Beer aged on cedar pours a cedar like color. Made a solid light tan head 1/2". I really like the smell of cedar, it was the best thing about Jester King's El Cedro, and its the best thing in the aroma here, but it also has a lemon and grapefruit like sourness to the smells too.
Taste, hey its easy and enjoyable to drink, still pushing the cedar around. Malt body is relatively light and out of the way letting the senses explore when sour meets cedar. Slight passion fruit notes.
I guess there's a couple of ways of looking at this. Let's summarize. Enjoyable to drink: Yes. Affordable: Relatively so, yes. Complex: Prolly not. Unique: yeah man, the cedar really makes the beer. Nice to see Cigar City making something that isn't double digit alcohol, them and Bruery had issues with that for a few years.

Appearance - The beer poured a reddish copper color with a fluffy white head.
Smell - There was a light sour presence, but the cedar is beautiful and put this out of the park.
Taste - Apple and raspberry begin the sour presence. It was not overly acidic but have a certain pucker level. The cedar is quite strong and gives this a unique quality. The taste became dryer toward the back with the cedar carrying.
Mouthfeel - The carbonation was mellow, with the acidity clinging to the mouth.
Overall - why are more beers not aged in cedar? This is awesome.

A strange sweetness coupled with a strong cedar taste.
