Made in the style of the Belgian wheat beers that are so refreshing, (512) Wit is a hazy ale spiced with coriander and domestic grapefruit peel. 50% US Organic 2-row malted barley and 50% US unmalted wheat and oats make this a light, crisp ale well suited for any occasion.

This a 100% better from when I first had it. Granted that was awhile ago, the first batch. It has improved greatly. I have been overlooking it for months now. My mistake.

Cloudy yellow. White head. Very pretty pour form Ginger Man. Zesty, spicy, clove aromas and flavor. Delicious. Some good citrus flavor as well. Straight up, one of the best American wits I have had in awhile.

Medium mouthfeel. Zesty as hell, very nice. Perfect drinkability. I will never overlook this beer again.

Look:
Golden pale body with a nice hazy center that you can't see through. It's head is white, thick, and fluffy and lasts for about 45 seconds before succumbing into the nothingness leaving only a few traces of its once beautiful airy and cloud heaven. There is a nice strong but thin line of bubbles around the glass and it's insides are just teaming with carbonation.

Smell:
Strong lemons and grass aromas hit you first followed by subtle yeasty and bready hints of wheat come through. It does have a mild tart smell to it and it makes the corners of your mouth start to water.

Taste:
Sweet overall, citrusy and spicy all at once; it hard to say which you taste first but coriander, lemon zest and mild grapefruit and orange zest in the aftertaste. It does leave you with a lingering citrus zest flavor for quite some time.

Feel:
Starts off with strong carbonation and does die down pretty quickly, smooth and light on the tongue, but well balanced over all.

Overall:
Not bad overall, a pretty good example of the style for a local beer, it is smooth and has plenty of flavor; I would consider this a quick drinker because of how fast the carbonation dies out, leaving you with a semi flat beer. That being said, the flavor does not weaken a bit and it is refreshing.

While visiting Texas I sampled this beer. Reminded me of a Blue Moon but better. It was a little smoother, but still had that citrus taste. Can’t wait to get my time in so I can get someone to trade some for a Indiana beer.

Look: slightly more orangish lemon color, no head
Smell: candy banana, rock candy,
Taste: got that delightful belgium sweetness initially, little bit of orange juice (not the drink but the flavor of a really juicy orange so the flavor of that as it's the natural more watered down flavor), maybe the tiniest bit of herb grassiness on the finish - not much though. Smooth
Feel: medium, barely any carbonation
Overall: a good beer. I agree with another reviewer, very similar to celis white. Would love to try them side by side and see who wins. Very drinkable

In tap at the Flying Saucer in Addison. Pint glass, 16oz.

Pours pale and hazy, maybe slightly paler than the average wit. Decent lacing as the head dissipates.

Smells of citrus with the slightest hoppy touch.

Initially it's a great tasting beer. Grapefruit-forward and mellow in the middle. But the aftertaste is oddly astringent, considering the mildness of the flavor at first.

Still, it's a refreshing, slightly effervescent wit. I don't think it'll keep the big macro wits in the market up at night, but if you want to support a local brewer you can certainly do worse.

On-draught @ the brewery.

Well-executed. Soft wheat provides the foundation with leavening 2-row in there so it isn't gummy. Coriander spice is evident, harmonizing nicely with the estery Belgian yeast. Hints of cracked grains/grains of paradise. I get lemon peel but apparently grapefruit peel is utilized...I don't find it. Remarkably well-balanced.

Depth of flavour could be improved, as could intricacy.

Refreshing, smooth, and wet. A softer more delicate mouthfeel would help it rival the greats in the style.

Devilishly drinkable, and a solid true to form beer in the style. It's not Allagash White, but it does rival if not best local competitor Celis White - and that may say it all. I'll definitely be revisiting this one.

A bit sharp in its overcarbonation. I preferred it on-draught.

Solid nonetheless, but I'd sooner buy Allagash White.
