"An unfiltered India Pale Ale brewed in the Cigar City of Tampa, Florida and aged on Spanish Cedar. Pairs well with spicy food and medium to robust cigars." Brewed in the style of an India Pale Ale aged on cedar spirals. Available as a year round in 12 oz. cans and on draft.
Poured from a 12 oz. bottle to a tulip glass. Served above 57º Fahrenheit.
(Appearance) Pours a banana cream white head of a creamy frothed consistency over a deep melon orange body. Carbonation is moderate and lively. Retention is very good, lacing is moderate and caked around the edges of the glass. 4.5
(Smell) Some wood aging is apparent by the nose, as a modest twiggy dryness pairs with more common malt characters of biscuit, light bread and a dash of caramel syrup. Hop notes are mellow, with mild grapefruit, ripe citrus, and fruit notes attempt to match the intensity of the cedar but sadly fall short. At the aroma, there isn't much differentiating this from a non-cedar-aged IPA. Potency is modest. 3.5
(Taste) The flavor is far more pronounced over the aroma. Slick sticky bread and grainy malts with a moderate syrupy sweetness are joined by a mellow citrus juice, slightly resinous and peppery hop profile with a moderate bitterness, slightly amplified in its intensity by the mellow spiciness and woodsy character of cedar, generating a dry finish. The Spanish Cedar comes through most in the finish, with a lingering of pale wood. 3.75
(Mouthfeel) Texture is smooth, slick, mildly grainy. Carbonation generates a soft frothiness for a lightly crisp mouthfeel. Body is medium+ for the style, medium+ overall. Balance is slightly bitter over sweet. Alcohol presence is light/medium and off characters are minimal. 3.75
(Overall) A unique one-time visitation for me to see the impact of spanish cedar on an India Pale Ale, although I can't far justify even the occasional return to this beer over superior beers like their Jai Alai, which have better hop presentation and flavor. Despite the addition of cedar, this is about as much a one-and-done experiment for me as it should be for the brewery. Unique and enjoyable, although I expect a wider deviation than usual on this beer. 3.75
