markwise was good enough to supply this via trade - many thanks to the dude from Florida. Into a Duvel tulip after a moderate pffft of the cap...
Well, there's a very nice head on this - about a finger and a half. Rustic light honey body with very active carbonation. This looks like a very good new world saison.
I may only catch a light essence of guava but this is an awesome-smelling Saison. A fair amount of funk tops off the huge yeast electricity here. With warmth the guava quickly emerges. Carbonation gives the whole package a spritely lift.
Just really a solid Saison, complete with all the sweaty funk of a prototypical yeast strain for this style. It's easy to pick up the pulpiness of the guava in here, too. Slight hop pine, lots of salty carbonation. Pretty complex. There's a distinct clean sour note in there as well.
Saisons are interesting to open cold and let relax for a while, because the change from front to back shows such a wide swing...yet if they're done right, the beer is enjoyable in a different way at each temperature level. Even after only a few minutes, this begins to expand the level of sweaty funk...all the while utilizing the tartness and mealiness of the guava to brighten it up. Minimal hop profile here, so it's very clean. Almost a couple of Berliner Weisse tendencies are on deep background, but the electricity and spriteliness of the yeast strain keep this on style.
This one's pretty damn contemplative. Opened it very cold, but it's getting its legs quickly. Guava or no guava, this is a solid new world Saison (not exceptionally hopped, but hops do emerge after a bit of warmth). Just a little brighter, deeper and spritelier than the average bear. I am savoring the living hell out of this.

Trader tells me this is an 09 bottle "back when it used to be good."
A- Hazy honey, with 1/4 finger white cloud head. Very low retention.
S- Best category here. Smells of some passionfruit, not sure if I can pinpoint it to guava considering I live in Colorado. The "malt" beverage follows... ugh. Not a fan of malt beverage.
T- That being said; the passionfruit was the best thing to add to this malt beverage base. I couldn't imagine not drainpour w/o guava. It has the traditional malt beverage taste.
M- A bit much carb for me; kinda harsh. Kinda creamy, kinda smooth. Nothing exceptional.
O- If I had another, I would find someone who likes the style and give it to them.
