Imperial Witbier, 8% ABV, sour mashed 1-2 days, and fermented with a blend of Berliner Weisse culture and Belgian Witbier yeast. Beer is barrel fermented in large red wine barrels (132 gal. barrels). Raspberries are added to the beer towards the end of fermentation directly to the barrel, and aged on the raspberries for a minimum of 1 month. The Berliner culture contains souring bacteria and the raspberries will add acidity to the beer. Brewed to commemorate Bottleworks 12th Anniversary.

Thanks to crusianbeer for sharing this bottle.

The beer pours a light yellow color with a white head. The aroma is full of wheat with a little bit of tartness mixed in. I also get a little bit of lemon in the aroma but it is fairly faint.

The flavor is a little more complex. I get some tart wheat and lemons, as well as a little bit of orange. There is a slight acidic note in the flavor. The beer is refreshing and easy to drink.

Thin mouthfeel and medium carbonation. Not a bad beer by any means, but I wanted a little bit more out of this beer. Not sure where the raspberries were, but I don't think they were in our bottle.

Highly carbonated, golden color with a quickly forming, though quickly fading near-white head. This doesn't leave much in the way of stick down the glass. Appropriate.

The aroma is quite sour/tart, with some definite raspberry sweetness, along with some cherry and wood notes. Complete, bright, expressive, and incredibly enjoyable.

The flavor does not disappoint after such a nice aroma. The big lactic sour notes are strong, with complementary flavors of raspberry and oak. Clean, bright flavors.

Medium bodied with high carbonation. Very appropriate for the style.

This is just as good, if not better, than I was hoping for!

Thanks to jmoore50 for bringing this to the March Madness tasting party, it was my favorite beer not named Pliny the whole week. Awesomely timed opening for the Marquette drubbing of Xavier.

A cool looking peach and light pink appearance, white head to it, great carbonation. Maybe my senses were overloaded, but the aroma left me questioning whether I was going to be all about this. Certainly sour, but there were some off kilter spice aroma that left me guessing.

Taste, simply put, every sip was better and more sour than the last. A medley of fruit tastes came about from this one. Maybe peach, strawberry, something to give it the pinkish appearance. Puckering. Probably my favorite soured beer, definitely favorite witbier (although the taste is anything but witbierish).

A - Hazy golden yellow with a nice white head. Good looking sour

S - Light tart raspberries, lemon, sweet tarts, and oak

T - Soft Berliner Weiss with straw and a light earthy grassy up front. As it goes in there is a light tart presence, sweet tarts and raspberries. Nice soft and balanced

M - Soft mouth feel, light tart aspect, and slightly chalky like after you eat a sweet tart

O - Good sour that is well balanced with light tartness and some good fruit presence from the raspberries

A: Pours a hazy peach color with a 1.5 finger white head on top, great head retention and lacing

S: Nice tart/sour aroma. Some wheat a little bit of raspberry and a bit of rhubarb. Extremely inviting.

T: Great level of tartness mixed with raspberries, the acidity is spot on. Light funk, oak, and some wheat.

M: Light to medium bodied, easy drinking. Crisp mouthfeel.

O: A fantastic AWA, glad it was still on tap when I got over to BW.

Thanks to Adam and Gregg for supplying me with these to share. Bottle poured into Lost Abbey tumbler. Color is a hazy pinkish orange, very reminiscent of grapefruit juice. Small off white pinkish head fades to a collar. Smell is very yeasty, lots of sour lemon lactic acid. Some raspberry, oak, and wheat as well, but very heavy on the berliner weiss yeast. Taste is sour but balanced, kind of like an imperial berliner weiss more then a wit. Sour raspberries and lemon acidity, yeast, wheat, some oak and a tart finish. Medium bodied with a medium carbonation, finishes dry. Incredibly refreshing with some very well hidden alcohol. This is a huge success for bottleworks, one of my favorite anniversary beers for them so far. Very unique, try this one out if you get a chance.

A big thanks to Jeff for this one. I've been wanting to try this for a while now. 750ml capped bottle into Tired Hands stemware. Shared with schen9303.

Pours a foamy 3 finger white head with poor retention. Beer is a clear goldenrod. Lacing is very sparse and spotty with little cling. Decent.

Nose is sour peach, citrus, cane sugar, yeast and mango. More sweet than tart and pretty subtle.

Opens pineapple, peach and mango. Some peachy tartness in the beginning and middle mixed with yeast and cane sugar sweetness. A peach skin tart and light bitterness at the back end. Finishes yeasty, spicy and dry and puckering. Fruity and yeasty finish. Really nice.

Light bodied with ample carbonation. Foamy and prickly in the mouth and goes down biting and aggressive. Finishes dry with a bone dry aftertaste that coats the mouth. Excellent.

For the most part, I haven't been impressed with Bruery's sours. This one is different though. Mellow yet complex with great feel. I'm glad to have had the chance to sample this one.

appearance: served in a 12oz unbranded snifter - really a ridiculous looking beer - a straw-colored milkshake with cream white foam

smell: blind smells are misleading - the wheat tricks my nose into smelling lighter fruits like peach and apricot

taste: a berliner milkshake - blend of tart and sweet raspberries, big wheat notes, not particularly tart - moreso sweet with funky hay/wheat tones. sour apple, lemon, chalk, fruit skin, oak

mouthfeel: creamy and lush - one of the more unique beers of the day

overall: worth a go, but hard to call this a wild ale, more "imperial witbier" or "derivative imperial berliner"

VIP taster at the Bruery Annaversary party. Poured into a small taster glass. Reviewed from notes.

Hay, almost orange color cloudy for sure. Nice white head and decent lacing.

Aroma has an awesome tart funky lemon character. Lots of that lactic barnyard aroma. Little bit of hay or grass.

Taste is tart up front with a grassy hay funkiness and some nice lemon tartness left on your tongue.

Mouthfeel is very dry and refreshing. Nice carb.

Overall an awesome beer. Wish I had gotten more of it. Too many beers to try and not enough time. Plus I was pretty toasty by the end of the party ; )

2013 version

Poured into a Bruery goblet.

Bottle opened with a nice "pop". The pour reveals a 1/2" white fluffy head that dissipates fairly quickly. Raspberries and slight vinegar on the nose. Slight tang and berry taste at first. Very well balanced sour.

This is the best beer that The Bruery brews. IMHO.

Appearance - Golden orange with a decent head. A little lacing. I never know what to expect from sours. They could look like anything and still be good. I kinda expected this to be pinker due to the raspberries, but ok.

Smell - Raspberries. Pretty strong raspberry aroma. Mildly funky with some lemongrass and a light acidity. I expected more acidity from the Berliner culture, but it's still smells tart.

Taste - Much lighter raspberry flavor than the smell. Good lemon tartness. Hefty wheat flavors. Grainy and bready. Not a whole lot going on, really.

Mouthfeel - Light body, good carbonation. Like an amped up Berliner. Grainy finish.

Overall - Light in body and, to be honest, flavor. Not overly sour. Not overly raspberry-ish. The malts come through as much as the sour components and the fruit. It's still a good beer, but not one that lives up to its rating.

Poured into a standard tulip glass.

Appearance: (4)
Pours a hazy hue of apricot with a brilliant white, 2 fingers tall head. Unsurprisingly for a sour, the head recedes very fast, leaving no lacing behind it it's wake. Lively carbonation shows clearly in the body.

Aroma: (4.25)
As soon as the beer is poured, waves of clean acidity waft up out of the glass towards your face. Your nose is filled first with bright lemon juice and some nice tart cherries from the lactic acid. Underneath these bright acidic tones are layers of vibrant, fresh raspberries. These fruity aromatics are blanketed by a thin layer of barnyard funk. As the beer warms, the raspberry presence grows in it's potency and some of the witbier elements start to show; predominantly light clove. Some of the witbier spiciness melds really well with the faint streak of vanilla that the wine barrels provide.

Taste: (4.5)
As soon as this beer touches your palate, you're struck by a blast of juicy lemon acidity. As this acidity starts to subside, a nice subtle essence of tart raspberry comes into the fold. The raspberry presence is light, but very nuanced; you get the tartness and even some of the sweetness from them. Enveloping the berries is an equally light coating of Brettanomyces. Before the dry, slightly tart finish your palate is kissed by a pleasant, soft cracker-like malt backbone. Long lingering notes of tart raspberries, cherries, cloves and a soft bready maltiness. Subtle notes of vanilla from the wine barrels embellishes the malt notes in the finish.

Mouthfeel: (4.5)
Robust, medium body with higher side of moderate carbonation.

Overall: (4.25)
Yet another very unique beer from The Bruery. Here they took an Imperial Witbier, dosed it with their Berliner Weisse culture and threw it in red wine barrels with fresh raspberries. Incredibly, they managed to keep in balance the tart Berliner Weisse cultures and naturally tart raspberries with the normally very delicate Belgian Witbier style. Although its not my favorite sour from the Bruery, this is a very high quality beer and definitely worth tracking down.

2013 Vintage

Appearance: Slightly cloudy light-amber color. Moderate white head that dissipated fairly quickly.

Smell: Tart raspberries and mild funk. I also get a faint bready aroma.

Taste: Tart raspberries and touch of funk. The beer finishes fairly dry with a bit the raspberry and mild funk notes. The beer is tart rather than sour.

Mouth-feel: Fairly light bodied with a moderate level of carbonation.

Overall: A good sour. I will add, upon letting it warm a bit above the recommended serving temp, the taste profile came across more balanced and vibrant.

Big thanks goes out to beeruser for sharing this one on the One Year Anniversary of My Accident/Surgery! Served from bottle into a Mikkeller taster flute. Poured a slightly hazy pale golden yellow with a three finger white head that subsided to a minimal amount quickly. Maintained decent lacing throughout the glass. The aroma was comprised of sweet malt, funk, wheat, fruit, subtle sour, and raspberry. The flavor was of sweet malt, funk, fruit, tart, sour, and raspberry. It had a light feel on the palate with high carbonation. Overall this was a pretty good brew. This one had quite a bit of really nice things going on in it. The aroma was a bit more complex than the flavor, however the flavor was quite a bit more pleasant. Everything going on in the flavor here was really nice and when there was one note, another followed close behind that worked in unison to help you get through the sour/tart mashing on your palate. This was a really well put together brew that I’m really quite glad I got the opportunity to try!

On tap at The Bruery for the March 19 Clusterfork party.

This is the reason every beer geek should at least try a fresher sour before you stick it in your cellar. While this one may be fun to age and watch it change, it is off the chart wonderful right now; plain and simple full of complexities, layers, tons of flavors and character and yet again a wonderful effort from The Bruery. Kudos to Bottleworks for its efforts on this and for picking this one.

Color is a hazy pink grapefruit with almost "white" tones and a light white head.

Nose gives a great invitation and sets expectations with layers of sweet/sour raspberries, tones of strawberry, oranges and tangerines. There seems to be a light lacto nose, although I'm not sure what yeasts or bacterias were used. A light brett character in the nose as well.

Expectations are met in the fresh, wonderfully balanced and lightly sour mouthfeel, only to be surpassed by almost perfect flavors.

Flavors of raspberries, strawberries, oranges, light lime and tangerines. The alcohol is very well hidden and one could drink a lot of this either by itself or with many different food profiles.

Finish continues with a light pucker factor and a nice sour character with a sour berry and green apple character and light lacto and brett, all of which just sets up the next taste. The Bruery continues it's roll.

(bottle at Dak's tasting!). I really wanted to try this one and I'm really happy it made an appearance. Pours hazy red grapefruit color. Aroma has some funk and grapefruit/citrusy notes. Taste is sour/tart. Medium bodied with some fizziness on the tongue. A really nice beer.

A - light amber in color. Standard pour produces rather aggressive head that dissipates particularly quickly.

S - your usual cast of characters for an awa: funk, wine, light vinegar, citrus. Looking for the raspberry and it's there but faint.

T - getting all the same elements that showed up on the nose with a much more noticeable raspberry presence. Oak shows up on the back end. Very light acidity but extremely drinkable. Almost like a kicked up Berliner. Very crushable.

M - very nice effervescence, almost Champagne-like. Nice sweet and tart aftertaste.

O - I had very high expectations for this beer and it definitely delivered. It's not as acidic as some of the other Bruery beers. Delicious.

Pours a hazed orange with rapid champagne streamers of carbonation in the glass, with visible remnants of raspberry seeds floating around also. Thin layer of surface foam that parts quickly and leaves some spotty flecks of foam in the glass.

Aroma is sharply acidic, less overt fruit at this point, more acidity and light wild funkiness.

Taste is moderately sour, puckering and finishes very dry. Some light fuzzy raspberry skins lend a fruity bitterness almost, maybe from the tannin in the seeds or skins. Very quenching and pretty drinkable, though fairly acidic. A good one to share.

8% ABV, 2013 Edition

A - Hazy golden yellow in color, raspberries add the slightest tint of pink to the beer who's head, despite the billowing carbonation, disappears from acidity.

S - Undeniably sour, the aroma is rich with lactic acidity that kills head retention but smells o-so good. Spicy notes of coriander manage to make their presence known through the fresh raspberry fruitiness and red wine barrel oak and tannic grape skin undercurrents.

T - While the aroma bursts with sourness and fruit, the flavor immediately commands attention towards it's imperial wit base; big orange peel-like citrus and coriander, along with hefty pale malt and soft wheat. Crushed frozen raspberries leave a lingering light tartness that recalls the fruit while it's sour mash, aided by the oak aging, brings lactic acid through the finish that destroys any wine flavor.

M - Sparkling carbonation dances on the tongue while the otherwise silky smooth-textured beer courses over the tongue. The bone-dry finish is sharp with acidity and raspberry tartness that ends up lingering more prominently than sourness.

O - The Bruery's Bottleworks XII has a lot going on; layers of complexity continue to unveil in this big beer from it's impressive imperial witbier base through the deep finish. Fruit thrown in the mix while oak aging in red wine barrels makes for a unique sour that crosses all sorts of boundaries for a delicious beer worthy of aging.

Nose is big lactic... almost yogurt like... raspberry is way in the background..

Flavor has a fair amount of tannic notes with berries that almost seem "old"... pretty tasty, but seems way past prime... a bit of oak on the finish.

Light body.. good bubble... very drinkable despite my above negatives.

Thanks Eric... There cannot be too many of these left in cellars.

On tap at The Playground in Santa Ana, CA as Raul did his thang thang.

Choo choo! The Bruery is a locomotive that just won't quit! Where am I? The Black Forest? This thang is just glorious. So tart and clean... Raul could swear that he is in a bubble bath with Behatti Prinsloo.

Cloudy, milky appearance with a peach flesh hue. Highly effervescent, topped by a lasting white head.

Pretty intense Berliner Weiss lacto aroma. There's a ton of offensive rotten egg sulfur, grainy wheat and coriander. Fruity, but it doesn't scream raspberries - the fruit is more of a subtle element. The sulfur is pretty overwhelming here and isn't especially enjoyable. Hopefully a few months in the bottle will clear that up.

The taste, surprisingly, is great. Very tart and lactic, mild sour raspberry fruitiness, coriander, orange peel. Lactic sourness is dominant, very Berliner Weiss-like. A raw, grainy wheat foundation gives the beer a solid body. Finishes with lingering lactic sourness and light vinous oak.

Despite an awful aroma, this was very enjoyable. At this point I'd recommend sitting on bottles for a few months in hopes that the sulfur dissipates.

Nice cloudy orange beer. Smells like brett right off the bat. It looks like orange juice was poured in. Taste is very refreshing. This is a wild beer. It could be a Berliner, a witbier, a sour ale, it can be whatever it wants to be. Body is a bit thick.

Opaque apricot with a strongly rising pillowy white head. Recedes just as curtly with scratchy lace.

Bright and pungent citrus acidity joined by a lively herbal grassiness. Chalky sherbet, orange/lemon Pez.

Raspberry sherbet, modestly sour and very rounded from the wheat. Rockmelon, spicy lemon and a raw grassiness. Great stuff.

Palpably thick from the wheat, moderate carbonation, buzzy acidity.

Excellent. So much going on but somehow simple and addictively drinkable. Impressive coup.

A-Cloudy bright yellow, nicely carbonated, one finger head.

S-Wheat, not much funk, oak, light raspberries.

T-Great balance. Wheat, oak, raspberries and a slight tartness, lemon and orange.

M-Medium bodied, nice carbonation, crisp dry finish.

O-Not as sour as I was hoping but the balance was amazing.
