11.2 Oz. bottle, poured into a tumbler. Served at room temperature.

A - Very deep brown, almost black. Nice tan head, recedes quickly with just a bit of lacing.

S - Definite vanilla notes alongside coffee and chocolate. Noticeable alcohol and just a hint of whiskey.

T - Similar to the smell, vanilla, coffee, and chocolate. Very enjoyable.

M - Thick, yet smooth. Not much carbonation.

D - One definitely wants to take their time with this brew, as it's 10% ABV, but it's a beer you can relax and enjoy. Pairs very well with meat (I had it with smoked jerkey). My local shop is selling these out unfortunately, but I got a heck of a deal on them at $1/bottle.

11.2 oz bottle served slightly chilled into a tulip glass. This is batch 005 and claims to be best before 06/06/09. It has been aging in my cellar since new.

Paradox Speyside is a nearly black imperial stout with good clarity seen on the pour. The head is thin and settles quickly.

The aroma is surprisingly faint for a beer of this strength but I pick up the usually stout notes of roasted malts, coffee, and dark chocolate. A bit of oxidation is present but it seems minimal and doesn't detract from the aroma.

Flavor is very mellow and balanced. It starts sweet with milk chocolate and whiskey. It leads to some bitterness in the middle with more dark chocolate and black malt. The finish is dry but the alcohol is so subtle I would never know it's so strong. The peaty malts come through in the aftertaste.

Mouthfeel is medium to full bodied but not heavy. It coats the mouth and has just enough carbonation to not be flat.

Overall an excellent beer and, although I probably aged it too long, it is still very special and delicious.

Bottle shared at GRG1313’s tasting.

Best before 12/12/09.

Pours a clear super dark brown with a foamy khaki head that settles to wisps of film on top of the beer. Tiny dots of lace form around the glass on the drink down. Smell is of dark roasted malt, cocoa, and mild Scotch whisky aromas. Taste is much the same with cocoa and Scotch on the finish. There is a mild amount of smoke and wood bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a pretty good beer but the Scotch and smoke presence I was expecting is pretty subdued.

2009 Vintage! Served from bottle into a Green Man snifter. Poured pitch black with a minimal light brown head. There was no lacing evident throughout the glass. The aroma was comprised of sweet malt, roasted malt, dark fruit, fruit, dark chocolate, wood, and subtle sweet alcohol. The flavor was of sweet malt, wood, dark fruit, fruit, dark chocolate, milk chocolate, and subtle roasted malt. It had a light feel on the palate with medium carbonation. Overall this was a fairly good brew. I really went into this one not expecting to like it if I am honest as I have been very hit and miss on BrewDog’s stuff. However, I don’t know if the age did this one some good but it was really well rounded and rather enjoyable while maintaining complex at the same time. Not the best brew from the style I’ve had but this is definitely an honorable mention without a doubt. Based on this one I can’t wait to see what some of the other Paradox brews I have sitting in the cellar have in-store for my palate.

12 oz bottle into snifter.

Pours a dark cola brown in the glass, with a thin yet still frothy head of mocha colored foam. This retains with some moderately rich ringing, leaving back a cascade of spotty froth which slowly drips down the sides of the glass. The aroma smells of charred oak, brown sugar, cocoa, vanilla, some dark fruit and a touch of spice. This is nice and smooth feeling in the nose.

That whiskey really had some punch to it in the taste but does eventually smooth out some, with a lot of charred character to it that really amplifies flavors of chocolate, caramel, and roast. A smack of vanilla does help with the balance here. Burnt wood really lingers with some strength in the finish. Sweetness round out the edges of the profile, with chocolate, caramel, vanilla, dark fruit, and coffee all being present. The mouthfeel is fuller bodied and lively on the tongue, with more of a creamy sharpness that then spreads out across the back. The ABV here is pretty smooth overall for the size here, with that whiskey pretty much giving this its bite.

This was a little more aggressive with its barrel character than some of these other Paradox beers that I’ve had but the overall balance and integration of flavors ensured that this remained a pleasant and steady sipper considering the size and boldness of this. I’m not sure if this one is still floating around out there but it’s worth a look.

330ml bottle into a snifter

A: Black with some brown hues around the edges. Light carbonation is obvious, an off white layer of very large bubbles form with a quickly dissipating dense layer underneath.

S: Sweet molasses are most obvious with some milk chocolate, toffee, and oxidized sherry notes. I get a hint of peaty, smoky scotch in the background, very well integrated into the beer.

T: Dark chocolate dominates the beer with strong molasses and very well integrated peaty and oaky scotch. The integration of the barrel is quite amazing. Could use a bit more complexity, but the flavors that are here work very well together and they're quite tasty.

M: A bit thin and certainly under carbonated.

O: Very well integrated barrel flavor with a nice, yet not overly complex stout. Also a bit under carbonated, but a nice stout. I would have liked to have tried this maybe a year or so ago.

A - pours a pitch black with no foam whatsoever.
S - nice strong coffee aroma with a strong roasted malt background
T - roasted coffee, chocolate and some burnt malts. The flavor is nice. There is a hint of the barrel but not alot, and thats not a bad thing. its nicely melded with the with flavors of the beer and creates a nice flavor
M/D - light to medium bodied, the flavor seems to actually fade as it warms up. This beer is interesting to me. the flavor is there but it doesn't seem to stick around. So i'd say if you come across this one the try it, but if you're searching it out, i'd pass.
