Notes/Commercial Description:
Our flagship beer in the Humidor Series is Humidor Series India Pale Ale. We start with Jai Alai IPA as a base beer and add the cedar during secondary fermentation. The cedar provides a perfect balance with the assertive hops of Jai Alai to create an entirely new experience.

750ml bottle poured into DFH signature glass. I think this was released July 2011, but I can't tell from the bottle print (missing a little)

A: Pours a very clear orange color. Fluffy bright white big bubbled head. Good carbonation. Some sticky lacing.

S: Definitely get some cedar, and some fruity notes, and some breadiness. Smells really nice actually. Lots of fruit.

T: Ok, thought it was UNFRESH but it's actually fine. You don't get the hop bitterness on the tip of the tongue I was expecting. You get a little mild one. Then the malt bill and cedar hit you. Really nice woodiness. And the close is crisp and somewhat clean.

M: Medium bodied

O: B+ to A- because I wonder what freshness would do for this or if better with age and the wood.

Poured hazy copper color with a large frothy off-white head that mostly lasted with excellentl lacing. Moderate to heavy sour citrus hop and woody aroma. Medium body with slick texture and flat carbonation. Medium to heavy cedar oil and bittersweet hop flavor with a medium to heavy bittersweet finish of moderate to long duration. This is a change of pace standout beer.
