A- Really thick light tan/off white head on a crystal clear deep ruby body.
S- Light toffee, clove, grassy hops, sweet caramel, breads, yeast, chocolate, and dark fruits.
T- Clove, pepper, hint of banana. dark fruits, grass hops, chocolate, alcohol that just tickles the tongue, breads, and some other kind of "brighter" spice that I can't pinpoint all blended together nicley to make a nice complex flavor. Alcohol is a little hot at end with clove, toffee, and a pretty big bitterness left behind for the aftertaste.
M- Medium body with high carbonation.
D- This is a good quad. It reminds me most of the St. Bernys 12. A little hot but still a very nice beer.

2006 vintage bottle.

Deep cola brown pour with red highlights. Bone white bubbly head that falls quickly. Deep maltiness with raisins, dark fruits, caramel and toffee. Earthy, spicy yeast is lively and bright. Brown sugar and candi sugar accents. Great depth, incredibly enticing.

First sip brings smooth rich malts with warm caramel, brown sugar, raisins and a myriad of dark fruits. Bright Belgian yeast brings spiciness and earthy esters into the mix. Flows down incredibly rich, flavorful and malty. Never becomes over sweet, just a tasty brew.

Smooth mouthfeel, good carbonation and goes down easy. A real tasty American Quad and a bit sad I don't have any more bottles of this as I think it would last a few more years in the cellar without issue. Another winner from Southampton.

A 750ml bottle poured into a tulip glass. Red/brown in color, with a small head. Sweet, dark fruit aroma. Very sweet, fruity taste. The alcohol is noticeable, and intrusive. I thought this beer was also way too sweet. I don't think I'll try this beer again.

Honeyed amber, light khaki head that was nice and fluffy but left so quickly... Sharply vineous with scents of alcohol, smells like a belgian. Warm and full of alcohol, it heats your tongue so nice! Bit of sweetness. This just feels soooo good in your mouth, wow... Just great flavors blended together so nicely.

Shared a large bottle of this stunning brew at the Hop Devil's Belgian room in NYC. Nose is of Rum, raisins and glowing alcohol and malt. Shining and glowing dark brown in color, murky with a dark tan head, warming and tasty, big flavors of more rum, raisins, ripe dark fruits. World class sipper, go get some, but it away for awhile or enjoy right now, fine, fine creation from SHampton.

2003 edition courtesy of a beer trade with Biruchan.

Pours a rich-looking deep brown in color with a thin layer of tannish-colored head. Aromas are impressive, with ETOH-soaked raisins dominating. I'm not a big fan of raisins in general, but this one wowed me. Other dark fruits are noted as well, as is bannana. Flavor is complex, but very well-done. Lots of dark fruit flavors drizzled in rum mix with an array of chocolate/toffee/roasted coffee beans. Aftertaste stays with you. Big and beefy mouthfeel on this one. A real palate-coater. How can this be 12% ABV? No warming, no burning from the alcohol in this beauty. Superbly balanced and very, very drinkable. I must find more of this.

Had this at Bocktown with WVbeergeek and Jasonm, came in a 750ml caged and corked the corked banged out of sight as soon as the cage was undone. Seved into a tulip glass between the 3 of us.

Hazy,deep copper,mahagony,hard to get a really good look at the color at Bocktown. Off white head hard to pour without a glass full of fluffy everlasting head. Left lot of thick webbing all over the inside of the glass,sticky looking.

Great aroma can't seem to keep it away from the nose. Sweet,dark,tart fruit notes,some sour cherry,earthy,spicy, with hints of currants,clove,allspice also nutty, with some Belgium yeast.

Lots of sweet booziness from the start,vinious,dark fruityness with plum notes. The fruittyness was remisent of dried fruit.Lots of spicyness lots of clove.Also nutty and earthy. Finished clean,spicy and very sugary. Syrupy,big full mouthfeel,smooth and very creamy with lots of juicyness.

A beer to sip,but very enjoyable, wish I had the whole bottle to drink would be no problem. A must try beer if you like this style. Seems like a beer that would age very well.

Split bottle with my brother. Poured from corked and caged 750ml bottle, into fin du monde chalice. Three finger off white/tan head slight lacing at best. This quad poured a slightly light root-beer color, and was most likely too cold. Bouquet of raisins, dates, slight caramel and booze. Taste almost echoes smell. Raisins and dates are very prominent, followed by caramels, booze and a syrupy sweetness that verged on overpowering. Booze and sweetness become more and more of defining characteristic with warming. Somewhat dry and sticky finish due to high abv. This would benefit from cellaring. Mildly drinkable atm.

First off I love the cork and caged bottles I'm glad Phil and Brian are working together to get these beers out my way. Bottle of this brew was split with fellow BAs jasonm and jcdiflorio awhile back up at Bocktown. High ceilings beware as we uncaged this bottle the cork literally shot at least 15 feet into the air, I'm glad we missed the lights. That would have been an expensive quad. Appears a dark deep semi clouded mahogany with large fine bubbled head formed thick, it dwindles slowly and settles with a chunky texture with fine Belgian lacing gracing the sides of our chalices. Aromatics contain tart pungent fruit notes of vinous origin with raisin, plum, and sweet tart berry jam notes flowing with ease. All complemented by a touch of brash anise and decadent vanilla icing notes as well. Flavor is dessert sweet in the forefront of the palate with a flowing barrage honey and Belgian candi sugar. Balanced by tart trickling plum and a mild glaze of alcohol just searing the palate. Complex with multiple dimensions not sticky sweet with spice additions of clove and peppery notes coming out from the yeast utilized here. Mouthfeel is succulent with effervescent slightly prickly carbonation as it settles after the big pour a creamy effect takes over as it warms up a bit leaving just a touch of residual sugars bringing out some stickiness. Drinkability drink some more now but has so much promise to become amazing with some sleep in the cellar. A great complex quadrupel worthy of the hype and accolades Southampton is known for. Much better than some of the upstate NY bottled offerings we see in the Burgh.

750ml corked and caged, poured into a goblet. 12/23/14 on the bottle.

A: Pours a real hazy brownish dark ruby with a 1.5 finger white head with lots of tiny bubbles. Some chunks floating even in the first glass. Cant see any carbonation in the misty body.

S: Great belgian yeast with a roasty complexion. Dark fruits and a molasses like sweetness. Alcohol is fairly well hidden.

T: A sweet malty belgian taste with a fruity alcohol finish. A hint of chocolate. Dark fruits like fig and raisin.

M: Thick and creamy mouth. Low carbonation. Certainly a sipping beer. Goes down pretty smooth for the ABV.

Overall a tasty quad. On the heavy side and could use some more pep to it. Dont think I would ever mind sipping on it through.

Soft drinking tasty yeast, vanilla ice milk in taste and consistency. Nice white head and aroma. There is a peppery spiciness below the surface, rum finish. Nicely drinkable. Some sugar yet not too sweet.
I certainly would like to try this in a few years again.

A - Brown pour with a clear foam that bubbles with activity. No lacing of note. Has a slight red hue.

S - Scents of berries, dried apricots, and candy sugar. Gives off a dry sherry smell.

T - Initial sweetness of sugary fruit gives to an acidic bite at the end. There is a slight warming booziness that makes this beer inviting. While not as mellow as some of thebetter quads, I did enjoy the complexity.

M - Balance on this was nice and a very drinkable beer after a nice meal. If this were just ore mellow I'd give it a 5.

O - Southampton may have lost a step recently but beers like this make me look forward to trying them. A really good local belgian quad that could serve better with some age on it.

Sampled from a bottle contract brewed at Sly Fox. This one's a little odd/off. It tastes a good deal like wort straight from a lauer tun. There is a nice spicy hops note that finishes the beer, but the flavor, while not unpleasant, isn't very quad-like. Considering the high-cost on this beer, I'd say avoid.

UPDATE: Had this again and it's much better. Big, big juicy prun and raisins with complimenting cocoa and caramel. Like an authentic quad, but a little richer.

750ml pours mahogany with ruby highlights. Foamy white head. A lot of malt and dark fruit in the aroma, along with a touch of candied sugar. Super thick and creamy mouthful. Taste is heavily malted, with molasses, prunes, port, a touch of sweetness. Dark fruit and malt last forever in the finish, and just enough alcohol warmth to make me the happiest guy in town on this cold and windy night.

Another incredible treat from Southampton. Who said LI was a beer wasteland?

Pours a rich opaque brown with a big creamy head, only if poured very vigorously though. Smell is sweet, has bits of alcohol, and light chocolate. The taste is very rich, again sweet with caramelized sugars and a very slight toast or roast. There is perhaps a light fruitiness wayyyy in the background. Mouthfeel is a nice medium, about what I would expect in a Belgian quadrupel. This is a good beer to be drank in small quantities.

Poured out of a 750 corked and caged bottle. The color was a dark ruby red with a puffy off-white head that was slow to disippate and left some nice lacing on the glass. The smell is of candi sugar, not much else, no fruity esters that I could pick up. The taste is sweet from the candi sugar, has a very light chocolate malt taste, a bit of honey, not much in the way of dark fruit. The feel is well bodied and moderately carbonated, finishes slick with a kind of rum/vanilla sweetness. Overly sweet with not enough roasted malt backbone to it, not picking much fruit taste to it. I have mixed feeling with this, it has an initial good taste but tends to get cloying as you finish.

A corked and caged 750 mL bottle. I think I picked this up at Joe Canal's in Lawrenceville.

A: The ale is dark but not opaque, a bold red that could pass for a glass of wine, save for the white head atop it. That white head left small patches of lace.

S: The nose is very sweet and strong, led by raisins and brown sugar and plenty of booze. A chalky powder aroma, perhaps more yeast byproduct, leaves an aroma that can't overpower the sweetness.

T: Man, this beer is sweet. Candi sugars, darker and fuller in flavor, lead the way, along with a raisin taste thanks to the yeast. Sugars are burnt, amplifying the sweetness, so much so that the ale borders on cloying.

M: The bottle is approximately 2 years old, so I can't tell if it needs more or less aging. The sweetness is overpowering, bold and strong.

D: I am not a fan; too darn sweet to really get into. I'm glad that janlud was here to share it with me.

Bottle courtesy of Adrian910ss: Poured a deep burgundy color ale with a big off-white foamy head with good retention and lacing. Aroma of sweet malt with some hints of dry fruits (figs and plums). Taste consisted of some sweet malt with some very subtle Belgian yeast and some very subtle dry fruits such as figs and plums. Body is slightly above average with no alcohol discernable. I don’t know if my expectation were too high or if I got another so-so bottle of Southampton but I wasn’t impressed at all and thought this was quite far from the staple of the style (Rochefort, Westy, St-Bernadus).

Served in a 10.5oz glass for $3.50 for some reason. Sampled 6/1/12.

A: Arrives with a 1.5 finger high head, extremely persistent. Creamy, foamy in texture, khaki in color. The body is dark brassy amber with noticeable clarity. Lacing in waves sticks with great proficiency, especially given the ABV.

S: Lots of Belgian yeast esters add a deeper complexity to the typical dark fruit notes. Prunes and plums. Belgian dark candi. Light new leather.

T: Follows the nose closely. Estery, dark fruity, cocoa, semi roasted. Overall flavor strays far from Quadrupel expectations.

M: Rich, malty body with a lasting, fine tingling effervescence, probably a touch too aggressive for my preference in the style. Slightly boozy on the finish.

O: Lousy Belgian Quad. Decent American Quad. The yeast was more of a player than I am used to - and there was an odd, semi roasted thing going on, but all of the above created a nice twist for an American interpretation.

A: Clear, coppery pour, with a dense, tan head. Decent lacing.

S: Caramel, toffee, raisins, sweet malt.

T: Raisins, toffee, sweet caramel malt, fruity esters, Belgian yeast, alcohol. A little sweet. Cherry notes in the finish.

M: Medium mouthfeel. A little sticky.

D: Almost like a really strong dubbel. Tasty, a little woody. Nice.

deep dark and thick reddish tinted brown with a large tan colored head of foam rising up from the bottom and cresting about three inches above the top giving it a very full refined look. Very nice retention

big rum soaked raisins that really let you know that you were in for it here. This was balanced by a nice touch of alcohol and thick walloping of yeast that gave off all sorts of fruity like esters. The hints of fig, and pear were big as was the nice amount of sweetness that was added in to try and pull it all together. nice spicy rum like flavor that was intermingled and laced with lots of dark fruits. Nice flavors of raisins, figs, and prunes were evident as was a decent amount of sweetness added to the mix.

Had to pour this one with a bit of vigour to create any head. What is there does not last, very little lacing and a dark ruby color.

Smells of sweet malts (almost sugar like sweet), fruits (raisins and other dark fruits). A yeasty spiciness is also noticeable.

Tastes rather sweet but nice, becomes fruitier after a few gulps and warming thanks to the 10.5% tag.

A: The beer is clear dark amber in color. It poured with a thin yet dense white head that faded away and left a thin ring of bubbles around the edge of the glass.
S: There are light aromas of sweet, dark malts in the nose.
T: The overall taste is rather sweet and has flavors of candi sugar and dark malts.
M: It feels a bit more than medium-bodied and very smooth on the palate with a moderate amount of carbonation.
O: Considering its strength, this beer is quite easy to drink because the alcohol is well hidden from the taste.

Poured from a 750 in to a goblet; a dark brown with a wonderful creamy head that quickly deflated. Nice stickage down the glass.
Smelled of dark fruits, a little alcohol, and malts. Very rich aroma.
Taste was really smooth with dark fruits, complex malts and hops, etc. Delicious, as good as any Qud I've had.
Mouthfeel was great; nice and creamy and full.
Drinkability was good; so tasty you want to drink this forever; but watch the ABV!
This was every bit as good for me as St. Bernardus and Rochefort. A winner.

Poured from 750 mL bottle into snifter. Stamped with #3067 1/23/17 (which I assume is bottle # and best by date).
A: Pours a dark orange-amber with 1/2 inch light tan head. Good retention.
S: Dark dried fruit, spicy Belgian yeast, cinnamon, clove, and sweet dark caramel malt. Definitely a sweet aroma.
T: Dark dried fruit (raisins, figs, dates)...tends toward more fresh than overly ripe or aged notes. Cinnamon, bready yeast, vanilla, sweet caramel malt, and a hint of rum.
M: Medium body...drinks much lighter than ABV. Silky smooth and sweet. Indulgent feel. Lingers decently on the palate.
D: A well constructed quad. Drinks very fresh...which is a nice change from the usual per style. Easily drinkable...too easily for the ABV!
