Poured from 750ml bottle into glass. No dating information found. Bottle label has ABV% as 7.5%.
Slightly cloudy, pale gold colored body. Three finger white head subsides to thin cap and ring. Leaves behind some tufts and spots of lacing.
Delicate aroma of faint apricot fruit and woody yeast funk. The chardonnay and oak barrel is there but in the background. Has depth but the nose has to dig to uncover.
Full Brett flavor, for a saison, with horsey and goaty funk, which is very dry. The apricot expresses as a yeast barreled conditioned fruit, rather than a sweet expression. Apricot is very dry and stripped of sweetness. For me the pepper is more of a base flavor than one of expressive spice (more of a grunt than a zing).
Medium to full mouth feel. High carbonation. Very dry in finish.
The whole expression of the beer is subdued but subtly strong in the summertime funk and the dry fruit. This is a beer that asks the drinker to draw out its expression rather than one that is in the face and immediately emotive. Well made and balanced. This is a beer to drink during an extended session of recovery from the day's activities or during an extended session of semi-serious discussion of the issues of the day.

Poured from 750 mL bottle into tulip.
A: Pours a beautiful hazy orange-apricot hue with 2 inch frothy white head with excellent retention.
S: Black pepper, apricot, soft dry minerals, mild earthy funk, soft oak, and a hint of white wine.
T: Black pepper (maybe a bit too much), apricot, mild earthy funk, and soft oak. Doesn't quite live up to the aroma's promise. Notes of peach, vanilla, and almond emerge with warming.
M: Medium body. Spicy (again, a bit much) and mildly sweet.
D: I was excited by the look and even the aroma, but unfortunately it tailed off after that. Still a solid brew, but I'd tone down the black pepper a tad. Nice complexity and refreshing.

4/1/20 update: Black pepper has calmed down, but is still quite prevalent.
