Brewed once a year, this brew using rye, barley and wheat borrows from Wallonian tradition in creating a unique ‘house brew’. Fermented with a Belgian Saison yeast, finished with a champagne yeast for extra dryness, carefully aged and bottle conditioned.

Brought a bottle to our local June BA Meet-Up - thanks, Sean.

750ml. corked & caged bottle, forgot to check what number in the series. Bottle conditioned. Opened without a fuss. Plentiful carbonation, and long-lasting. Mouthfeel is dryish, pleasantly tannic from the rye, I'd assume. Aroma of honey, malt and yeast. Darker than a typical saison, and not at all funky. Very refreshing, but was hoping for some tang. Alcohol hides well - not fusel at all. Delicious regardless of my expectations. Hope to enjoy it again soon.

Very light fizzy head fades quickly lots of mini bubbles, mostly hazy golden birch wood orange color.

Nose light spicy rye, a touch of farmhouse funk and dry grainy farmhouse, lots of fruity esters, light apple cider like, some booze and brandy like.

Taste is strange, starts with light spicy rye, a bit of bready malts, some farmhouse funk. Wicked boozy with tingle and burn almost fusel. Some funky Brett like flavors, earthy and funky. Also maple, a clear maple flavor, and hint of brandy with the booze and apple like esters. Finish is bone dry, more lingering booze burn, light saison wheat and light farmhouse funk lingering with hint of spicy rye. Long after the finish I get more dry maple.

Mouth is med to fuller bodied good carb but way too boozy.

Overall...sigh, not sure what to think. It has so much potential and interesting flavors but falls off on aroma and what could have been for the overall beer. It's almost a mess with so much going on and way too boozy.

Pale orange body, good sized cap of slowly settling white foam. Nice lacing as well. Funky brett nose takes the lead, light booziness; yeasty fruit esters. Lots of musty barn notes.

The flavor is surprisingly tame after the nose; the brett is there with its accompanying funkiness but it’s quite reserved. I’d love to see how this develops in the bottle over time but alas couldn’t afford more than a single shared bottle at 30 dollars a pop. Other flavor notes include yeasty spice and fruits, particularly lemon and orange; mild sweet malt, grainy wheat. Finish is quite dry.

Medium bodied with crisp carbonation and a clean mouthfeel. Quite a nice beer but not something so exceptional I’d spring for again at the price. Glad I got to try it for sure, though.

2010 bottle, poured into a Lawson's snifter. It was a heck of a lot of work getting the cork out of this guy, and little to no co2 escape at the release - i was ready for a flat beer, but it was surprisingly well carbonated once i got it pouring.

It a real marigold-amber, very clear, with a nice off-white head that dissipates but leaves a bit of lacing. The aroma is decidedly muted, but there is a bit of grassy funk at the start (I'm guessing that's the Brett acting up), followed by some fruity and rose esters (but not so much to really get obnoxious), and a really nice hint of white grapes and oak at the finish. Given the Brett and champagne yeasts, I probably could have aged this for a lot longer and gotten some interesting results, but oh well.

The taste is decidedly a call for further aging - a bit green appley and, dare i say, cidery, but the saison, brett, and champagne yeasts are all showing through in an interesting blend (it's dry, it's thirst-quenchingly tart, and it's got a nice hint of funk). I'm not seeing as much of the barrel-aging, but I've had other funky, barrel-aged beers really bring the oak forward over time (I'm looking at you, Gilgamesh). The longer I sit and let it warm up, the more muted some of the alcohol and acetaldehyde becomes, and more of the saison tartness and some of the oak starts to come through. I don't know why, but I was worried that this would be a pretty full - if not sweet - brew, but it's nice and dry with a lingering finish.

Maybe it'd see some nice changes with added time for the yeasts in the bottle to work some magic; as for right now, it's interesting - if not maybe a little bit green apple and boozy for my tastes. 3.75/5.

Went halves with JLindros on this bad boy. Poured into a Kate the Great tulip.

A - Poured a nice crystal clear amber honey hue with a fizzy half finger head that faded to leave a thin halo.

S - Aromas of spicy rye some farm house notes and lots of fruit esters. Relatively meh.

T - Taste is....what the fuck...so alright, Brett right off the get go. Which is good, leads to rye spice some barrel notes and then...out of no where maple. Now, no where on the label does it state maple; the barrels are french oak white wine. So where is this random tasty maple coming from? Very boozy, almost brandy like.

M - Gah, the booze on this destroys the relatively nice carbonation mouthfeel for me. Damnit.

O - Really had so much potential, instead I have this random beer. Gah...why? Yet again, Damnit.
