltiness dominates followed by some honey (Palmetto), floral (hibiscus) & citric (Clementines, Lemonade, Tangerines) notes, plus some yeast derived acidity & phenolics from the ale & Brettanomyces blend which gives a light funkiness followed by a hint of muskiness adding to the overall complexity. The flavor starts off with a marked caramel sweetness which is subdued by a lingering bitterness & an interesting spiciness (Annatto, Curry Leaf, Hyssop) which lend good balance to the off-dry, cheek warming finish. This medium-slightly full bodied Belgian specialty is atypical for a Dubbel but certainly reminiscant of a Fantôme Saison D'Erezée (Automne). Here's to a small brewery Somewhere in a country under the sun!

A- Pours a slight hazy amber brown color. Two finger off white head comes into play and stays for a short while. Clumpy ringing lacing on the sides of the glass.

S- Nice funky brett overtones in the front of this clash with yeasty clove and light pepper. Lots of fruits in the backing of the aroma. Some mango along with pineapple and tropical fruits. Light bready malts faintly in the nose.

T- Bready malts with some light yeasty and peppery notes. More toward the middle of the beer there is more of a caramel malt with some tropical fruits. Funky barnyard bretts bring a nice sour note to the entire beer. Very light floral hops in the very back end of this beer.

M- Medium mouthfeel. Carbonation is very good for the style. Drying on the palate with each sip. Some sourness left on the palate with some light alcohol and floral hops in the aftertaste. Nice puckering sourness throughout the entire sip.

D- A very very drinkable beer. I was excited about trying this beer and this one held up to what I wanted it to be like. I am excited to try this again when I can get a chance. This is a must try beer if you want something that has the perfect sourness to it.

A- Reddish orange body with a HUGE airy off-white head.

S- Sour, metallic

T- Tart up front, moving into an odd metallic taste but the malt is a decent balance to it all

M- Medium bodied and overly carbonated

D- I will try it again because it's local...

The over carbonation lead to a surprise... as soon as I twisted the pin on the cage one revolution, the cork exploded out the top so beware!

Poured from a 750ml into a Riedel Stemless Goblet. 2012 vintage purchased in Florida, I think it's pretty fresh.

A: Doesn't really look like a Saison at all, deep copper orange color, mildly turbid, very expressive head which subsides very quickly with a residual carbonation stream.

N: Lovely nose, plenty of funk up front with floral, apple and sweet berry scents. Smells pretty complex and inviting.

T: Slightly disappointing based on the nose. I get the funk and the sweet citric fruitiness, but it doesn't really have a lot of complexity. Malt emphasis is stronger than would be expected for a farmhouse ale. Not bad in any way, but not quite as involved as a top shelp Saison. No Peppery finish, etc.

MF: Very light and refreshing, I would classify the body as light to thin. Strong carbonation which keeps the palate clean. Very little clinging at the tail of the sip. Not as crisp as a full on Saison but no lingering coating feeling either.

O: My first Saint Somewhere, and I'm not disappointed. Not world class in any way, but nicely done. I'm anxious to explore their range more fully.

Pours out slightly cloudy light ice tea with 5 fingers of suds. This thing is the king of bubbles. Looks like a tornado inside the glass.
Smell is oaky sour with some spice notes and a little malt sugar.
Taste is sweeter than the smell implies. The oak sour is there in the back but this is mostly raisin and spice with a nice bready blavor.
Mouthfeel is just a tad sticky but the effervescence is overpowering and keeps the palate clean and awaiting the next sip.
Overall I would have to give this a B+. It just needs a little more sour or flavor.

Not really sure at all what to make of this one, so I brought it over to split among the family. Served chilled and poured into a pint glass, this one was consumed on 06/20/2010.

The pour was very nicely done, rich dark amber in color, almost garnet on the sides and the bottom with a nice two finger head of white foam that came up and over the to, settling down nicely and evenly across the sides of the glass.

Aroma was full, nice tart notes of fruit, plums, grape skins, an earthy, full fruity aroma. Nice touches of bitterness sprinkled in throughout as well. Warming brings out some more caramel, touches of earthy, grainy hops and a nice balance of earthy tones. Nice full bodied feel as the lush carbonation rolls across the tongue and really gets going. Smooth, even finish with a nice tart bite that really served to dry out the palate quite nicely.

Overall I am not sure what this one was but I really did enjoy it. It ended up being a hit that day.

Poured into a snifter. No freshness date...wait a minute. After removing the cage, the top of the cork says 2009. Hopefully they just had an overabundance of corks that year and still use them to this day.

A- Pours a medium brown color with more than two fingers worth of off-white head (from a slow pour) that retains a good while, yet surprisingly leaves little lace behind it.

S- Funky yeast smells that border on medicinal but bear enough sweet fruitiness to not indicate a full-on sour. Some alcohol fume.

T- A powerful glass taste at first that mellows out after a few sips to let in the rest of the flavors which include a restrained tartness, barnyard-type yeast and some faint malt tones. Also some cinnamon and clove spice.

M- High carbonation and a slight drying from the tartness.

O- A very easygoing sour that's not that sour. Seamless combination of flavors. One of my new favorite breweries.

Brewery to Bierkraft in Brooklyn, in keg, which was dispensed into 22 oz. Bombers at a growler fill station. It then made a trek to Ohio before ending up in dkachur's hands here in VA. Thanks, Dan

A: Reddish body, with ever so slightly off-white head. Retention isn't that great, but it tries.

S: Floral and fruity are the two dominant aromas. Almost a hint of sourness to it, very mild.

T: Slightly tart, yet curiously malty at the same time. A pleasant tasting brew, notes of cookie and a nice, yet mellow fruit ester taste.

M + D: Softer carbonation, but the beer has been on quite a trek. Medium bodied, smooth finish. Easy drinking, and any alcohol content is well hidden.

A: The beer is hazy reddish brown in color and has a moderate amount of visible carbonation. It poured with a two finger high tan head that took a very long time to fade away, leaving a thick ring of bubbles on the surface around the edge of the glass.
S: There are moderately strong aromas of sweet berries in the nose along with some notes of hibiscus flowers.
T: The taste is similar to the nose and has lots of flavors of saw palmetto berries along with hints of sourness from the brettanomyces yeast and sweetness from the powdered sugar.
M: It feels light- to medium-bodied, somewhat smooth and a bit tart on the palate with a high amount of carbonation.
O: The beer tastes like a hybrid between a dubbel and a saison. It’s not that difficult to drink because there’s only light amount of sourness and a bit of sweetness.

Pours a clear, deep copper, amber color with a huge light tan head. Head falls very slow. Nice lacing.

Big, spicy clean nose. Floral hops with plenty of spice and a bit of brett.

Taste mimics the aroma. Nice and spicy with a wonderful yet mild brett taste that us very delicious. Tart with a bit of a sour taste and drying on the tongue.

Medium bodied with mild carbonation and a slight bite.

Another awesome beer by Saint Somewhere. I love this little slice if Belgium in Florida. Well done.

Corked and caged bottle. Duck and cover on this one! Once the cage is loosed the cork exploded out, hit the ceiling and ricocheted across the room. Don't point this at anyone unless you intend to do them harm.

Pours a redish amber. Cloudy and hazy. Huge vigorous carbonation yields a frothy head which fades slowly. Smell of bready yeast, flowers, some citrus, and a trace of bret funk. Taste is tart with a strong metallic tang which is somewhat unpleasant at first. As this warms a bit the metallic notes ebb and the palmetto berry and hibiscus begin to become established (not that I'm very familiar with either of these elements). Mouthfeel is astringent, dry, and acrid. Overall, don't drink this cold. As it warms the more traditional saison spices emerge and make it more interesting. Probably one and done for me, but appreciated nevertheless.

It appears that the version I picked up is the 2010 vintage. Not much to loose since it was 5 bucks for the bomber

A - Very bubbly an lively yet I only get a 1/4 inch of head that fizzes to a constant flow lace ring. Color is quite dark for a farmhouse ale kind of a hazy deep cherry wood oak.

S - Funky with sour dough notes and cherries. Maybe some dark fruits. Might be some Brett and funk too with some hazy. It's not very offending for 2 years old.

T - A tad bit of skunk is delivered from the sour dough like bread body. Notes of apple cider vinegar and tart lemon mixed in with some hay. Earthy and bitter grapefruit yet not from hops. Not bad.

M - Not as bubbly as I figured still quite popping with the carbonation.

Overall I am pretty sure I don't like old farmhouse beers. Still quite a cool label though.

I received this beer as an extra in a recent trade with Avagadro. Thanks Aaron!

When first grabbing the cork it quickly shot off and really didn't require any effort. It pours a dirty dark orange, almost a dull bronze in color with a one finger head which devoured itself within second. The beer continued to bubble from below for several minutes. The aromas consist of sweet berries, interesting almost mint like spice, and red wine notes. I definitely didn't expect that. The flavors are full of sweet, fruity malt with light alcohol. It doesn't have much complexity. It doesn't really feature much yeast or funk and isn't what I'd call "traditional". To me it is over carbonated for the style. Aside from the cork popping off and the self destructive foam, it has the mouthfeel of a Rose Brut or other carbonated wine, yet with a little more body. It's an interesting drink but not something I'd revisit.

I got a bottle of this from the brewery on their first tour night.

Poured into my st. somewhere wine glass. Color is a hazy amber color with a slight orange tint to it. Heading rises fast and disappears quickly. Very little lacing left behind.

Some light fruits and citrus in the nose as well as a slight touch of sour and perfume.

Taste is a bit of the same nice tropical like fruits with a citrus touch. Slightly spicey and peppery and finishes with a nice alcohol kick but not too overwhelming.

Mouth is slightly slick and buttery. Medium bodied with low carbonation.

Very enjoyable drink. One of the best American made Dubbel's.
