Notes/Commercial Description:
Dark Ale Matured 40% in bourbon barrels & 60% pinot noir barrels with oregon cherries.

The Demon's Farm: Ruby black farmhouse ale brewed with belgian pilsner, french wheat, roast malts, dark candi syrup, noble hops, and farmhouse years. The young demon's brew is matured eight months in french oak pinot noir barrels and american oak bourbon barrels, with brettanomyces and oregon tart cherries. A demonic brew for those with the most sinister thirst.

Notes from tasting on 11/16. thanks to Rathakem for hooking up the bottle. enjoyed from a block 15 snifter.

this appears to be a slight alteration of La Ferme' De Demons since the description is similar and the label is also practically the same. the main difference seems to be the time in the barrels.

a - pours a thick sludgy black with a thin yellow tan head that leaves quick but swirling the glass brings it back. the beer poured like syrup with the final drops dripping from the bottle with long stringy tales just like syrup. very thick drops.

s - what a wild scent! cherries, chocolate, wine, bourbon. LOTS going on. 1/2 way clashes with itself and 1/2 way compliments itself. the cherries seem to lead the way.

t - you really get EVERYTHING on the taste. the dark malts, the bouron, the wine, and the cherries. very unique. kind of polarizing at the tasting. 1/2 of us dug it and the other 1/2 didn't care for it at all and gave their pours to those of us that dug it. i fell on the side of the fence that enjoyed it.

m - silk and water. surprisingly thing for such a big and flavorful brew.

o - overall, lots of stuff going on with this and you can taste it ALL. that's the weird part. it is kind of like that exotic girl that you can't tell if you are really attracted to or if you think she is fugly. just a lot of different things all equal in the mix and taking your senses on a wild ride. definitely polarizing.

750ml bottle, split, hill farmstead stemware.

A little surprised by the lower rating as I really enjoyed this. Pours pretty cola-brown, relatively minimal beige head. Aged in bourbon and pinot barrels - to me, the vinous notes from the wine barrel came through stronger, but the contrast in barrel profiles was pretty interesting. One of the only dark saisons I have ever liked - really nice kaleidoscope of flavors.

Opened up a bottle to calm my nervous before the AFC championship game on 1/20/2012.

A:A dark red/black. An off yellow head.
S: Pinot Noir, bourbon, cherries, amazing aroma.
T: I remember there being more a bourbon taste when I had it at the brewery, now it seems to have more of a wine taste. Cherries and malts come through the most.
M: Very refreshing, for a bourbon beer it comes off very light.
O: Another good beer from B15. I think I liked it better off the tap then I did with this bottle, but I cant complain :)

On tap at the recent Hop & Vine event.

The beer pours a very dark brown color with good head retention and lacing. The nose is pretty wild in this beer, as I pick up sandlewood, light vanilla, and considerable underlying spice (with a hint of mint). The beer is really pretty tasty as well, with light wine, raisans, a hint of chocolate, light vanilla, and some underlying grape skins. There really seemed to be a lot going on in this beer. Mouthfeel is medium bodied in a fairly low carbonation format. It seemed to work well, giving the beer a soft, almost creamy finish. Alcohol is well integrated into the flavor profile, and drinkability was pretty good.

Pretty impressive effort IMHO. Wouldn't mind having the opportunity to drink this from time to time.

A - Pours a deep opaque brown with golden hilights whten poured. A thin medium brown head forms and moves quickly to the glass.

S - Subtle plums, bourbon, chocolate and some oak.

T - Acidic wood, then dark fruits, finishes with more bourbon.

D - Mild carbonation and a very heavy, thick body.

O - Bourbon and Pinot voth show up, but bourbon wins.

750ml corked and caged poured into a snifter. The bree appears black in color with a tan head that fades leaving stringy lace on the glass.

The smell includes notes of cherry and an overall feel of bacterial tartness. Little to no malt, alcohol or yeast feel. It is simple and to the point.

The tastes is tart with a natural cherry flavoring overtop a bit of minerals and faint roast. Like the nose, the flavor is quite simple and unexciting.

This is a medium bodied brew with a modest amount of carbonation. To it's benefit, it is very easy drinking but by the same token, it is kinda bland. Not really picking up on much saison aspect...or dark maltiness...or barrel aging as described. Kinda hard to rate this as it was easy drinking but lackluster too.
