Tried on-tap at Open Baladin in Rome.

Pours a lovely burnished, bright golden colour. Haze is solid in the rounded, light but hefty body. Head forms a frothy creasy of white, but persists well, leaving streaks of solid lace. Looks good.

Nose is great. Spicy and bright initially, with peppery, earthy undertones to it. Hints of ester notes from the yeast come through along with some banana/clove phenols. Clean and grassy all up, but with some rounded sweetness as well. Very good.

Taste is also very good indeed. Sweet and spicy, clean but bright, and filled with classic farmhouse characters. Spicy, pepper and a noticeable dash of grains of paradise. Slight rosewater notes, earthiness and herbal undertones. Despite all this, it's not terribly funky or organic: it just uses the style and additions to its advantage.

Biting finish gives it more organic notes, but it's smooth in the feel—the sweetness holds it together but the spice breaks out and punches through with its intensity. It's a nice combination. The feel is slightly prickly from the spice characters.

Superbly drinkable stuff—it's really very drinkable indeed, and really genuinely well-crafted. It's a saison near the top of its game, with so many of the characters that make a saison such an amazing style of beer. I love it.

a different type of beer, very cool bottle, super reasonable price compared to other italian offerings. blonde and mostly clear in looks, with a limited amount of yeast floaters, huge amber chunks, a little off putting but not uncommon from the italians. the enormous white head rising to the top of my red wine glass makes me almost overlook them. nose is wine like oddly, estery and funny. odd and unrecognizable yeast here. extremely light malt bill, a little stale, this may have some age on it. hopping is simply for balance, straw vibes, some funk, but the yeast does something weird to this. green apples meet french saison yeast, not my favorite, but i appreciate it. very different from the american take on saison, more clean, more clear, lighter, and that yeast is just so foreign to my palate, may take some getting used to. well made, but a bit of a miss for me personally, could stand a bit more body and something to soften the intensity of the yeast in the finish. might be nice in a fruited edition?

Poured from a 75 cl corked bottle (labeled "Drink by 4/15") in Levanto, Italy, a town just north of Cinque Terre

Appearance: Cloudy orange golden. The one finger head dissipated quickly to no head. There was a nice columns of bubbles throughout the entire bottle.

Aroma: Mostly malty with some candy-like sweetness. There was only the barest suggestion of hops and also a slight aroma of oranges.

Taste: This beer has a very enjoyable sourness along with the sweetness -- almost a honey-like or nectar-like sweetness. There is some coriander. Hops are pretty much absent from the taste.

Mouthfeel: The beer feels good in the mouth. It has an appropriate body and level of carbonation.

Overall: I've found a new favorite! Wayan has a very good sweet/sour balance and is well spiced. However, this is a very sweet beer and may be too sweet for some. Since I'm not a hop-head, the absence of hops was OK with me. This beer was good to the end. It paired well with a salty gnocchi dish and a salty mussels dish. All in all, a fun-to-drink, enjoyable beer.
