Filmishmish, an Arabic term for “when the apricots bloom”, is a barrel aged sour blonde ale to which apricots have been added. The beer's already fruity esters are enhanced by the hint of fresh apricot jam and wood shavings. Filmishmish is a well balanced beer, keeping the apricot and oak character present, but putting the flavor of the well formed sour ale at the forefront.

2015 vintage. Poured from a bomber into a Dogfish Head tulip
L: Cloudy honey/amber pour with a finger of fizzy white head. Falls fast... minimal lacing.
S: Tart, funky, and fruity. Apricots and oak.
T/F: Sweet/tart with loads of peach/apricot. Moderate acidity... lots of funk and oak. Some spice and more green fruit. Well carbonated... medium bodied. Complex... more apricot and oak to finish.
O: An outstanding tart barrel-aged wild ale. The apricots and funk are front and center... enough acidity to be a 'sour' completely destroying your palate. Held up fantastically in the cellar.

750ml bottled 12/8/15, consumed on 7/6/21. This is a special beer with a serious amount of funk. The base beer is clearly fantastic and only improves with apricots.

Reviewed from notes. Poured from a 750 mL bottle. I didn't make a note of the style of glassware used.
A: Pours a hazy bright gold, with a thin white head that fades quickly. Quite a bit of small bubble carbonation runs up the sides of the glass.
S: Big lactic tart and apricot-y stone fruits. Lactobacillus funk, mild vanilla, and cracker malts. A bit of floral bouquet. I don't get much Brettanomyces on the nose.
T: Lactic acid, tart and sour. Big flavor of tart apricots. A moderate citric acid and a mild acetic acid presence also. Some white wine vinous character and a mild sweetness from the cracker malts. There’s a bit of feet-forward funk as well, but the lactic acid dominates. This finishes bone dry with oak tannins lingering –after the the swallow is the only place I get the oak – with more apricots.
M: Light body, low alcohol presence. Carbonation sensation on the low side, but the dryness and acidity keep it interesting.
O: Quite acidic, and without the depth of funk and barnyard that, say, a Cantillon would typically have. But this does have every bit of the juicy apricot flavors. A nice beer, but nothing I could drink all night with the acidity level.

Smells of jammy apricot.
A lot of sour and a rich fruit finish. It's good.
Medium carbonation.
Maybe tone down the sour. This is an older bottle so would like to try fresh. Regardless first rate brew.

Bright golden yellow in color. Hazy in appearance. Sour! Lol. Acetic acid, simple golden sour, apricot, unripe peach. A wisp of a malt backbone. Solid.

Hazy, vibrant light orange color with less than a finger of white head that's pretty quick to dissipate into a thin crown that leaves short-lived sheets of lacing.
Sour aroma with strong apricot and light oak. The taste follows the nose, with a slight creaminess in the aftertaste.
Medium bodied with a touch of creaminess to the feel and solid carbonation.
Delicious and exactly as advertised.
