Les amateurs de houblons en quête d'amertume seront servis par la Ruine Papilles. Cette bière est de couleur ambrée et regorge de houblons américains. Empruntant le style India Pale Ale (IPA) des anglais, les nord-américains ont adaptés le style avec les variétés de houblons qui poussent sur leurs terres. Les IPAs américaines sont plus fortes en alcool, plus amères et plus aromatiques que leurs homologues anglaises. La Ruine Papilles offre des saveurs citronnées et de pamplemousse tout en se mariant bien aux malts caramélisés. Bien amère, ce style de bière n'est pas approprié pour une première expérience chez les microbrasseurs. Récalcitrante aux premiers abords, ceux qui aiment essayer de nouvelles saveurs se feront sans doute prendre au piège puisqu'il est de plus en plus connu et accepté de dire que le houblon est addictif.

Amber reddish colour, one finger of off white head and quite a bit of lace on the glass. Smell is of earthy citrusy hops, bit of caramel and a fairly in your face malt bill here too, doesn't smell like your typical American IPA but certainly the calling card of a Quebec IPA. Taste is dry with bitter hops up front, citrus followed by a lightly sweet caramel malt, more hop flavour and bitterness with a drying finish, certaily feel above the 60 IBU listed. Light drying carbonation, medium mouthfeel, oily on the palate. This is certainly pretty solid and certainly what I think of when I think of IPA from Quebec, enjoyed this more than a Corne Du Diable I had recently.

Color is amber with a nice beige foamy head on top of it. The head disappear quickly. The aroma is too light for this supposedly "aggressive" beer. Some citrus. Needs to be more aggressive. The taste is more intense. Good. Caramel malts. Woody. The finish is bitter, dry and linger in the mouth for quite a long time. Nice. Medium body.
The aroma gets better when the beer warms up. More intense. It is delicious and well balanced. This is more like an English IPA than an American IPA. Too costly to buy more of it. I don't understand why it is so costly.

Pours a leathery red, not unlike the colour of the label itself. Opaque and unfiltered, with some lighter amber and darker brown shades; cream coloured head and leaves some spotty lace. Moderate retention. Nose has a intense malty and earthy qualities, strong herbal and grassy notes. Weird, and not something I'd initially associate with an American Style IPA, feels more like something in Keller or Altbier territory. Will the taste redeem? Unfortunately not, with similar qualities and a big bitterness initially. Some underripe grapefruit, prevalent earthiness, dirt, grassy/herbal notes. Bitterness is sharp and quite harsh and doesn't do anything to complement the flavours presented by any means. Medium-thin body and a medium-high carbonation. Undesirable, off-style and not something I'd look for again unfortunately.

A: Light hazelnut brown colour with a great one-finger creamy head. Head dissipates to a thin bubbly blanket. Great lacing down the glass.
S: Pine and floral hops with a syrupy honey-sweet malt backbone. Faint grapefruit and orange notes.
T: Similar to smell with pine/floral hops and sweet malts. Spicey notes kick in after with pepper and cloves. Pepper's making me sneeze! Finishes with quite a bitterness.
M: Slightly oily mouthfeel with about average carbonation.
D: Overall pretty good IPA that I would buy again and drink. A bit more on the malty side, but I like it. However, I don't think I could drink alot of this considering the bitterness.
