Notes/Commercial Description:
The primary component of our "White Oak" ale is a 100% barrel aged wheat wine that we affectionately refer to as "White Oak Sap." Essentially a "summer" barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we've added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate...hence the name.

This pours with a certain cleanliness as its Crystal clear orang color shows only loose carbonation through its body and leaves little head.

The aromas are strong and sweet with pronounced honey, caramel malt, vanilla, wheat and wine.

The flavor really reminds me of a wine, though it is a wheatwine. The wheat flavor is evident but has a fermented style with just a touch of alcohol. The mid palate detects some barrel age properties such as a vanilla and oak wood flavor. It ends with more wheat malt.

The feel is crisp and clean but a bit prickly and bubbly.

The trick to this beer is to know your drinking a wheat wine and not a White Chocolate Stout. Once you put aside expectation this is a flavorful "beer" experience.

Unsure as to the date.

A: Pours a deep reddish-amber. Lightly hazy pour. Mid-sized and fizzy tan head. Head fades out pretty quickly, almost soda-like. No sign of lacing at all.

S: Lots of white chocolate and white raisins too. Like white chocolate-covered raisins in fact. Light sting of bourbon with a little caramel and more dark fruits. Maybe a little bit of wheat? Pretty much just smells like straight-up white chocolate raisins for the most part. Pleasant and unique. Quite sweet too.

T: Taste is very similar to the aroma. It's all white raisin with white chocolate. Raisins are surprisingly tart too. Sort of a light toffee from the bourbon coats it. Toffee heavier in the middle along with a heavy wheatiness that pokes through in the finish and aftertaste. Heavy drying oaky tannins in the aftertaste as well, lingering around between sips with a bunch of white raisin. Surprisingly not as sweet as I expected, especially given the ABV and the chocolate/vanilla aging. Not much sign of alcohol as you'd expect, but it does warm the belly quickly.

M: Heavy but not overly thick or cloying. It's a big one. Surprisingly drying too.

O: Very interesting brew. I can't tell if I like it. Barrel aging isn't super heavy but supplies a nice layer of complexity. Even the chocolate and vanilla isn't overpowering. The raisins really stand out for me initially though. Aftertaste is a bit rough, that's my only real complaint. Very unique, strong and complex brew at the same time. Never had anything like this. Making a beer that can actually produce the flavors of white chocolate is an accomplishment in itself.
