I picked this up in a growler on the second Hunahpu release day. Poured with a very thin head that broke up almost immediately. Beer is very dark, with a reddish tinge. The aroma is fruity, smelling of plums and a hint of banana. The taste is earthy, with notes of plum and raisins. It's mildly carbonated and almost comes across as a fizzy slightly sour wine. There is a mild chemical aftertaste that is less noticable after the first third of the glass, but is otherwise very good.

Huge thanks to ygtbsm94 for sharing this one at a DC area tasting. Served in a SAVOR snifter.

Pout yields a moderately-dark brew with a thin head that persists for a bit before fading into a thin collar. The nose brings a good dose of lactic sourness with just a touch of acetic character. There is a healthy dose of red wine to go along with the malt character. Nice sourness and a bit of light complexity and funk. Flavor hits hard with a good sourness and a really great wine presence with just a touch of oak and barrel character. Mouthfeel is really nice and tart; it's fairly light and incredibly refreshing and easy to drink. Strong character all around. Another fantastic brew from the CCB crew.

On-tap at the Hunaphu release. I am pretty sure this is what CCB listed on their website as the Oak Aged Sea Bass as I didn't see any other variants at the release. One of the first beers of the day, set a great tone early... Poured a bright golden dark brown with red highlights, reminded me an flanders red. A light off white head formed a thin cap, ok lacing... The aroma on this this is outstanding, however it shows right off the bat; don't even think of this as a saison, its a flanders, all saison notes are gone. Funky sour notes to start with, lots of great oak notes and tons of red wine. A sour red wine.... The taste is on par with the nose, a funky red wine, oak, and brett add depth. One complaint is slightly false chemical note about three quarters of the way through.

This is great, a must try if you get the chance.

On-tap at 2nd Hunahpu's Release.

A - Pours reddish/golden color, off-white/slightly pink head, some spotty lacing and a thin filmy cap on top.

S - Sour/tart notes, red wine blend is apparent, oak barrel notes. The original saison is nowhere to be found, really, which, I don't mind one bit. The Opus One barrels really worked wonders for this creation.

T - Similar to the nose. A nice funky/sour goodness, red wine notes, oak barrels. There is some brett notes from the original beer here that I didn't get on the nose. A good mix of everything that makes this one funky, sour, and tart.

M - Light, goof carbonation, dry finish.

D - I tried this on a whim and was very surprised but how much I enjoyed it. I went back and had it 2 more times. One of the highlights for me from the day. Recommend!

32oz Growler poured into a Bells Tulip.

A - Muddy brown color with a thin, almost pink head. Lots of carbonation for a week old grolwer, so I'm pretty excited about that. Decent lacing through the drink.

S - Quite surprising. Sour cherries, vinegar and wine, lots of wine. Also getting the oak barrel and some other fruits I can't put my finger on.

T - Ok, so this tastes nothing like the base beer. Tart cherries and red wine dominate. Defiantly some Lacto in there giving this an awesome sour flavor. Some Brett characteristics too. Has a vinegary finish with some funk.

M - Nice full body, decent carb for the growler. Sourness was a great change from the Stouts we had before this.

O - Super excited to have been able to have this beer. Had all three of these little growlers in one night, and had no expectations for this one. Ended up being my favorite.

Massive thanks goes out to cmrillo who shared this one with the group at the "Evening Wood" tasting graciously hosted by cmrillo as well! Served from growler into a Mikkeller flute. Poured a deep ruby red brown with a very minimal off-white head. There was no lacing evident throughout the glass. The aroma was comprised of sweet malt, wood, sour, and tart. The flavor was of sweet malt, caramel, wood, slight sour, and slight spices. It had a medium feel on the palate with low carbonation. Overall this was a pretty good brew. Got lucky enough to try this one back-to-back with the Oak Aged version. I really liked this one better as the slight sour note I picked up on made it QUITE enjoyable and blended with the rest of the brew. As before the saison spices had mellowed out quite a bit but were still there. Really glad I got the opportunity to try this one and I suggest you try to do the same.

My buddy was able to attend the Cigar City event and picked me up some small growlers of their special releases. Quite excited to give them a try.

This beer is a dark shoe leather brown color with a slightly dull and almost hazy finish. Really too dark to judge clarity effectively, but you can see a slight haze... A light tan head does form and fairly quickly vanishes. There is a small amount of lacing that remains.

The aroma has vinegar notes, hints sour, some oak and a hint of cherry.

Wow, really a nice beer. You need three or four sips to understand what's happening as it's pretty complex. Certainly the first sip is tart and really denotes a lot of vinous components. Several sips in the oak comes out, the wine notes tone down but are clearly present. Then my favorite flavor component in this type of beer emerges. The wonderful roasted nut flavor. Very nice. A slight cherry flavor in the background that combines with a fairly assertive bitterness towards the end. The lingering after taste if of the roasted nuts.

Just a twinkle of carbonation, medium bodied.

I actually enjoyed this quite a bit. Well done guys.... Very glad I had the opportunity to try this.

reviewed from notes i was lucky enough to get this one right after the release, but it had leaked so i was sent a replacement, drank the first one and it turned out well, so the review is based off a large sample over a period of time.

nice dark pour with hints of red along the sides of a mostly dark brown ale. nice tight head on top seemed to stay around for what seemed like forever before finally settling down.

first notes of yeast and oak travel through the senses and mix with a light vinous tone. A really nice blend of light spices, roasted malts and almost a Smokey note start to permeate the air as it warms up and starts to come around full circle. Light notes of chocolate even find their way into the mix along with earthy malt notes and touches of figs. Sweet barrel notes here, but not dominant at all.This carries over very well into the flavor as the first sips just spill dark fruits and spiced rum notes all along the palate and a rich roasted malt note really starts to let itself be known. Really nicely done and a great blend of flavors. Especially as it starts to warm and fully opens up. Small hints of dark spices finish off the flavor as it rolls off the tongue and a nice and smooth, clean finish is the result.

Thanks to Jason or Sean for bringing this back from Florida.

A - Brown colored beer that looks a little red or pinkish on the head, maybe it's just my imagination as they use "wine" in the title. Moderate lacing.

S - Some sour and funk notes, don't get tons of the base beer on this. A lot of red wine, barrel, vinegar, and acetic qualities.

T - No real hint of the 8.5%, it's very well hidden and makes this a bit dangerous. The red wine in this is no joke, as it is very strong in the taste. Good oak presence and a decent amount of funk. I guess I didn't remember that Sea Bass was a saison, because this doesn't taste like one.

M - A bit dry, with medium body and moderate carbonation.

O - Really interesting beer that is pretty good. Some people are going to really like this one.

a - Pours a deep mahogany brown color with an inch of so of off white head and light carbonation evident.

s - Smells of vinegar, oak, red wine, tart dark fruits, spices, and yeast. Very acedic and sour thanks to the wine and fruit; very nice.

t - Tastes wine, oak, tart dark fruits, and vinegar. Not a lot of spice like the nose; a small step down.

m - Medium body and low to moderate carbonation.

o - Overall I enjoyed this one much better than the normal version of Sea Bass. Very sour and the wine barrels definitely improved this one. Would like to have again.

Growler shared by Sean. Served in a HopCat tulip.

A - Pours with a finger of off-white foam that settles to a thin ring, leaving spotty lace. Reddish-brown body with some translucency to it.

S - Oaky vanilla, red wine vinegar, sharp acetobacter, and some light malt sweetness as well. Reminds me of a Flanders Red (much more than the Portsmouth Flanders Red did, anyway).

T - The taste is much sweeter than I expected, with plenty of vanilla and maraschino cherry sweetness. It finishes with heavy oak and red wine, and there is an unfortunate, strange, herbal bitterness that seems to linger (and made me keep sipping the beer to avoid it).

M - Lower carbonation, medium body, some dry oaky tannis, and a sticky mouth-coating finish. No obvious alcohol is present.

D - This was quite enjoyable, and a step up from the base beer (which I also enjoyed, unlike many others). I had a second pour of this one. Hopefully Cigar City makes all Sea Bass in red wine barrels from now on.

Draft at Hunahpu's Day 2011.

Pours a dark chocolate brown color with faint honey brown edges when held to a light but otherwise completely opaque with a frothy one finger off-white head. Great retention, only slowly fading into a lasting cap that leaves sporadic spots of lacing behind.

Tart funky aroma with a very strong barrel presence. Slight earthy oak but very vinous with lots of red wine character in the nose. Plenty of grape, cherry and other dark berries along with charred oak and funky dry brett. Slightly one dimensional in the nose but there are some noticeable wild bugs.

Full bodied with slight lactic creaminess up front that adds complexity and fullness to the palate. Nice and tart/puckering with subtle funk and a nice dry brett presence that lingers throughout. This is complimented nicely by the prominent barrel character with lots of sweet vinous red wine flavor. Hints of dark grape, cherry, plum and other dark berries/fruits. I'm not sure what barrels they are using for these red wine barrel aged beers but they add amazing flavor. Nice puckering tart flavor with brett and other bugs but it's more sweet than anything else. I haven't tried the base beer but I really enjoyed this version.

Picked up this growler on the Hunahpu release day and enjoyed its contents 3-20-11

A- Dark brown body with a nice red hue to the edges and a small but sustained tan head

S- Nice sea bass with red wine poking through as expected! Sour yeasts and funk with red wine carring the whole time

T- Sweet/tart malts start as normal sea bass, the only difference I get is from the dry vinous finish and some extra sweetness in the body

M- Medium/full-bodied, moderate carbonation and dry finish

O- A fun sea bass variant but not something I'd do often with all this sweetness.
