Bright pale gold with racing streams of champagne carbonation, supercharged with CO2. Thin layer of white foam that leaves behind drippy lace in the glass.
Very acetic nose, apple cider vinegar and green apple slices. Some white vinegar sharpness that stings the nostrils even. Light presence of funky yeast that manifests more in the sharp sour taste. Crabapples and green apples splashed with cider vinegar. Light and effervescent, it feels a bit thin and one-note, vanishing too soon on the palate. Sourness is aggressive, and the vinegar element approaches a bile character but stops short. Still, it's potent in small doses and was enjoyable. Can't say I could identify the base Witbier, it was all sour bugs.
