Each batch of Humulus Terreux will use a different hop varietal and one of the several strains of Brettanomyces yeasts that we have incubating in our laboratory to create a one of a kind, wildly traditional bière. The flavor possibilities are endless when combining possible hop notes of citrus, pine, flowers or grass with the barnyard funk, earth and tropics that can come from a 100% Brettanomyces fermentation. While each beer will showcase a different, distinct character, the overall result will always be dry, funky and delightfully hoppy.

Beer review from Christmas Day 2015.

Pours industry standard yellow golden with ample clarity, would have thought something like the brett or hops would have obscured said clarity. White head doesn't amass much and sets at one of those thin 1/24" ranges. Aroma was far more on the hoppy side than the brett side. Usual suspects in the aroma, pine and citrus.

Taste was a lot of different aspects coming together to go in the same direction. Its a west coast ipa like base, pale toasted malt, requisite hops in abundance. The brett creates a mild sourdough and pepper note to it that is complimentary yet still a clean and crisp beer with the adequate carbonation that serves every flavor aspect of the beer well. Did this see oak? That mild pepper note seems like it could be sourced there. The brett is pretty minimal to the hoppy notes.

A little pricey when it seems basically like an ipa that you're paying $12 for. I like it, but not something I'm gonna buy every year.

750ml from 2015 poured into a wide mouth glass.

Maybe this one spoiled due to poor storage by the store I bought it at, but I am not a fan. Smell and look are great and the funk is very present. Taste doesn't follow through for me, good hoppy flavors upfront but it falls flat rather quickly into a unpleasant flavor with low carbonation. Can't really taste any barn funk flavors. Finishes crisp and dry with a little hop flavor left. I'm a huge fan of IPAs and hoppy beers but this one does not do it for me. Based on the reviews Id guess the bottle I got just went bad but who knows.

Poured from a 750 ml bottle labeled "Brewed with Motueka Hops".

L - Straw colored, moderately hazy and maybe a hint of green. White head is thick and moderately persistent. Streams of bubbles constantly rising through the beer.

S - Strong aroma is an even balance of tropical fruit-like hops and barnyard Brett.

T - Initial flavors are tart lemon and black pepper. Mid-palate has herbal, earthy hops and a low white bread malt flavor. The dry finish emphasizes the Brett. character, which lingers when all else fades.

F - Thin body. Strong, fluffy carbonation. Strong hops bitterness and moderate alcohol burn.

O - This beer is enjoyable with many fine characteristics, but it doesn't quite pull them all together into a world-class package. I suspect it is the combination of the motueka hops with Brett. that disappoints me. The hops have a nice tropical aroma, but none of that makes it into the flavor, instead leaving a strange earthy note that clashes with the Brett. kick.

A - Golden, with a touch of orange, pouring clear early and hazy late (typical), with a mammoth head that fades slowly to a moderate cap, lots of small bubble lacing, coating the glass.

S - Pungent Brett nose, with strong band-aid plastic elements, grass and lemon hop notes.

T - Strong funky peppery taste, fruit and brightness, a mild cracker malt, and a dry clean finish.

M - Moderate weight, mild prickly feel on the tongue, and a slow build on the tongue.

O - Superb Brett beer, delicious and integrated, that aged like a champ and offers clean feel.

Bought 25oz bomber from local liquor store. This version is made with Mosaic Hops according to the label. Poured into a snifter, and beer is very fizzy-- a big 1"+ head appears that slowly dissappears and head is white with a hazy orange appearance.

Beer smells like funk, fruit, and hops. Taste is just like a well put together Saison/Farmhouse beer-- earthy, spicy, lemon, and brett come out. Feel is well blended, light mouthful, very carbonated with a very slight bitter aftertaste.

This beer surprised me. I found it on clearance, and most of my experience with buying craft beer on clearance meant that the beer was subpar. This is definitely not the case with Humulus Terreux-- I don't think of it as a wild ale but more like a Saison beer. Now I have to go back and buy all of these on clearance!

This beer is a little weird. They were not joking when they said it had some funk to it. That is probably the best way to describe the flavor. I picked up it up at Lee's Liqours in Wendover, Nevada. Apparently each batch used a different variety of hops -this one has the New Zealand Motueka variety, one that I have tried with homebrewing -that beer had a similar funk. Hmmmm coincidence? It pours like cloudy yellow lemonade, no chunks. Lots of lacing and the bottle exploded when opened. Some sour tart, but a flatness that makes it still drinkable. Citrus lemon/lime flavors and no grapefruit from the hops, thank god. The yeast is obvious. Smell has almost a chemical floor cleanser scent. Overall it is "ok", i will finish the bottle, but would not buy it again.

750 mL bottle into a wine glass

Tasty, funky brew, with wild, farmhouse character. A super sudsy, sticky head offers notes of dried grass, lemon zest and a dash of musty funk through a fairly pungent bouquet. Oaky on the palate, with citrus peel and brett funk accenting earthy flavors.

The beer scores points for accomplishing the brew's intent. Ends up more of a farmhouse saison than a wild ale.
