This rustic beer is the result of barrel aging a blend of our Anniversary, English-style old ale, with Smoking Wood, an imperial smoked rye porter. Bois Fumé, meaning 'Smoking Wood' in French, is pleasantly sweet with a dry, peaty finish.

750 mL bottle poured into a snifter.

Appearance - Deep brown body. Medium khaki head. Medium collar.

Smell - Lots of bourbon and oak. Light smoke. More brown sugar and caramel.

Taste - Some chocolate that quickly turns to caramel and brown sugar. Some light smokiness with the chocolate. Bourbon gets stronger and wood becomes even more dominant. Astringent and boozy as hell.

Mouthfeel - Extremely boozy. Very sweet. Rough.

Overall - Way over the top, but it's tasty.

A - The fizzing sound of carbonation is surprising coming from the near pitch black beer. Its tall cap of khaki foam disappears rather quickly though, leaving a light ring of bubbles clinging to the glass' wall.

S - Warm bourbon heat dominates the nose with a charred oak barrel characteristic pulling forwards more than the bourbon itself, though slightly solventy alcohol does generate a nice tingle in the nostrils. Blackstrap molasses, burnt brown sugar, and dark chocolate evoke the sense of impending diabetes as wafts of gentle smoke rise from the warming beer.

T - Incredibly sweet burnt brown sugar crusts a molasses and bourbon-soaked nougat-filled dark chocolate candy bar that's sure to awaken the senses! The smooth bourbon is quite warm, bordering on boozy but it's charred oak works beautifully with just a pinch of smoke on the end.

M - Oddly enough, this beer doesn't seem nearly as carbonated as the fizzing sound on the pour made it seem. Smooth but very sweet, Bois Fumé is nearly cloying and syrupy but cut by dry alcohol - a very warm finish.

O - If you've experienced one of The Bruery's high octane stouts, or variations like Bois Fumé, you're probably no stranger to the strong sweetness associated with the majority of them but, Bois Fumé does a good job of distinguishing itself. This dark, sweet beer marries a subtle waft of smoke with the bourbon barrels' charred insides for a joyous matrimony of flavors that's sure to develop wonderfully over time - I'll be hanging onto my second bottle for a while.

A: poured into a DFH snifter to a deep brown topped by a finger of dense dark tan head that fades to a collar around the edge of the glass without a lot of lacing
S: smells of chocolate, caramel, vanilla, oak, and dark fruits. a little alcohol in the nose
T: taste is sweet with some smoke, chocolate, vanilla, caramel and a slight fruitiness from the alcohol. swallow is a little hot with oak, chocolate, roast malt and bourbon flavors.
M: surprisingly light on the palate given the ABV with soft and slightly prickly carbonation and a drying finish from the residual mouth alcohol
O: I figured this one would be a little harsher with the ABV but it isn't. This beer is very complex with fantastic flavors. I kinda wish I wouldn't have sold off a bottle because I'd like to have a few more to sit on.

A-Black in the glass, clear amber when pouring.

S-Bourbon, some smoke, spice from the rye, roasted malt and dark fruits.

T-Starts with moderate bourbon, nice smoke, little bit of spice from the rye, dark fruits.

M-Lighter than I was expecting and a tad watery.

O-Not sure how much smoke was present when fresh but a decent beer, probably overpriced for what you get.

From 750 mL bottle to snifter

A: A striking, creamy complexion, sludgy and viscous, with a dark almond color. Almost no head forms, and the few bubbles that try to escape are seemingly pulled back by the weight of the brew.

S: Booze and burnt sugar hit the nose pretty hard. Notes of molasses and oak and earthy tea can be parsed. Barely any aspect of any kind of a hop note can be detected...usually that's fine for a Bruery beer, but from the nose this seems out-of-balance.

T: Boozy-molasses. Wow, I've plucked notes of molasses from a beer before, but this tastes like they added fresh molasses to a finished beer. From the description I was expecting more smoky, peaty aspects, and without any real hop-essence to counter the malty assault, the sip becomes a little treacly. Finishes long...really long, and boozy, clinging to every nook and cranny of your palate. Did I mention booze and molasses?

M: Could be the chewiest brew I've had. Sludgy, stodgy, viscous...

I liked Bois so much I was trying to keep an open mind as I drank this, but it's pretty freakin hard to throw back. I was hoping for more peat, or astringent aspects, or something. This is the closest thing to a 'molasses beer' I've experienced...I'm not sure that's a style that will take off.

P.S. At 16.5%, this beer will age forever. I've got a couple more bottles from my allocation, we'll see if the flavors calm down in a year or two. Or five.

Split with rudzud.

Pours a decent fizzy head that fades very quickly, decent legs, pitch black beer.

Nose brings sweet candy malts, fudgey cocoa notes, caramel toffee, dark dried fruit is long gone, some but milder smoke, nutty toffee notes, candy like, dark choc notes.

Taste brings sweet candy malts, into big smoke, like campfire and Ardbeg peat smoke, candy caramel notes, toffee nutty notes, candy bar notes, etc, sweet syrupy, some booze heat. Finish has mild booze with mild candy sticky sweetness but semi dry, little candy, caramel and toffee, candy and mild bitter notes.

Mouth is thick syrupy, decent carb, hint of booze.

Overall good, I felt the smoke was a little out of place but still enjoyable and not as intense as I thought it would be.

So well blended.

The smoke comes at the end, or as it warms, the smoke comes out but initially its sweet, like Bois and the back end is charred. So well done. I really, really enjoyed this beer.

A beautiful "mistake" by Bruery with the backstory of how this beer was created with a mistake of pulling of the beers into the other's fermenter.

The Smoking Wood takes a back seat of its smokiness, but still offers the roasted malt to help this brew out. In general, the Bois stands out this its rich sweetness, and the barrel of oak and vanilla shine through.

Not as incredible as Smokey and the Bois as the smoke is slightly hidden, but still a really incredible blend.

reviewed from notes a few days ago. big thanks to mike for popping this one. pours a watery black. nose is heavy bourbon and chocolate char. little bit of smoke on the taste with chocolate and bourbon. this one is SO good. very easy drinker. original was great as is the fume. so much nice decadent chocolate smothered over the base beer.

I really like Bois. I mean, really. Parabola and Bois were my introduction to barrel-aged-amazing-beers, and so i have a soft spot for the specific Bois flavors.
I've never tried Smoking Wood by The Bruery

So here we are - a Bois /Smoking Wood blend.

Pours a reddish-brown. It looks fine, but not a delicious colour. not a lot of head, relatively flat looking - but that goes with the territory [i don't expect a 16.2% to carbonated. should i?]

Smells Delicious. I love campfires and this is like a barrel-aged-s'more-campfire on bourbon. Okay, more descriptive: sweet, not as smoky as i have heard Smoking Wood is, not a super hot smell, and i swear i smell cooked marshmallow. seriously. so what is that? caramel?

Tastes great. Narrower [?] than Bois - so not a wide/huge/burst on your mouth. [aside - Melange #3 is the depth-iest and widest flavor i have had from bruery] but very tasty. Sweet, with a little sour and the finish is *very* Bruery. not sure what that is, but i find it on many of their beers - their signature i suppose. Smooth, round, sweet, sour... In that order.

Mouthfeel - its like liquid caramel and soda took a bath in your mouth. it just feels good and the carbonation feels right with a little spike and a looong finish.

Overall - i like this a lot. i tasted it beside Smooth Criminal and Black Tuesday and it was my favorite. I like those beers - and i have a bunch of BT in my fridge, but this isnt a sweet and makes [IMHO] BT taste sickly sweet. Which is crazy, but whever..Bois Fume is delicious.

I had it with and without food [crackers/cheese] and it drank well. i preferred it a little warmer than fridge temp - probably around 55-60.

Pours a murky reddish-brown with a foamy khaki head that fades to nothing. Small dots of lace slowly drip into the remaining beer on the drink down. Smell is of malt, smoke, bourbon, and wood aromas. Taste is much the same with smoke and bourbon flavors on the finish. There is a mild amount of smoke bitterness and an alcohol kick on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a good beer with a really nice smoke presence in the blend.

A: Dark brown

S: Oak, vanilla, caramel, smoke, molasses

T: Much of the same as the nose - burnt sugar, molasses, vanilla, oak, bourbon and a nice hefty dose of smokiness. This beer is stronger than Bois and somehow the flavors in it are far better integrated with one another.

M: Thick

O: Strikes an amazing balance between the caramel vanilla flavors of Bois and the Smoke from Smoking Wood. Really great stuff.

A - Dark cola body. Light khaki head pours a half finger high with ok retention and low lace.

S - Whoa. Chocolate, rum cake, Raisinets, caramel, and vanilla extract highlight a huge, delicious core of rich banana bread, walnuts and bran muffins.

T - Holy crap. Thick, bold and sweet with caramel, molasses, dark chocolate liquor, raisin bran, and vanilla. Warm Drambuie booze warps itself around the sweet center and pulls out darker stone fruits from the profile. Buckwheat honey, oak, pumpernickel bread, and spiced rum cake on the back end. Peat smoke through the finish.

M - Thick, smooth, syrupy body.

O - Big, boozy, sweet, complex, and surprisingly smooth.

Poured from a 750 mL bottle into an enlarged snifter. This was bottled 12/11/13.

Appearance: Pours very dark brown/black, and leaves a mini half finger of tan head, that fades very quickly to a layer around the rim of the glass. (4.25)

Smell: Oak, dark chocolate, figs, smoked wood, vanilla. Nice and complex, but dominated by the wood and vanilla. (4.5)

Taste: Vanilla, oak, light smoked meats, candied figs. Very nicely balanced, not overly sweet, very smooth for the ABV. (4.5)

Mouth-feel: Low to medium carb with a medium body. Could be thicker, but the nice, smooth finish is nice. (4)

Overall: Really drinkable and nice. Not super smoky, but has some, which I like. Lots of oak and vanilla and some dark fruit sweetness. A solid brew. (4.5)

Split with JLindros.

A - Poured into a Kate the Great tulip a nice super dark brown almost black hue with a thin head that fades to leave thin wisps.

S - Aromas of light rye whiskey, nice faint smoke, good sweeter old ale.

T - Taste is astringent smoke, chocolate, nice sweeter malts. The smoke is almost chemical. Good smokey chocolate, booze comes out more and with solid malt backbone. Still, tastes a bit odd.

M - Mouthfeel is a bit sticky and boozy.

O - Overall this beer was really interesting. Would have benefited from more smoke, as as it stands it's just drinking rather odd.

Got one of these in the RS. Poured from a 750ml bottle into my Bruery tulip.

a - Pours a dark mahogany brown color with one and a half fingers of dark tan head and moderate carbonation evident. Looks great.

s - Smells of bourbon, smoke, charcoal, toasted malts, roasted malts, oak, caramel malts, brown sugar, molasses, toffee, light dark fruits, and light sweet alcohol.

t - Tastes of smoke, charcoal, bourbon, caramel malts, toasted malts, burnt malts, roasted malts, chocolate, toffee, sugar, molasses, raisins, sweet dark fruits, some rye, bready malts, and alcohol. Little more smoke and char than the nose had, a small step down for me.

m - Medium bodied and low to moderate carbonation. Not as thick as I was expecting but also not very hot which is nice.

o - Overall I liked this one quite a bit, though it is no where near as good as the normal Bois. I enjoy Smoking Wood and so I enjoyed this, and while you get characteristics of both beers, there is a tiny bit too smoke and char for me. Worth checking out for sure, especially if you like those beers.

First Off Let me be the first(maybe) to say that this Beer is Better than Bois, but not as good as Smoking Wood.

This beer tasted more similar to Smoking Wood than it did Bois, and I like SW better so that may be the reasoning.

Dark brown pour with a decent head and lacing considering the 16.2 ABV.

Aromas of Charred Wood, Bourbon, Caramel, Dark Malts, chocolate, roasted malts, molasses and alcohol.

Taste is robust but not as much as it had the potential to be. Still this works in its favor by making it smoother and more sessionable. Only a 4.5 or 5 ounce sample was received but I feel 12 ounces of this would be near perfect.

Still not one bad beer yet tonight.

Good job Mr. Rue, keep the good beers coming!

Bottle from Homer. Thanks buddy! Pours dark brown which ends up black in the glass with a half finger brown khaki head. Big bold aroma if peat, bourbon, oak, vanilla, smoke, caramel, big badass malt and booze here. Flavor is a peaty dark fruit whiskey, caramel, spicy rye, with some vanilla and smoke afterthoughts left there on the palate. Light chocolate and oakiness with booze but not nearly as boozy as I expected. Thick viscous mouthfeel as expected from a big Bruery beer with adequate carbonation. I know this is bourbon aged but it has a definitely rye whiskey time with additional peat and scotch notes.

Went to The Bruery for the first time--had a flight that included this beer along with four others.

A - Dark with minimal lacing and carbonation, though a lighter amber/chestnut color along the outside rim of the glass. Not actually as opaque and uniform as I figured it would have been.
S - strong aroma of bourbon barrel on the nose; sugary sweetness and caramel; sweet liquor and booze
T - very strong bourbon barrel on the initial taste, but the caramel, slight char, and vanilla on the backend washes away the barrel, creating a very well rounded, full flavor.
M - a bit more oily than I personally prefer and very lightly carbonated--these characteristics together actually are a good combination.
O Very impressed with this beer.
