We originally brewed Halcyon as our first summer seasonal, but since all the Halcyon fans (a.k.a: kiteheads) asked so nicely, we now brew this magical brew year around. Besides, who doesn't want a little taste of summer on a dark winter night?

We are proud of all our beers, but Halcyon is special. We are in “the wheat state” after all, so the pressure was on us to make a wheat beer, but we knew it had to be great. Halcyon Unfiltered Wheat is the result of that Midwestern angst, an all-American wheat with real Kansas-grown grain in the brew.

We start with raw Kansas white wheat in the mix to give it a nice edge, but what really makes it shine is the hops. We use “hop-bursting” late in the brewing process and this gives Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste like the best days of summer.

12 oz can poured into a weissbier glass. Solid two fingers of dusty white head caps the surface. As the foam recedes, spots speckle the glass. Body color is a hazy golden orange. The glass is illuminated when held to the light, but I can't see through the glass.

Smell has a sweet banana and mango fruitiness. There is a fresh bread dough character, slightly yeasty. Taste has quite a lot of the banana esters, but it is not overpowering. There is a secondary lemon flavor that cleans up nicely. There is a faint peppery tingle that comes in at the very end.

Mouthfeel is a little heavier than most Pale Wheat Ales. This seems to fall some where in the middle between a Wheat Ale and a Hefeweizen. There is a mild creaminess in the texture, but is not filling like a lot of Hefeweizens can be. I'm liking this beer more and more.

Nice crowning of white lace; dull, cloudy golden-beige hue. Smells of lemon tea, bread crust and nutty yeast. Deep smoothness leads to a lean crispness, which really opens this beer up. A wheat malt bomb in a way. Bready, yet semidry with a mild nuttiness in the middle. Modest showing of balancing hops. Lemongrass, earthy yeast, doughy biscuit and a very faint saltiness display some complexities. Finishes clean and grainy. Halcyon ends up being a nearly perfect snapshot of what an American Pale Wheat Ale should be, especially for a style that perhaps doesn’t get enough love. No bells or whistles, just a great wheat beer.

12oz can. Pours a very hazy dark yellow with a medium creamy white head that retains well and laces the glass.

The aroma is sweet wheat malts with a touch of fruit.

The flavor is wheat malts and a splash of lemoney fruits and yeast. The mouthfeel is medium bodied with spritzy carbonation.

Overall, it's a simple but enjoyable and drinkable wheat.

16oz tallboy can, sample from the brewery.

Great head retention, some clarity but there is a swirl of haze. Aroma is of tea, lemon zest, bread, & nutty yeast. Mild spice on the palate from the wheat, fresh bread with a herbal hop bitterness to balance. Very crisp and drinkable. Semi-clean finish with a faint peppery tone.

So easy to knock back, that is the wow factor here.

Serving glass: Poured from can into Pint glass.

Appearance: Cloudy, dull orange with stark white head and nice lacing.

Smell: Dry wheat and citrusy hops. Dry, hoppy and somewhat musty.

Taste: Pretty fruity and citrusy over a wheat backbone. Pretty hoppy, but not bitter at all and actually a little sweet.

Feel: Moderately high carbonation. Nice creamy body but the finish is oddly tingly and sweet.

Overall: Seems like they were aiming for something more akin to Oberon vs. the typical American Wheat. And it is a pretty good wheat beer, as the Citra hops make it unique, but the oddly sweet taste keeps this from being great.

A-Pours a ton of frothy dense white foam that is there til the last drop. Murky golden tan color with white particulates.
S-Unusual in a wheat that the hops (NW US floral citra hops) burst through with delicious aromas inviting that first drink. There might be some wheat and yeast in there but hard to tell.
T-Hoppiest wheat I've ever had but I like it and I'm not normally a hop head-great thing about this beer is the hops do not leave a lingering resiny bitter aftertaste. I guess my only complaint is the fresh hop flavor dominates what might be delicious wheat and yeast.
M-Full bodied and smooth
D-Damn high, this is a solid great tasting beer.
O-This is not what I expected but a very drinkable great tasting smooth wheat-what else could you ask for, oh yeah I picked this up for $4 for a 6 pack. I better stock up on this one. Fantastic. My new favorite wheat.

Moderately golden hued with plenty of haziness. Brussels lacing. A fingernail of off white head sits on top. Aroma of pale wheat with just a trace of banana. The pale wheat flavor is a bit of a sourdough bread note. The mouth is very light and this is highly quaffable.

L: Hazy gold under a persistent lacy 3” off-white foam collar. S: wheat nose, not much spice T: Spicy wheat flavors, some spiced fruit but not the level of fruit and spice found in a Wit. F: Very creamy with medium low carbonation and body. O: a very respectable American pale Wheat Ale.

Poured from a 16 oz. can into a Surly tulip glass.

Appearance: Pours a hazy yellowish golden orange with a moderate amount of bubbles. Solid three fingers of white head with decent retention. Leaves a lot of clingy lacing around the glass.

Smell: A wheat and grain forward aroma with nice hints of citrus fruit and earthy hops. Wheat and pale malt upfront with hints of grains, biscuit, cracker, straw, and yeast. Subtle hints of white pepper. Citrus hop hints of orange, pineapple, apricot, melon, and lemon. Earthy and floral hop hints as well. A pretty nice and zesty wheat beer aroma that is well balanced by the hops.

Taste: Like it smells, a zesty and bready wheat driven taste with nice notes of citrus fruit and earthy hops. Lots of wheat upfront along with malt notes of biscuit, grains, crackers, yeast, and straw. A little white pepper spice and honey like sweetness. Citrus hop notes of orange, apricot, pineapple, lemon, and melon. Earthy and floral hop presence with notes of grass. A pretty solid well balanced taste.

Mouthfeel: Medium bodied with a moderate amount of carbonation. Crisp and smooth. Fairly drying.

Overall: A solid wheat ale. Hoppier than usual for the style but it lends a nice balance.

Big foaming bright white head, atop a clouded golden orange body with fine intricate lacing going down the sides of the glass. Aroma has sharp wheat notes with hints of citrus, mild herbal hops in the nose. Straight forward good tasting American pale wheat, sharp wheat hints of acidity with chalky powdered yeast cakes in the finish. Extremely drinkable light hop character, but the zesty lemon character really makes this a refreshing beer, I'm glad to hear that it went year round. Mouthfeel is lighter bodied but the yeast character gives it some added girth...healthy carbonation level finishes evenly balanced between sweet malts/wheat and dry yeast with herbal citrus character. Ovrall very tasty American wheat out of the can, I love seeing canned offerings out there that taste this good, the first 12 ounce offering I've seen from Tallgrass most of their other beers come in pounder 16 ounce cans.

A huge pillowy off-white head rests on a dark yellow beer that's not quite amber. This large, fluffy head looks soft but has some amazing strength. Lacing is good, but not as impressive as the head and not what I'd expect from it.
The aroma is wheat and lemon for the most past with a touch of sweetness. The lemon is soft and without the typical zing.
The flavor is likewise wheaty and a hint sweet with a big yeasty note and a touch of rind that isn't harsh.
A medium body leans towrd light but with some thickness. It's crisp without the overly spritzy feel and goes creamy while remaining crisp.
A very nice wheat beer and a great play what can be an unfortunately bland style.

I was disappointed that Tallgrass discontinued their last wheat offering, so I was happy to try this when a friend offered to let me "help" him sample some.

Appearance: The 12oz. can was poured into a pint glass. The color is a light gold - pretty close to the yellow on the can. Despite it being unfiltered, their was only minimal cloudiness even after I swirled the last part of the can. A good white head appeared initially but didn't last for long.

Smell: The overarching aroma is of the hops, with some mild fruitiness in the background. I didn't pick up on much of the wheat odor that I usually associate with the style.

Taste: This is a good beer. There is a pretty assertive hoppiness but it is balanced overall. What doesn't come out well is the yeast taste - it seems toned down to the point of fading behind the hops. The beer could almost pass as a pale ale.

Moutfeel: Generally light but with a little more body than some wheats.

Overall: Quite a pleasant beer but not one that I would grab if I was craving classic wheat flavor.
