750ml bottle into Duvel tulip. Marked 12/22/14, so I'm going to assume it was bottled in December of 2009.

Appearance: Careful pour yields a two and a half inch offwhite, fizzy head that crackles and pops audibly and visibly, but dissipates slowly, leaving swatches of lacing. Bottle wasn't exactly a gusher, but a bit of foam rose out of the top upon popping the cork. Pours a beautiful deep red, and decorates the glass with long lasting streaks of lacing.

Smell: At first there's a very strong aroma of Belgian yeast, as well as some clove and coriander. The smell develops a deep, musky note reminiscent of cologne, then a weird, almost chlorine-like aroma. This airy, indoor pool smell comes to (unfortunately) dominate the aroma. Deeper into the glass, some of the estery goodness from the taste pops up in the nose, and the (perhaps hoppy) pool character subsides a bit.

Taste: Follows the initial smell; healthy dose of Belgian yeast, lots of spice, but additionally there's a deep caramel flavor and some nice dark fruit (closest to raisin i think) esters right off the bat. It's apparent early on that this is a reasonably successful American attempt at a quad. There's lots of development of flavor, transitioning through nice, rich toffee and caramel notes and deep, musty, intriguing dark fruit notes. Boozy finish, but not so much that it hides or intrudes on any of the delicious flavors.

Mouthfeel: Medium bodied. Not particularly good... a bit too carbonated, yet not at all creamy. Kind of boring, but on the upside, not much to complain about (e.g. it's not too sugary or sticky, despite the decadent flavors, nor is it overwhelmingly hot despite the high ABV and noticeable alcohol flavor).

Drinkability: This beer doesn't hide its 10.5% ABV, but it delivers enough flavor to justify it. A good sipper, and decent representation of the style.

After the one-note, borderline disaster of Southampton Grand Cru, I was afraid to try this beer... I expected it would either be too simple, or taste like cola. I was pleasantly surprised to find an American quad that rivals Allagash 4. In terms of feel, taste, and aroma, Southampton's quad is not in the same league as Saint Bernardus or Trappistes Rochefort, but it's a good beer. I'll be happy to have this one again, and might throw one in the cellar to see what happens.

Pours a deep amber color with one finger of khaki colored head with ok retention. Some lacing remains throughout the beer.

The scent is of dark fruit and some Belgian sugar.

The taste is kind of syrupy and flat. There are dark fruits, some roasted chocolate malt, some yeast notes.

Full body, syrupy and creamy, low to moderate carbonation.

There was some good flavor in this beer but it was very flat making it kind of unpleasant.

750 bottle served in st. bernardus oversized wineglass. bottle reads a 9.9 abv.

pours a deep, dark amber with a finger of white head. moderate retention, decent lacing.

nose is yeasty and sweet with a lot of dark fruits... malty with brown sugar notes. taste is a pleasant surprise - i was prepared to pan this as measured against its authentic belgian counterparts, but no. fair amount going on here: raisins, sweet malts, brown sugar, some booze but by no means overpowering, yeast and other dark fruits. straddles the line of being too sweet but doesn't cross it, at least not for me... not on the level of the trappistes of course, but it's pretty damn tasty in its own right.

mouthfeel is okay, full bodied, medium carbonation. scores high in drinkability; i can see myself coming back for more.

Appearance:

Cork emerged after much strenuous negotiation with a sad little pop. Pours an odd soda-like color with loads of carbonation that lead to over 2 inches of frothy head that bursts like soap bubbles before settling with nary a lace left behind.

Aroma:

Muted fresh cherry juice with loads of belgian candy sugar.

Taste/Mouthfeel:

Overly carbonated which detracts some points from the mouthfeel, which is otherwise chewy and slick. Flavors are bold ripe fig and cherry cordial with loads of belgian candied sugar in the finish. Alcohol is masked nicely throughout this delicious brew which only suffers from a CO2 issue.

750ml corked and caged, poured into a goblet. 12/23/14 on the bottle.

A: Pours a real hazy brownish dark ruby with a 1.5 finger white head with lots of tiny bubbles. Some chunks floating even in the first glass. Cant see any carbonation in the misty body.

S: Great belgian yeast with a roasty complexion. Dark fruits and a molasses like sweetness. Alcohol is fairly well hidden.

T: A sweet malty belgian taste with a fruity alcohol finish. A hint of chocolate. Dark fruits like fig and raisin.

M: Thick and creamy mouth. Low carbonation. Certainly a sipping beer. Goes down pretty smooth for the ABV.

Overall a tasty quad. On the heavy side and could use some more pep to it. Dont think I would ever mind sipping on it through.

Deep dark brown, light ruby hints. Small off-white head. Big, deep and juicy aromas of dark fruits (grapes, dates, banana, figs) and chocolatey malt (not as proeminent as rochefort 10). Sweet doughy yeast, cookie-ish in fact gets along well with the toffee or caramel ice cream reminiscent malt. Palate procures a light tartness which is not unpleasant. Very fruity from the beginning to the end, extremely malty leading even to a slight roasty bite. This may not be totally world-class, but it isn’t too far, very well-built for sure, complex, but also very sweet and in need of a few years to reach its full potentials imo. This was a 2003 bottle. Mouthfeel is awesome though, creamy, smooth, well rounded big body with carpet soft carbonation. Again, 2 thumbs up for biruchan and schoolteacher!

2003 edition courtesy of a beer trade with Biruchan.

Pours a rich-looking deep brown in color with a thin layer of tannish-colored head. Aromas are impressive, with ETOH-soaked raisins dominating. I'm not a big fan of raisins in general, but this one wowed me. Other dark fruits are noted as well, as is bannana. Flavor is complex, but very well-done. Lots of dark fruit flavors drizzled in rum mix with an array of chocolate/toffee/roasted coffee beans. Aftertaste stays with you. Big and beefy mouthfeel on this one. A real palate-coater. How can this be 12% ABV? No warming, no burning from the alcohol in this beauty. Superbly balanced and very, very drinkable. I must find more of this.

Pours a rich opaque brown with a big creamy head, only if poured very vigorously though. Smell is sweet, has bits of alcohol, and light chocolate. The taste is very rich, again sweet with caramelized sugars and a very slight toast or roast. There is perhaps a light fruitiness wayyyy in the background. Mouthfeel is a nice medium, about what I would expect in a Belgian quadrupel. This is a good beer to be drank in small quantities.

750ml bottle, courtesy of fugazme.

Pours a dark and hazy rusty brown with a dense two finger head that fades very slowly to a quarter inch cap that never fades. The foam leaves behind a thick sheeting of lace.

Smell; mildly chalky yeast up front, then a bunch of dark fruits come through with raisins, dates and figs. Some sweetness and alcohol are present in the aroma as well.

Taste; as with the aroma, a chalky yeastiness comes through initially and I actually had a bit of a hard time picking out any other flavors until it started to warm up. Once it did though, raisins, dates and surprisingly a little orange. Molasses and toffee give this a fairly strong sweetness that's almost a little to much for me, but the alcohol is never noticeable aside from the warming sensation that it gives.

Mouthfeel is medium to full bodied with a high level of carbonation that comes of as little biting, and due to that and the sweetness the drinkability is only ok for me.

Poured from 750 mL bottle into snifter. Stamped with #3067 1/23/17 (which I assume is bottle # and best by date).
A: Pours a dark orange-amber with 1/2 inch light tan head. Good retention.
S: Dark dried fruit, spicy Belgian yeast, cinnamon, clove, and sweet dark caramel malt. Definitely a sweet aroma.
T: Dark dried fruit (raisins, figs, dates)...tends toward more fresh than overly ripe or aged notes. Cinnamon, bready yeast, vanilla, sweet caramel malt, and a hint of rum.
M: Medium body...drinks much lighter than ABV. Silky smooth and sweet. Indulgent feel. Lingers decently on the palate.
D: A well constructed quad. Drinks very fresh...which is a nice change from the usual per style. Easily drinkable...too easily for the ABV!

I poured a caged and capped 750 ml bottle into a chalice.

A: It poured a hazy, dark. and mahagony body with a tall and dense light tan head. There was little lacing but there was a layer of bubble that gave the beer a nice tan cover long into the experience. It was a dang good lookin' beer in the glass.

S: It had a rich caramel sugar and dark ripe fruit aroma with hints of alcohol.

T: If it looks like a quad, smells like a quad and tastes like a quad...it must be a quad. The subdued rich and sweet caramel and plum flavor covered the front of my tongue. As the drink progressed I detected hints of tart dark fruits, black liquorish, pepper and coriander.

M: It is a full bodied beer with a warm and subtly sweet presence on the tongue. It has light carbonation and finishes warm and clean.

D: It is a fine and solid quad that stands tall among its style brewed in the new world. I like and intend to keep it in my stash for special times.

A- Pours a dark brown/crimson into my St. Bernardus chalice. Two finger cocoa head that sticks around quite a bit. Good carbonation and lacing on this one. The head is almost cloud-like in appearance.

S- Smell is that of figs, malt, yeast and raisin. Great smelling beer- smells very fresh. Big time aroma and goodness out of this quad. Hope it tastes as good as it smells!

T- Not as thick and meaty as some of it's Belgian counterparts, but this quad is delicious! Malty, w/ figs/dates/raisin/yeast/alcohol w/ a sugary taste as well. I imagine this beer would age really well, even though it's already really smooth. This might be the best American Quad that I've tried. A different taste profile than the smell, but still amazing.

M- Very smooth and silky, w/ sugar and alcohol in the mouthfeel. It feels rich, like you're induldging your mouth with every swallow. Makes me want to really savor it, although at 9.9% ABV, that's not a difficult task. Keeps getting better the warmer it gets. Very nice.

O- This is my first beer from Southampton, and wow... This is world class. Being a big Belgian Tripel and Quad fan, this ranks right up there w/ the best of them for me. The first American Quad I've tried that I can say that about. It might not be my favorite, but it's REAL close. Fantastic, and definitely worth a purchase. I know I'll be picking this one up whenever I see it. Cheers!

A- Really thick light tan/off white head on a crystal clear deep ruby body.
S- Light toffee, clove, grassy hops, sweet caramel, breads, yeast, chocolate, and dark fruits.
T- Clove, pepper, hint of banana. dark fruits, grass hops, chocolate, alcohol that just tickles the tongue, breads, and some other kind of "brighter" spice that I can't pinpoint all blended together nicley to make a nice complex flavor. Alcohol is a little hot at end with clove, toffee, and a pretty big bitterness left behind for the aftertaste.
M- Medium body with high carbonation.
D- This is a good quad. It reminds me most of the St. Bernys 12. A little hot but still a very nice beer.

Numerous 750ml bottles. Each bottle changes in character, in particular the 'sweetness' variable. First pour is dark mahogany with coca cola cherry red highlighst and a really big head. Hard to get a grasp of all the flavor components, but there's alot of rich, sweet mal, and dark fruits -- raisins, prunes, sweet figs, and caramel butterscotch candy. A bit of rum creeps in. The second pour is much cloudier -- as with all 750 Southamptons, thick and chewy, an elegant abbey-style quadruple. There's a faint sense of oak and hickory in there, but the swetness takes that over. The mouthfeel could be creamier, especially near the top of the bottle.

Pours cola brown, murky and muddy looking, with a very large root beer like head that slowly chunks up and recedes. Aroma is of cinnamon and spiced bread, yeasty, with some rich brown sugar, raisin, and toffee sweetness. Big belgian yeast taste up front, some nice breadiness and a rich malty sugariness of caramel and brown sugar sweetness in the finish that blends very nicely with a warming alcohol. Fairly rich and big bodied, the alcohol strength and slightly peppery effervescence help to balance the body. Outstanding beer, it became its best around room temp where the malts were in full effect and the alcohol was nice and warming. I'd ove to age one of these a little and see what some time does although this beer is near perfect now.

Had this at Bocktown with WVbeergeek and Jasonm, came in a 750ml caged and corked the corked banged out of sight as soon as the cage was undone. Seved into a tulip glass between the 3 of us.

Hazy,deep copper,mahagony,hard to get a really good look at the color at Bocktown. Off white head hard to pour without a glass full of fluffy everlasting head. Left lot of thick webbing all over the inside of the glass,sticky looking.

Great aroma can't seem to keep it away from the nose. Sweet,dark,tart fruit notes,some sour cherry,earthy,spicy, with hints of currants,clove,allspice also nutty, with some Belgium yeast.

Lots of sweet booziness from the start,vinious,dark fruityness with plum notes. The fruittyness was remisent of dried fruit.Lots of spicyness lots of clove.Also nutty and earthy. Finished clean,spicy and very sugary. Syrupy,big full mouthfeel,smooth and very creamy with lots of juicyness.

A beer to sip,but very enjoyable, wish I had the whole bottle to drink would be no problem. A must try beer if you like this style. Seems like a beer that would age very well.

Pours deep amber with off-white head. Smell of dried fruit and alcohol.

Sweet rum flavor with a hint of earth. Dried cherries, sugar and a touch of spice. A bit "hot," as the alcohol is evident upfront and in the finish. Taste is good, but drinking more than one could be a chore.

A fire-side sipper. Or would be great with grilled medium-rare lamb chops.
