From notes.

A: Dark ale with a small white head which fades quickly.

S: Mainly toasted. Maple syrup aromas. Smoked finish.

T: Burnt malts. Smoky, sweet. Hints of dark fruits.

M: A bit too light bodied. Alcohol is also perceptible.

O: Not as complex as one could have expected due to the huge presence of smokiness. Would have fit better with a heavier body. Quite a good winter warmer however.

Thanks to someone for sharing this at the Flying Saucer Beer Tasting. I think it was shared by thirdeye11 or GregSVT.

The beer pours a reddish color with a tan head. The aroma is very strong. I get a lot of ashy smoke, with a little bit of chocolate mixed in. The two surprisingly go together very well.

The flavor is similar but a little more complex. I get a lot of the meaty, ashy smoke, but the chocolate is more pronounced than in the aroma. There is also a nice roasted malt backbone and some woody notes. I don't get much if any maple syrup notes in the flavor or aroma. The alcohol is well hidden for a 9 percent beer.

Medium to thick mouthfeel and medium carbonation.

Pours a very dark brown with a small brown head. Nose is pretty smoky and a bit of dark fruit.

Taste is smokey as well, there is a off flavor, maybe grape it bacon something I can't quite put my finger on but it's not great.
Mouthfeel is pretty smooth and overall its decent but not quite there.

Dark brown and grey with a thin brown head. Spotted lacing down the glass.

Interesting and complex aroma; the aroma consists mainly of wood and smoke. I kept saying this smelled like "roots," though I still can't exactly articulate what I meant by that. I don't get much, if any, maple syrup aroma.

The smoke dominates this beer and hides most of anything else. The earthy wood (aka roots) flavor is certainly present with just a very mild sweetness, though I was expecting the maple syrup to play a far larger role in this beer's makeup.

Medium to thick mouthfeel, very nice.

An interesting idea but not quite successful enough in the bottle. I'm not oft to say this, but I actually wish this beer was sweeter. The smoke is far too dominant, at least for my tastes, though I'm still left with an interesting beer I'm most definitely enjoying.

A: Dark brown/red tint; thin head with good retention and lacing

S: Sweet fruits, maple, booze, and caramel up front with lots of smoke coming behind the sweet boozy aromas; then comes a spicy, bready malt backbone

T: So complex: spicy, maple sweetness combined with a smoke, dark fruits, and roasted malts; of course there is also a boozy quality but it works so well with the aforementioned flavors; this tastes damn good

F: Creamy, medium bodied; a bit thin on the back end but pleasant enough

O: Such an interesting, complex beer; boozy but drinkable; sweet and malty yet smoky and meaty; good stuff

Poured into my Bruery Snifter. Pours a super dark black. Nice thick tan head. Good lacing.

Aroma isn't too crazy. I smell roasted grains. A bit of smoke. Bit of caramel and a bit of maple but I don't know if I would smell it if I didn't know it was there.

Taste is nice. Nice roastyness but has a nice smoothness with a bit of maple and a slight bit of smoke. But there is a bit of a metallic taste in the finish. It's not very pleasant.

Mouthfeel is smooth with a nice carb.

Overall it is a good beer. Not as good as some peeps below me have said IMO but good. Don't know if it was worth the $20 a bottle I spent. Good thing I only bought one.

750 mL bottle poured into my Lawson's pint glass. Nice.

Appearance - Dark brown body with an ample tan head. Great retention and great lacing.

Smell - A lot of maple on the nose. A little smokey and very malty. Lots of dark caramel notes.

Taste - Significantly more smoke on the palate than the nose. Sweet caramel malts, but not too sweet. Lots of maple, too. Finishes with just a hint of hop bitterness and a slight astringency.

Mouthfeel - Not a lot of booze for 9.5%. Low carbonation and very smooth. Creamy desserty, but not tough to drink.

Overall - I'm surprised the reviews aren't high for this. The flavors are quite nice. It's not rare and barrel aged, I guess. Still, a tasty concoction.

Served from bottle into a RJ Rockers shaker. Poured a massively dark ruby red brown with a half finger khaki colored head that subsided to a minimal amount quickly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, maple syrup, wood, burnt malt, dark chocolate, and alcohol. The flavor was of maple syrup, roasted malt, burnt malt, alcohol, wood, and wheat. It had a medium feel on the palate with medium carbonation. Overall this was a decent brew. However, there was quite a bit going on which was kind of overpowering on the palate. The aroma and flavor on this one definitely followed each other very closely on this one, but it just seemed like any sort of sweetness on the flavor was missing to help balance out the bitterness of burnt malt. The maple syrup made itself known, but wasn’t very strong unfortunately. Worth trying if you haven’t had it before and like the style.

Cellared for a few years, poured into my Delirium tulip.

Appeared a dark brown color with a purple grape colored tinge to the relatively small head that was produced.

Smelled of dark fruits, a bit of tobacco, and slight maple syrup.

Taste is quite delicious - decently roasty with a nice sweet maple finish - reminds me of maple candy a bit on the finish. Alcohol taste is definitely present.

Mouthfeel could have had a bit more body but otherwise it was decent.

Overall pretty solid and paired well with my meal of bbq ribs. I enjoyed this one more than I expected I would. A nice treat.

Thanks to Mike and Jen for sharing this bottle. Acer Quercus, the genera for maple and oak. Maplewood smoking, oak cubes, and maple syrup? And rye to boot? Sounds exciting.

A: The beer is dark, a cola brown with a little more depth. The ale supports a darker tan colored head that quickly turns into a wispy pool.

S: The nose leads off with the smoked maplewood, a meaty thick aroma if ever there was one. While strong, the smokiness has a sweetness to it and transitions nicely to the vanilla oak cubes and maple syrup. Booze is present but not a distraction. Finally, dark sugars, more maple, lend strength and depth.

T: Smoke, sweetness, more smoke. A four word definition that doesn't seem to do the ale justice. The maplewood smoke is full, appearing throughout the glass. In between, sweet maple syrup adds thickness and dark sugary sweetness. Spiciness is apparent between the first round of smoke and the maple sweetness, the oak and rye together perhaps? As the ale warms, the smokiness mellows out and the sweetness becomes more apparent.

M: The mouthfeel is sweet and smooth, the smokiness cutting into it with a sharper edge. The complexity and evolving flavors make the ale one to try.

O: A nice ale, the maple focus providing strong flavors.

A - Dark drown with small amount of light brown head. 4

S - Sweet maple syrup, caramel, brown sugar and some oaky/woddy notes. No noticeable bitterness. A very sweet overall nose. 4

T - Big, bold oak/wood flavours are present up front with sweetness in the background that is surprisingly the secondary flavour (based on the nose). There is also a fairly prevalent smoke flavour throughout that becomes even more noticeable as the beer warms up. Some maple comes through, but not as much as I expected. Some dark caramel and brown sugar in the background as well.

M - Medium body. Light carbonation.

The nose is an interesting playground... dark malts with maple syrup notes.. bunches of oak...

Flavor is a bit sweet.. a bit of smokey notes that I didn't catch on the aroma.... some mild molasses... maple syrup, I guess, but it is a more background flavor... a bit spicy note that I am having a problem with... but still the overall brew is pretty sweet and boozy.. the smoke is long and lingering... smoke isn't a deal breaker, but it seems a touch heavy given the overall brew...

Great body...light carbonation.. decent brew, but I do not care for the smoke at all.. the maple flavor also was too heavy after a few pours.

Thanks Sam!! Just not a good brew for me.

Pours black with brown edges and a soapy khaki-colored head that settles to a solid cap, leaving lots of spotty lacing clinging to the glass. Really nice aromas of Beechwood smoke, maple syrup, oak, and dark malt. The smoke character reminds me quite a bit of a Schlenkerla offering, which is swell. Taste is similarly smoky, with more maple, caramel, slightly tannic oak, and sweet malt. Very nicely balanced between the smoke, malt, and maple. Smooth mouthfeel, quite creamy, with a medium-full body and good carbonation. Really enjoyable brew, love it when The Bruery does smoke!

Pours deep brown with a creamy 2 finger tan head leaving good lacing behind.

First thing I notice on the aroma is the maple. A very sweet aroma. I get a touch of oak and other caramel/toffee flavors.

Much more oaky on the flavor. Maple comes through a bit, but not as much as the aroma. Some sweet caramel and some roasted chocolate which wasn't on the nose come through as well. Oak has rounded out a bit, but still a bit of an astringency in the aftertaste.

Medium bodied with medium carbonation.

Ok beer, but the astringency on the back end was a little high. I did like the roasty chocolate combined with oak though. Still worth trying.

A: Dark murky brown colored body with a somewhat fizzy off-white/tan head with tiny bubbles. No lacing and only minor retention around the edges.

S: Lots of smoke, dark malts, sweet maple syrup and a distinct medicinal quality to the overall aroma. A hint of salted bacon towards the back. This is a very odd combination of flavors, and I'm not too sure I really like this.

T: Ugh. Over the top on all fronts. Sweet thick maple syrup, too much smoke and burnt malts. The back end even has a slight twinge on the swallow, almost like a tartness. I don't really enjoy this at all. Alone these flavors sound great but unfortunately there is no balance here. Everything is too in-your-face.

M: Good carbonation that helps keep this from feeling thick and syrupy which it easily could. Lots of bubbles break things up but the sweetness is still much too sticky, perhaps something not even different carbonation levels could remedy.

Huge disappointment here. I have another bottle I'll most likely trade away to someone who wants to try this or appreciates this more. I am a fan of smoke-forward beers and maple, but knowing The Bruery I should have expected this sweetness level. Too much I'm afraid.

Look: Deep brown in color with 1/8 inch head and no retention spotty lacing as the beer goes down

Smell: Hints of molasses and maple syrup. Lit bit of booze and caramel and vanilla

Taste: Burnt malt right up front. Traces of maple syrup and molasses in the middle. Dark fruit especially raisin and dates on the finish and just the slightest bit of smoke as the beer warms up

Mouthfeel: Medium to full body with a lot more carbonation than I expected. Buttery silkyness as it goes down

Overall: This is probably my favorite Bruery beer to date. Real nice flavors and real nice feel to it. The beer is amazing smooth with crisp clean flavors and very easy to drink

This is my last bottle of this beer and m first review of it. Delicious still but some of the body has fallen off from earlier tastes. Little less smokey, but the maple is much more pronounced. Mouthfeel is thin but not bad.

Bottle picked up in VT over the summer poured into my Bruery tulip.

A - dark brown, hints of maroon with a nice cream head that didn't last. beautiful lacing

S - strange at first. lots of maple and rye spice. Very earthy and a weird yeasty aroma that is somewhat offputting. This fades as it warms, along with the maple and the smoke shows up.

T - strange spice and sweetness with a weird funk in the finish. Not sure if this is the oak chips or what. this starts to fade and a really nice sweet smokiness starts to shine.

M - Pretty sharp carb, medium bodied. Could definitely taste the heat.

O - no particular flaw, but overall just a weird beer. It was a struggle through the first 4 oz., but then it got much better as it warmed. The beer is incredibly complex, though I wouldn't go out of my way to try again.

A-This gem of a brew poursvery deep brown with amber hues around the edge of the glass. the head is creamy and sticky, very apealing looking brew.

S- This is amazing! Smells of maple syrup mixed with dates. The spiciness of the rye is done perfectly in this syle bending brew. there is also a good wallop of smokiness that really sets this beer apart from anything i've ever had before.

T- Taste is more of the same, though a bit more of the rye peeks through and the the finish is a bit of sweetness and again, a good dose of smokey malt.

M- Mouthfeel is medium with a great creaminess. Gotta assume there is some oatmeal in this, really smooth.

O- Overall, this is classified as a rye beer, butIm happy to say that I think this is one of those beers that is hard to classify, and that 's a good thing here. This Beer is nothing short of amazing. Sean Lawson is a magician! Just wish I could enjoy this on a regular basis. From what I hear it was/is only available at The Bruery and the Warren store.

A- Dark brown ale pours with a light tan head. Creamy texture, nice size and good head retention. Cool rings of thick light tan lace all down the glass.

S- Like a Brown Ale with dark fruit. Dark brown sugar, slight roast, sweets, dark raisins, nuts, maple, oak and cherry.

T- Dark fruit like cherry forward but this beer has a feel of a Brown Ale, Belgian and Rye Beer. Rye malt is strong as well as yeast spice, oak, maple sweetness, raisin, toasty and slightly roast malt.

MF- Creamy silky thick body that also feels a bit oily. Carbonation is moderate and it finishes somewhat bitter and warm from alcohol.

Very interesting beer with a feel of a Brown Ale, Belgian dark fruit and a Rye Beer feel. Maple and oak add a nice presence and it balances out nicely.

A-Pours dark brown/almost black with nearly an inch of thick, khaki colored head. Reduces to sheets of thick lacing that coat the glass.

S-Rauchbier-esque smokiness. Wood. Lots of smoky wood. A suggestion of sweetness, though I have to say I wouldn't necessarily identify it as maple syrup had I not known it was an ingredient.

T/M-This is interesting stuff. Lots of wood smoke and maple syrup, as promised. I couldn't have anticipated the way the maple syrup is presented in this. You get a sense of it in the body first and foremost, in a way you could only understand if you love maple syrup. If you've actually drank maple syrup and felt it drip down your throat. What a great combination of flavors! It's simplistic, but successful. The earthy, woody sweetness of high quality maple syrup combined with smoked wood. What's not to like? The body is rich and full, with just enough carbonation to keep you interested.

O-I've got to get more of this.

02.09.2012 update: this one has gotten quite a bit better. The smoke and tobacco have really fallen off and now the maple shines through along with a bit of smoke in the background. Nice balance and complexity with a full body.

Pours a dark chestnut brown with a good off-white to tan head with a few spots of lacing on the way down and a thin collar throughout. The nose carries some tobacco initially and is eventually followed up with some oak, light maple, and a bit of smoked malt. Flavor picks up a lot of the smoke along with some maple in the background and has a general earthy feeling. Medium body with a dry, smokey finish. Good carbonation. Worth a try, but not as good as I was expecting.

Acer Quercus, Rye Beer 9% ABV

A: This is a deep mahogany brown with light brown notes at the edges. The head is fluffy with small bubbles and minimal lacing.

S: There are intense smoky notes almost akin to a rauch bier. There is a whole bbq of oak and smoldering charcoal notes. There’s not any real rye notes and absolutely no maple syrup scents.

T: The taste is a little smoky but they hid all of the deep maple notes for the taste. It tastes almost like a burnt Belgian tripel. The body is rich but ultimately disappointing.

M: The mouthfeel is thick and frothy with tons of coating. It sounds like it should be amazing but the smoke notes just override and it is not fulfilling. For all the maple hype it just feels a bit off the mark.

D: This is simply too smoky, too sticky, and too much to enjoy in large quantities. I had a hard time splitting a bomber, much less finishing one on my own. I will not be a repeat customer. It’s not that the experience was exceptionally bad, it is just fundamentally deficient, it feels like a Kia dealership.

Narrative: No one asked Xavier Weber to prom. He spent most mornings smoke grilling baby back spare ribs or cold glazing honey combs for his apiary projects. High school wasn’t his forte. He usually showed up in coveralls and covered in sticky brisket char. “Mr. Weber, please clean the gristle from your shirt and return to class.” Girls would eye him suspiciously and question his lumbarjackesque demeanor. He was not unknown for felling trees but it didn’t consume the entirety of his being. Secretly he yearned to produce top of the line maple syrup in a bohemian boutique. “MR. WEBER! At least clean the bees off of your coveralls before you enter my GEOMETRY CLASS!” 10th grade was going to be a long year.
