American sour with dates. Sikaru was a beer brewed thousands of years ago by the Sumerians. I learned of how this beer was made, it struck me how similar it was to the Belgian lambic process. I read that Sikaru was commonly fruited with dates and decided to add dates to a couple of our young lambic-style sour barrels. 100 lbs of dates went into each barrel and with all that additional sugar it took an additional 6 months to finish and resulted in a high ABV beer. Treat this like a big barleywine. Lay one down to mellow for a few years and enjoy with friends!

Pours a murky dark orange with a foamy bone head that fades to nothing. Tiny dots of lace drip into the remaining beer on the drink down. Smell is sour with funk, barnyard, dried fruit, and blue cheese aromas. Taste is much the same with sour funk, dried fruit, fruit juice, and blue cheese flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and sticky mouthfeel. Overall, this is a very good beer with a sour and funk presence that rivals some of the great sour beers of Belgium.

This thing has a pretty evil cork, extracting it was a 2 man job (thanks Don).
Deep saturated honey gold, slightly hazed with the occasional stray bubble rising to the top. Initial cluster of bubbles at first, soon becoming still like an unblended lambic.
Aroma is the best attribute, musty barrel funk, earthy fragrant sweetness of dates, light acidic sharpness.
Taste is pleasantly tart with an unusual fruity sweetness from the dates, and a filmy slickness that's somewhat odd and hangs around too long. After the initial burst of carb when poured, it all seems to ebb away. Feel is a bit strange to say the least. Like the label says, it probably could use a few years of cellaring, as it doesn't really seem "finished".

Originally this beer was so heavy and sweet in the backend with the dates. The heavy back has blended into the sour up front and has come together really nicely. I am sure more time would continue to make this beer better and better
