Saison Tonnellerie is a new addition to our portfolio of Belgian-inspired saison ales and it could be argued that it is the most traditional as it was 100% fermented in oak barrels.
This sophisticated beer has picked up a rustic character akin to the original beers of the Belgian countryside that would be brewed in the colder months of the year, when fermentation temperatures were more forgiving, and served to the farm staff to keep their thirst quenched all summer long. With Spring upon us, you are just in time to stock up on this new ale for the warmer months.

File this under beers that I only bought one bottle of thinking I wouldn't be into it and kinda wish I had bought more.
Pours a brighter side of yellow with plenty of haze to it and about 4/5" white head on the top. It sits dense. That is a pretty beer. Aroma hits all the dry yeast, hay, clean, mineral barnyard, musty clean american oak.
Taste is complex and well integrated much like the nose. Pear, hay, strong but not too phenolic yeast presence all over this. Wood is complimentary. The brett funk is strong yet clean, this isn't a barnyard ripe w manure kind of beer (although some of that presence in de garde or funk factory beers are very nice). It does everything very well, carbonation is perfect for style and body. Did I mention the very light intermittent notes of bubblegum? I can dig it.
Damn this was a fun saison. What were these $10? Jeez, i would crush one of those every weekend around the river or whatnot. To have all that going for it with a delicious dry consistency the entire time. Its funny how many gems there still are in Bruery's portfolio that I just never ever hear peep about from anyone.

3 year old bottle
A - Deep orange gold body with a light haze. Thick, bright white head pours two fingers high.
S - A perfect nose. Perfectly balanced, funky hay brett with soft apricot, tart nectarine, and silky oak.
T - A mirror of the nose. Outstanding balance and integration. Apricot, oak, nectarine, a soft barn door note, dry moss, and a touch of fresh almond flour.
M - Nice carbonation on a medium frame.
O - My idea of an ideal saison. Oaky, fruity, and rustic. Well balanced, bright, and complex.

The aroma hits of green apple, sweet biscuity malts, oak.
The flavor follows with those sweet biscuity malts, but surrounded by pineapple and lemon fruitiness. Then onto phenolic notes, and leaning towards a golden strong ale. The decent carbonation. The beer somewhat drinks higher than its ABV.

750ml into tulip. Bottled 3/19/2013.
A: Pours a clear deep golden with a large, thick, and fluffy off-white head that slowly faded into a thick and bubbly film.
S: Huge notes of golden fruits and spice mixed with musty oak barrel. I get sweet scents of golden apple juice, a ton of yeast, mild bubblegum, and a touch of lemon. Yeast and oak are musty and earthy.
T: Dry, crisp and mildly sweet flavors of sweet apple juice, crisp wheat, spicy yeast, musty oak, bubblegum, peppery spice, and a slight mineral quality in the aftertaste. Honey like sweetness in the finish, lingering spiciness in the aftertaste.
M: Medium-full body, bubbly and tingly carbonation, semi-heavy mouthfeel, sweet and sticky.
O: On the sweeter side but nice complex spice and fruity flavor. Drank well but there are better.
