From the corked bottle into a tulip glass results in a game of patience until the huge rocky bone white cloud of head recedes enough to get the glass full, the body of the brew is a hazy amber with continuos lively carbonation evident, lively and appealing.
The aroma is, well, fantastic. Green apple, unripe pineapple, new mown hay, cider. very clean and crisp.
Taste brings lemon zest, a touch of white pepper,a hint of sweet malts, grapefruit rind, funk is there only as a suggestion, awesome!
Crisp and bubbly, refreshing in every way, what a nice saison that hits the mark on every level, I will buy this every time a bottle comes my way!

Caged and corked, and literally the only cage that didn't twist exactly 6 times to come off. A bartender in Belgium revealed that little secret to me in 2006 and I've counted every single time since, just to see if he's right. But this doesn't come from Belgium, and I'm not going to judge its authenticity on the 10 twists it took for the cage to come off!
An extremely healthy "POP!" goes the cork, letting out the aroma that wanders to the nose when a couple feet away. The liquid doesn't gush over, but there is a slowly rising column of foam inching up the bottle neck. Had to pour a bit every 30 seconds until it calmed. Very much a living beer.
No surprise that the head is a thick, enormous thing, blinding white and very rocky. Firm, two fingers thick, disappearing only after about 20 minutes, which is impressive. A very hazy peach/gold/rust in color.
Intensely aromatic, with gooseberry, Chardonnay, lemon zest and a kind of bleached graininess making bold impressions. Yeast is mildly "farmy," but not quite horse-blanket, and the overall vibe is cleanness and brightness.
Lemon and Chardonnay emerge biggest in the flavor, with the many grains used here (barley, wheat, rye, oat) conspiring cleanly, never too messy or confused. Dryness and tartness in equal measure; mild hints of wood; acidic unripe gooseberry; super-earthy yeast and lemonade in the finish, along with a bit of citrus rind pucker. Bright, tingling, effervescent texture.
Ferme de la' Ville Provision (a name I will never remember, guaranteed) is relatively complex, but maybe I expected even greater complexity, considering the incredible details given on the label (many grains, Belgian farmhouse yeast, blended with portions of barrel-matured farmhouse ales, conditioned over two month prior to release, etc.). But you know, it's still pretty damn awesome. Also one of the most authentically Belgian-tasting saisons not originating in Belgium. Sad it will likely never pass my way again, but glad it did at all. Thanks Brian!

appearance: a stunner - served in my lost abbey teku, straw-golden body, firm fluffy white head, strong retention
smell: brett, lemon, wheat, pepper, earth
taste: earthy, nice tones of brett, white pepper, musty, lemon rind, oak, pear, green grape, honey. Unfortunately, the meal it was paired with turned out to be a trainwreck. Nice beer, though.
mouthfeel: dry, earthy
overall: nice stuff

On tap @ Block 15 Brewery & Restaurant (Corvallis, OR) on 8/29/11. Served in a tulip glass.
Pours a hazed apricot, topped with a 1 ½ finger cap of frothy eggshell-white head. This retains with some robust edging, which flares up to a rich ½ finger when swirled, leaving back thick swathes of foamy lacing. The Brett jumps right out in the aroma, with a fresh and earthy blast of tart crispness that mixes with the honeyed sweetness of the malts. There’s a bitter and spicy smelling core of pithy fruit to the nose, with a light floral touch and notes of tannic oak adding airiness to the edges of this.
The taste starts out with fresh Brett that spreads out into the mouth with an earthy tartness, sitting against a backing of sweet sugary grains, spice, and a touch of green fruit. A mild oakiness hangs on the edges, pulling into a finish that is dry and crisp, with lingering notes of tartness, earth, and spice which sticks to the tongue a bit. The mouthfeel to medium to fuller bodied, with a nice prickly crispness that sits on top of a more creamy slickness underneath and helps pull this down the throat. Alcohol is nicely hid. Maybe a touch of heft to the body but there isn’t much warmth here at all.
This was good, with a solid and even mix of Saison, wild yeast, and barrel character and had the right amount of crisp snap to the flavors (especially considering the complexity here) to make sure that this wasn’t a chore to drink. This was a nice offering from Block 13. I’m glad it was on tap during our visit.

- Wonderful cloudy straw yellow and zesty orange brew with a huge fluffy 4 fingers of bright white head... won't settle to much but a pinky of thick foam, and layers around the glass. A really pretty farmhouse brew.
- Huge zesty and bready yeast notes, lovely sour and tart tang to the bready and creamy malt aromas.. sweet subtle honey notes, and bitter tinge. Not bad. Can't wait to taste.
- Sweet bready malts, big farmhouse yeasty bready notes.. esters, light clove and grain.. tart woody character, and a lovely citrus zest.. certainly a great beer. I was expecting a bit more sour, but didn't get it from the bottle. That is ok, because it is super good as it sits.
Mouth Feel: (4.5)
- Light to medium bodied, and very well carbonated as the style should be. Lovely chewy notes, and the zesty balance really sets the palate alive. Watering goodness. Dry as well in the finish. This beer seems to hit all the best qualities.
- This beer seems to be one of the most carefully crafted and finessed farmhouse ales I have had. Lovely oak barrel sour touch, and aging. The blend seems to be what a brewmaster would want to have on tap in his or her own home at all times. A very good farmhouse ale, and made even better with the slight souring process and barrel aging. The bottle seems like the cage on the cork was hand screwed and was kinda gnarley.. but the overall experience of this beer is nothing short of fantastic.

Thanks, Aaron! Served in a cervoise. Huge head and lacing. Strong saison nose followed by light acidic twang and wheat in the flavor. Very dry with light oak. Good saison character and I love the backing acidity, as it goes quite well with the rest of the beer and really enhances the drinkability.

Look - The cork comes out of the bottle with a large pop and a bit of gunsmoke and whiff of clementine. The pour yields a big, bulbous head that exceeds the capacity of my Lost Abbey chalice, sitting above the rim like a cream crown. Murky orange-tan hued beer with thick globs of meringue foam lacing clinging to the sides of the glass and a small pillow of foam resting on top of the beer after a couple minutes and sips.
Smell - Earthy, light rye notes to start with some clementine and quince hiding in the background, maybe some D'Anjou pear, perhaps a squeeze of lemon and the barest hint of fresh wheat and light bready malt to balance. Fairly faint overall but nice.
Taste - Gentle sweet-tart lemon-orange juice to start, and again with a light quince note, and as it opens up a bit of pineapple too. The middle shows fresh wheat and then intermingling rye and earthy brett must along with some Macintosh apple/D'Anjou pear. The finish is oil of lemon and clementine zest with a hint of white and pink peppercorns. Pretty tasty, with just enough light tart up front to balance the faintly sweet honey and the slightly bitter, earthy brett end.
Mouthfeel - Really nice, medium body smoothed out pleasantly by the oat presence, with just enough tannic astringency on the tongue in the finish that makes it not too heavy. Perhaps the best part of this beer.
Overall - A solid effort by Block 15. Clearly a well thought-out brew, which is intentionally very drinkable and balanced, though not overally flavorful or too much in any one direction. All the flavors meld together quite nicely, but it is not very exciting by any means. Recommended pairings would be goat gouda, white fish, and pan-seared chicken.
