A 750 mL capped bottle. I forget where it came from through, and no distinguishing price tags to boot. In a snifter.
A: Beautiful, the clearest, cleanest golden yellow that I've seen in a long time. Not an imperfection to be seen. A steady stream of bubbles illuminates the ale, drawing further attention. A white head, dense, moved past two fingers on the first few pours and left ample lacing behind.
S: Fruity aromas mingle with a dry yeastiness, more Belgian than not. The sake yeast adds further dryness. The fruitiness is fleshy, a nice pairing with the yeast. The color, suggesting a pale Japanese lager, doesn't water down the scent.
T: Sweetness upfront, followed by malty breads in the finish. Fleshy fruits, paler varieties, drive the sweetness. Yeast adds to it, adding drying along the way. The ale is well carbonated, to the point of champagne. The bready finish picks up but fruitiness is the lasting hallmark of the ale. Interesting, spritzy and flavorful enough to keep me interested.
M: The yeast does a nice job of directing the flavors; sweet at times and dry bread at others. These collaborations have a nice twist to them, plenty of flavor without much of an alcohol side effect.

Poured from a 750mL bottle into a flared glass at a DFH dinner at Rapture. From notes. Reviewed 16 January 2012.
A: A finger of stark white head fades fast. Lots of bubbles in this pale, clear ale. Decent lacing.
S: Tart kumquats, tripel-ly spices, and clean Belgian(?) yeast. Nope, apparently it's sake yeast. Interesting. Smells like a BSPA.
T: And it *tastes* like a BSPA. Very clean, subdued, grassy flavors. The spices aren't very spicy (i.e., not pepper). Light in taste for 8.2%. Vague clove, but the fruitiness is the star of the show -- light citrus; roundly pleasant.
M: The mouthfeel is excellent. Champagne-like, spritzy, light, refreshing, and, overall, delicate.
O: Good beer, but perhaps not exceptional. Recommended for lovers of odd yeasy and (BS)PAs.

A soft pour into my Lost Abbey Teku glass produces a three-finger and rising, frothy, just off-white colored head that ends up a full two fingers above the rim of my glass. The beer is a bright gold color that shows a brilliantly clear, pale straw color when held up to the light. As I pour this lots of fruit aromatics are present and these remind me of pear and apple cider to some degree. There is an earthy note to the nose that is brought out by a by the pale grain character as well as from some of the spice character. Specific aromatic notes of pale wheat crackers, pear blossoms, lemon zest, a musty white pepper note, some bright ginger character, perhaps a hint of nutty - pale grain character, and a definite Sake like character.
The beer is expressively carbonated, the body is fairly light, which helps to accentuate the effervescence and the beer is actually fairly dry as well. Ginger flavors provide some bitter like notes and there is a bright citrus note that lightly infuses things here. The finish has a bite to it that seems to be a mix of alcohol, phenolics and spiciness; it is almost clove like, sort of turpene laden in some ways and suggests at a palate numbing quality. Touches of pale cracker like grain character peak through at times, but the grain really contributes a soft, pale grain sweetness. The body of this beer is actually quite light, it has a touch of viscous character to it, but only just enough to keep it from being watery. The alcohol, along with the lightness, definitely reminds me a bit of sake & I wonder if that is the rice, the Sake yeast or perhaps both. The fruit character in this beer actually leans more towards pear than it does citrus
This is a bit more interesting than I was expecting; I really like that the spice character is fairly subtle, which I also was a little worried about coming into this beer. This has a touch more warmth to it than the alcohol level might suggest, and I wonder if this has been accentuated by the Sake yeast. Not bad, this definitely gets bonus points for striking an interesting balance between beer and Sake (though it is definitely weighted towards the former).
