Poured from the bottle into a snifter. I was lucky enough to have this with the other 3 variations.

The beer pours a dark brown, almost black color with a layer of tan head. The smell is a little bit sweet with a nice roast quality. There is more roast in the taste than there was a smell. I would swear there is a wood aged quality to this beer. I'm getting a mild maple syrup note behind the roasted malt. While the roast dominates, the beer still has enough balance for me. The body is on the thick side with a good amount of carbonation and a finish that is super dry.

Poured from a 750 ml bottle into a Half Acre snifter.

A- pours like motor oil with a 2 finger dark cola head. Some blotches of lacing remains on the glass.

S- molasses, roast, some ash, some sweetness in there as well.

T- dark chocolate, maple syrup, roasted malts, some oak, bitter pine and ash.

M- full body and medium carbonation. Creamy with light acidity at the finish.

O- very good RIS. Big roast and ash with some light sweetness from the maple syrup.

A: Poured jet black, sordove sluggish on the pour. It yields a tannish head with good retention, some lacing present after a few sips

S: Big, sweet, sticky maple. Roasted notes, coffee, chocolate and a little booze stings the nostrils

T: My oh my, sweet decadence upfront with a barrage of sticky sweet maple, choclate blend, a little booze sting on this. Coffee is underlying but gives way to the roastiness, maple and chocolate which dominates this beer start to finish.The finish is oh so tasty, sticky and sweet

M: Big bodied, well carbonated but it leaned a little low which is ok for me and this style, it helped the beer feel, full, decadent and sweeter to me

O: Dynomite!

On tap at both Three Penny Taproom and Prohibition Pig.

A - Super dark black with a nice dark mocha head. Nice lacing.

S - Big chocolate, roast and sweet maple.

T - Same as the nose. Fisrt get hit with the maple sweetness, then the chocolate comes in along with the coffee style roastiness. Great. This is a pretty sweet beer, so if you're turned off by that take note.

M - Great carbonation with a nice silky mouthfeel. Coats nicely.

O - Fantastic stout. Would love to try the other variations.

Much gratitude to Kegatron for sharing this with me. This base version was up first before also sampling 2 different barel treatments. A 750ml bottle rediculously numbered 25 of 48. Talk about a limited run of bottles...yikes. The brew appears black in color with a thin line of clarity around the edges. A swirl revives a hearty finger of dark brown back to the suface. Webby patches of lace stick to the glass as the cap collapses.

The aromatics are deceptively sweet smelling like milk chocolate. Some roast and earth are present fading into something more along the lines of tobacco. A mild spicy note is present that blends into a touch of alcohol.

The flavor is super roasty, burnt and bitter almost like tobacco mingled with strong coffee. Plenty of roasted bitterness that seemingly voids any reason to include hops. A noticeable amount of solvent alcohol is present but it integrates very nicely. A minor hint of milky dark chocolate is noted across the back reminescent of what the aroma indicated.

This is a medium to lighter bodied brew that is quite dry, roasted and aggressive. It seems thinned out a bit perhaps from the alcohol inclusion and lack of any significant amount of residual sugar. It has a modest amount of carbonation that helps move the flavors across the palate. This is a kickass brew thats worth seeking out. I cant imagine a better base brew thats aggressive like this and lends enough of its own profile to stand up against any form of barrel treatment. Thanks again Heath for sharing!

750ml corked & caged bottle into a couple of glasses. Rare batch 92. Bottle # 25/48. Black with a dark mocha head. Plenty of rich spotty lace and brown oils down the sides. Maple is heavy in the nose, along with chocolate, roast and alcohol, which is combining to give this a bit of a spicy tobacco character. The taste is sweet but not cloying, thanks to the overall roastiness of this. The flavors nicely compliment the spicy alcohol character that is here. The mouthfeel is fuller bodied but seems a tad thin. Probably from the aging but the benefit is that this is ridiculously easy drinking for the size. I mean RIDICULOUS. The maple addition really sweetens this up but the aggressive Stout flavors give it a balancing edge. I really like Lawson’s use of maple in these beers. Really gives it a distinct character. I’m looking forward to seeing how this base is put to use in the barrel-aged versions.

Big thanks goes out to beeruser for sharing this one at a past Random Sunday Tasting! Sampled side-by-side with the bourbon barrel version! Served from bottle into an Aroma’s snifter. Poured pitch black with a half finger brown head that subsided to a minimal amount quickly. Maintained excellent lacing throughout the glass. The aroma was comprised of sweet malt, roasted malt, molasses, powdered chocolate, Yoo-Hoo, and smoke. The flavor was of sweet malt, roasted malt, dark chocolate, milk chocolate, molasses, and smoke. It had a medium feel on the palate with medium carbonation. Overall this was a pretty good brew. Having had this side-by-side with the bourbon version one could definitely tell that they were both completely different animals. While this one was not quite as complex as the bourbon version (which one might expect) it still managed to work really well with what it had going on. The Yoo-Hoo on the nose of this one was really enjoyable and actually brought back childhood memories of shaking the shit out of those bottle to suspend the chocolate at the bottle of them. Glad we didn’t do that to this beer as I would have hated to waste any of it. Another really well done brew by these guys that I would absolutely love to try again in the future.

The beer pours a blackish brown color with pretty decent head retention and lacing. The head on this beer is a dark mocha brown color, that dissipates fairly rapidly after the initial pour. Still, this is a pretty attractive looking beer. The nose is about what you'd expect in a beer like this. There is considerable dark chocolate and vanilla in the aroma profile, along with some licorice, coffee grounds and underlying maple. The beer smells as if it will be on the sweet side (which of course it is). The flavor profile replicated the nose pretty closely, but was a bit sweeter than I expeced, and it had a roasty quality that I wasn't expecting as well. Still, everything blends together fairly well, the beer finishes wth some licorice and light bitterness. For such a big beer (over 10% abv.), I was surprised by the mouthfeel in this beer. It was actually a bit thin, though there's certainly plenty of flavor. The finish was fairly long otherwise, with some licorice and bitterness at the end. Alcohol was pretty well integrated into the flavor profile otherwise, and the beer wasn't at all heavy or tiring on the palate (despite the sweetness).

An interesting beer, but I just expected it to come across as a bit richer and fuller on the palate. Not sure what the brewer was going for here, but if he/she was hoping to replicate Founder's CBS, then I'm afraid they fell well short. Nevertheless, I was glad to be able to sample this one. Thanks to my friend wdarcy77 for this generous birthday gift.

The liquid poured an oily and viscous near pitch black. A two-finger crop of super tight and creamy, crimson-tinged, saddle brown foam topped the liquid. The head faded to a thick, frothy ring. Spotty drops of lacing trickled down the glass with each sip.

The nose was a real disappointment. Dark, super roasty malts dominated. Lots of char and ash. Hint of burnt espresso. I picked up some subtle metallic notes as well. The beer was not very complex overall and smelled a lot more like an Irish dry stout than an imperial stout of any type. Some brown sugar-like sweetness came out as the beer warmed.

The flavor profile was even more disappointing than the nose. Metallic notes started things off before the burnt, charred, acrid tasting malts took over. Cold coffee appeared in the center. Lots of booziness on the back end. This beer tasted much hotter than the 10.1% ABV on the label suggested. Bitter, piney hops came through in the super dry finish. Burnt malts and oily hops lingered long into the aftertaste. As the beer warmed, some dark fruit notes appeared as well.

The mouthfeel was slick, creamy and silky smooth. Not super thick or viscous for the style but quite impressive nonetheless. The liquid contained a finely bubbled, moderate effervescence.

All the Lawson's beers I have tried before this one were very good or outstanding. This beer, however, was a big letdown. Not only did it lack complexity, but it was completely devoid of any maple notes.

Sampled the Oak-Aged Fayston Maple, Original Maple and Bourbon Barrel Aged versions simultaneously.

Pours a black color with a thin tan head and some small bubbles that recede to leave some moderate lacing.

Aromas begin with a majority of chocolate and roast, light earthy bitterness and honey sweetness from the maple. As it warms you get a little more chocolate and vanilla sweetness.

The tastes follow the nose with some dark chocolate maltiness up front and molasses, roasted malt and light maple in the background, plus a bit of milk chocolate as it warms.

The mouthfeel is medium bodied with medium to low carbonation. Finish is a decent mix between roasty and sweet.

Overall this was an improvement over the oak aged maple version but still fell a little short of expectations. The maple is there but I really wouldn't pick it out if I wasn't looking for it. For it's rarity, it's not worth seeking out.

A: Opaque black body with a 1/2" of dense brown head. Good retention, decent lace. Intense.

S: Maple, chocolate, coffee: just those three aromas, in that order. Sublime.

T: Intense dark chocolate up front, followed by rich maple, smooth caramel, and a profoundly bitter coffee roast finish. Maple and char are balanced on the aftertaste. Crazy, and good.

M: Lively, creamy, full-bodied. Nice.

O: This was good, but not nearly as impressive as the barrel-aged variants.

5oz mini snifter

A: Pours a very thick dark brown. Almost completely opaque. Faint head. From whats there, its dark tan. Minimal carbonation. Fairly still.

S: Actually smells BA'd. Nice sweet smells. Pulling roast notes. Sweet toffee and molasses like flavors are coming through, leading back to feeling BA'd but it must be the linger maple syrup.

T: There is some hop bitterness up front still. Not tons of sweetness like you smelled. Maple might have died out. Getting some roast malt character, but not aggressive bitterness. Really smooth beer. Good roast character and chocolate flavors as it warms. Slightly dry finish.

M: It's a little thin, but full bodied.

750ml bottle (filled to within a 1/4" of the top) poured into a Founders CBS snifter.

A - Pours an extremely deep brown color, almost totally opaque. A thick finger of cappuccino colored foam that is dense and thick lasts for a couple of minutes before falling. A thick ring of foamy lace is left on the glass.

S - Faint maple over coffee. Touch of booze, some creamy chocolate and traces of licorice. Warming up a bit seems to release the maple a bit more, but still isn't a dominant aroma. Nice overall, but lacking a bit in intensity.

T - Heavily kilned malt on first sip, burnt toast, charcoal, coffee. Touch of sugary sweetness, dark caramel, and a suggestion of maple. Smoothes out to a creaminess and a slight warmth although the alcohol is hidden fairly well for its strength. Mild hints of licorice and vanilla and lightly fruity and bitter hops round things out.

M - On the lighter side of medium bodied...definitely thinner than I thought this would be. Carbonation is light, smooth and creamy. This trends mostly toward the burnt and acrid aspects of the style and yields a slight astringency as a result. Maple is quite subdued...not sure I'd pick anything up if this was a blind tasting.

O - Hate to say it, but I'm a bit disappointed here. No doubt this is a good imperial stout, but I came into this bottle having extremely high hopes and expectations. Having been blown away by the Lawson's various IPA's/DIPA's I was ready to settle in to a truly top notch stout. Don't get me wrong, this is a very good beer, but still a bit of a letdown. Especially considering the difficulty involved in obtaining this beer, I have to say I'd take a standard Founders Breakfast Stout every time over this (not that FBS is much easier to obtain these days either). Very good beer, but perhaps a victim of its own hype...at least for me.

Pours an inky black color with a smallish tan head that dissipates rather quickly. Smells of caramel, chocolate, brown sugar, maple, and a hint of earthy hops. The flavor follows the aroma and is incredibly smooth. Sweet maple and brown sugar play nicely with chocolate coffee and roast against a hint of earth and a touch of alcohol. Medium body with a moderate level of carbonation and a sweet sugary mouthfeel. This is a great beer, nicely balanced, smooth and quite tasty.

First had: on tap at Prohibition Pig, Waterbury, VT

A bit underwhelming and average this stout was. I picked up a few bottles, so I'm hoping the beer is better bottle-conditioned than it was on tap. Surely an attractive beer: poured pitch black (at least it appeared so in the pub light) with a rich, mocha head that retained well; minimal lacing. Aroma thick with roasty malts, coffee, and a bit of smoke; no maple whatsoever. More of the same in the taste, dark roasted malts, coffee notes, burnt caramel. Quite average. Again, no maple in the taste, not even after letting it warm up a bit. Medium body, a bit thin and watery for the style, alcohol is well-hidden. I hate to say it, but even my homebrewed coffee stout was better than this. Still not bad though, and pretty easily drinkable overall. Hopefully I get a better experience from the bottle.

750ml bottle purchased at Hunger Mountain Coop. Split with my dad on his birthday because he loves maple syrup, especially Vermont maple syrup. Poured into Lawson's tulip.

A- Pours a completely opaque jet black with about a finger of creamy mocha head that has okay retention but recedes decently fast and leaves some light spotty lacing. Steady rising carbonation, definitely above average for a stout.

S- Chocolate and lightly roasted malts balanced with maple syrup. Fairly sweet smelling, but a little bit less then I was expecting. A little bit above average aroma strength.

T- Cocoa and lightly roasted malts followed by bitter dark chocolate and finishing with sweet sugary maple syrup that lingers for a little bit. Nice balance between the chocolate and maple syrup without being too overly sweet.

M- A bit too thin for a stout and slightly overcarbonated, but extremely drinkable.

O- This was a very enjoyable stout that had a nice sweet maple syrup presence to it. The mouthfeel could have been improved a little bit, but overall I thought this was a tasty beer that was fairly well done. The balance between the chocolate and maple was very good, the bitterness could have been toned down a tiny bit but I didn't think it took too much out of the beer. With the sweet maple syrup finish this is a beer that I would enjoy in small quantities, probably no more then 8-10oz.

Poured from a 750ml. bottle and split with my wife.

Appearance: Pours like motor oil with a huge head that gently cascades. The bubbly and creamy head takes lots of time in settling.

Smell: Maple fudge, tinge of sweetness that isn't overdone and creamy.

Taste: Bit of sugar, coffee cream and them maple creeps up in the finish and aftertaste. Subtle yet becomes gradually more present.

Mouthfeel: Bit of carbonation and the body at first isn't quite full, a bit thin. Creamy and smooth body makes up for it a bit. Easy to drink.

Overall: Would have liked a bit more maple sweetness but it is a subtle and balanced stout.

2011 vintage poured from a 750ml bottle. Black in color with a thin, dark tan colored head clinging to edges of the glass. Nice looking lacing on the glass as I drank it.

The aroma has a creamy milk chocolate flavor mixing with some roasted malts and coffee. It's got some subtle but good maple notes to it that started to come out more a it warmed. The darker, roasted malts were pretty good and they were complimented pretty well by the maple.

The taste shows more of the darker, roasted malts with notes of chocolate and coffee throughout. A little of the maple sweetness comes out up front along with some caramel and a little sugar. In the finish I get more of a bitter, roasted almost burnt flavor coming out. There is a little but of a burnt hop like flavor to it as well.

The mouthfeel is medium bodied with moderate carbonation and it felt a little thin for style overall. Overall, I thought it was a pretty good but not great beer. It just didn't all work that well for me. The roasted, bitter, burnt hop just seemed to dominate and the maple didn't really come out that much. It was good, but not as good as I had hoped.

A: Pours a very dark brown, near black, with a thin light brown head that quickly faded to a bubbly collar leaving spotty lace.
S: More smoke than maple. Some sweetness comes through along with roasted malts and marshmallows.
T: Flavors a roasted yet sweet. I get a blend of smoke, sweet maple, marshmallow, roast, caramel, ash, chocolate, burnt and raisin. The finish reminds me of burnt tobacco. I wish there was a bit more maple.
M: Medium-thick body, very smooth mouthfeel, creamy carbonation, well hidden alcohol.
O: Maple has faded. Much more roasted than I was expecting. Flavors are rich though, and the beer drinks very smoothly. Thanks again SneezyAchew.

Reviewing the Fayston Maple Imperial Stout from Lawson's Finest Liquids out of Vermont.
Score: 92

No bottle date, but received in a trade in March 2012. Served in a Surly Darkness snifter and enjoyed on 06/03/12 with Robbie Moy.

Appearance: Pours a completely opaque jet black color. One finger of creamy light brown head at pour that settles to a ring around the glass and thin layer across the top of the glass. Average lacing, good retention. 4/5

Smell: Coffee, chocolate and maple. Hint of sweet cherry, touch of wood. Growing amount of wood in the nose as it warms. 4.25/5

Taste: Milk chocolate and cherry upfront with a residual coffee aftertaste. Unsweetened chocolate. Subtle sweet maple backbone, but nothing too prominent. A very light amount of dark fruit flavor too. More wood flavor and more sweetness as it warms. 4/5

Mouthfeel: Medium-full bodied, minimal carbonation. Watered down syrup mouthfeel. Sweet finish. 4/5

Overall: A delicious beer that I would absolutely buy again if it were readily available on the shelves, but it's not worth the cost of hard-to-get and quasi-rare beer it takes to land given the quantities made available and general demand for Lawson's beers.

Recommendation: Seek this one out if you get the chance, but do not give up your Surly Darknesses for a bottle.

Pairings: Roasted pineapple coated in brown sugar.

Cost: $10 for a 22 oz (bomber) bottle.

From a 750ml into a snifter
Vintage: 2011

APPEARANCE: Pours out dark black and yields a one finger, medium looking, light mocha colored head with good retention. Black body and lower levels of carbonation evident. Head slowly fades to a splotchy wisp and ring. A ring remains the whole way but leaves no real lacing down the glass. Dark and black, which is the way it should be.

SMELL: Bold enough nose of roasted malts, cocoa powder, dark chocolate and coffee. Quite a nice nose, but it lacks any real maple qualities, which were expected.

TASTE: Roasted malts and maple sweetness up front, which was nice to see. Cocoa powder, dark chocolate and some bitter coffee notes move into a bold and very persistent roasted, cocoa bitter aftertaste. A well-measured hint of maple syrupy sweetness lingers as well. Very nice and increadibly easy to drink. Great stuff.

PALATE: Medium body and medium carbonation. A little light on the palate perhaps, but very creamy smooth for sure. Goes down silky smooth and finishes slightly dry. A little light, but the silky creaminess is very impressive.

OVERALL: Quality, quality beer. Not quite as maple syrupy as we may have expected, and definltey milder than the CBS we drank it next to, but the balanced nuances were phenomenal and it was increadibly easy to drink. We slammed through this bottle way too quickly. Would love to drink this again sometime, and would be very interested in trying out a barreled version. Thanks again for sending this one over jbeatty. Excellent stuff.

I was extremely pleased by the deep rich flavor of this brew. I accompanied it with some imported dark chocolate which really complemented the brew.
It pours a nice rich tan head with strong lacing. Multiple flavors abound---delicious…
Mellow chocolate flavor upfront that lasts to the finish. Half way through a tremendous roasted, charred flavor is integrated. Finishes with a distinct maple, sugared sweetness...not overpowering in any way. Roasted malt character with a considerable chocolate malt backbone. There is noticeable maple sweetness in the background. Rich and roasty with a delicate sweetness.

I will add more of these to my cellar aging quiver... yum... should age nicely.

A: Pours a black body with browner edges and thin tan head. It recedes to a thin film and ring that leaves some splotchy lace behind.

S: Roasty malts with unsweetened chocolate and just a touch of maple syrup sweetness.

T: The maple is more pronounced in the taste, but it is more sugary and somewhat artificial tasting. The taste still has the roasted malts and chocolate flavors from the nose. Booze is nicely hidden.

M: Medium bodied with a medium to medium carbonation. I was expecting a creamier mouth, but it was very drying in nature.

O: This was a solid stout, but I wish the maple was a tad less artificial and the mouthfeel wasn't so drying. The booze was hidden which was nice. Good, but don't go afte the hype.

Fayston Maple Imperial Stout pours black into the glass with a small brown head on top. The foam disappears quickly leaving behind a few spots of lace on the glass.

The aroma is rich malt with notes of chocolate, roasted malt and dark fruit. Notes of alcohol are also present.

Each sip of this medium to full bodied beer is smooth and silky with a mild carbonated fizz. The flavor is rich and loaded with chocolate, toffee and roast malt. Some dark fruit is also present. It finishes with a mildly bitter pine flavor. Once gone the chocolate and pine lingers on the palate.

A very tasty easy drinking beer. You'd never know it's 10% abv.

A: Pours an opaque black (just shy of jet black) in color with some dark brown highlights when held up to the light. The beer has a half finger tall dark tan head that reduces to a thin ring at the edges of the glass. Very light lacing is observed.

S: The aroma is dominated by the dark roasted malts with some dark chocolate and fresh ground coffee. There is a very subtle hint of maple in the smell but I really wish that it was more present.

T: The flavor of the dark roasted and toasted malts with lots of dark chocolate (almost like a candy bar) and just a hint of some coffee bitterness. Overall this beer is sweet and chocolatey but the maple flavor is really lost in this beer.

M: Medium bodied with light to moderate amounts of carbonation. Creamy.

O: I was really hoping for a greater maple presence in this beer and was slightly disappointed that it was so subtle. The alcohol was not quite as hidden as I had expected, you can definitely detect it in the taste. Definitely enjoyable.
