definitely an older bottle, and i know this was supposed to be a hop driven saison, but it still tastes great, is definitely still hop forward, and even though it was probably amazing fresh, its still doing just fine. not sure why i always seem to encounter trois dames beer past its prime, but that just is the case, perhaps it hasnt resonated with american beer drinkers like others have, maybe its so price prohibitive that they just sit around, i dont know. this is clear for the first glass, looks like a pils, sparkling and vibrant, pale pale golden with high shine and a ton of carbonation building up a tall white head, gorgeous. the aroma, right from the moment we pop the cap, is green bottle funk even though this is in brown glass, like skunky weed and fading hops, its powerful. there is some citrus with whats left of the hops too, a curious greenness considering its age, and some neat non wild funk to the yeast, now real mature and interesting, very french to me at this point. the flavor is killer too, definitely some hop bitterness running most of the way through this, and that element ramps up as it warms. there are some cool nuances here, orange peel, earthy wheat, white wine, green plant matter, minerals, and some light tang. really neat fermentation profile on this, and thats what i loved about it. the beer was better in the beginning than the end, it gets hazy and dense and even more bitter at the bottom of the bottle, but even if you still have an old one of these laying around, it has value and is still quite good. a fun nightcap last night! i have always loved trois dames beer!

edit: this isnt getting any better in the cellar, even more hop fade than last time now, and some oxidation setting in. its still obviously high quality beer, but it makes me thirsty for this in its full glory. i hope to one day encounter it fresh...

On-tap 11/8/2016 at Julian’s in Providence, RI, served in a US tumbler pint glass.

A: The beer is a light gold color, with a large white head that fades slowly and leaves a thick lace on the glass.

S: The aroma is faint but contains esters, light caramelized malts, some floral hops and some citrus.

T: The taste starts out bready with flavors of wheat, a light malt character and some Belgian yeast. Then some mild tartness comes in from citrus and esters. The hops presence is good for the style and brings a good balance. The after-taste is slightly bready and slightly tart.

M: Crisp and smooth, light-to-medium body, medium carbonation, finish is clean.

O: Tasty with good complexity, goes down easily, not too filling, decent kick, good representation of style, this is a solid beer to drink for a long time.

This beer pours a very large white head. Typical saison color. Mouth feel is heavier than I thought but still nice for a saison. Smell has some fruity smells with a bit of barn yard. The taste was a bit sour but it went down very. smoothly. Taste also had hints of peach.

Pours a cloudy gold color with a bit of a green hue. Good bar pour head that settles in a lumpy fashion.

Sour berry and flowers is my first impression on the smell.

Semi-sweet beginning, as if there was some berry juice added. Decent hop in the swallow and aftertaste, where a touch of the alcohol shows up. Sour finish. Tends to the thin side body wise, but the carbonation is appropriate.

750ml bottle served in a Karmeliet tulip glass.

A: Pours a dark orange to amber color. Cloudy. Forms a medium white bubbled and aired white head. Small retention and very few lacings left

S: Very hoppy flowery in the nose. Sweet malts and yeasts. A bit spicy

T: Follows the nose. Slightly sweet upfront followed by a citrus, piny, flowery hoppy taste. Quite bitter in the mouth. Sweet malts and yeasts

M: Medium body and carbonation. Slightly spicy and hoppy bitter aftertaste

O: Very drinkable. Delicious beer. Trois Dames quality

750ml bottle poured into tulip 2/8/12

A hazy dark orange with just a short lived cream colored film after a hard pour that's gone in a flash and leaves no lace, pretty basic

S cereal, spice with some citric hops and toffee, smells decent but not mind blowing

T some marmalade and a little sour apple, reminds me of their DIPA with some faded hops and sour fruit

M not as flat as the DIPA but could use some more life for sure, fairly thick and a spicy finish, fairly slick and the booze is well hidden

O pretty basic and nothing worth writing home about, nice spicy notes is the only thing this one really has going for it

average beer for much more then average price? one and done

750ml bottle. A hopped-up saison, eh? Bring in on, mes amis Suisses!

This beer pours a cloudy, dark golden orange hue, with one finger of densely foamy ecru head, which leaves some nice painted mountain range lace around the glass as it evenly abates.

It smells of subtly bitter grassy hops, edgy wheat grain that is slightly bready in its bearing, orange rind, prickly yeast, and leafy, earthy, and weedy hops. The taste is semi-sweet, grainy wheat malt, a bit of fruity citrus, a very mild sourish tint, tired earthy yeast, and some still in the game perky leafy hops.

The carbonation is sprightly at first, but does me the service of leveling off nicely, the body renders quite well as a middleweight, with an attendant spotty smoothness. It finishes well off-dry, the wheaty malt not shy in its sweetness, but nor are the other lingering players in their citrusy, yeasty, and earthy leanings.

An adequate saison, given that its raison d'etre is to be a hopped-up version, at which it mostly succeeds. As such, I'm getting a capable Low Countries vibe, mixed with a nicely hopped Yankee pale ale - a combination whose offspring promises much, and delivers mostly. Another worthy blending of Old World tradition, and New World sass. Sante!

2011 edition, 750 ml bottle from the brewery. Purchased it with 50% discount (7 CHF or 7.5 USD), because, as the brewer explained, it had been too much carbonated. It seems that it is sold for normal price in other locations, though.

It is overcarbonated indeed and some 15% of the bottle goes into sink. Pours hazy orange with huge white and foamy head with good retention. Aroma is floral and citrus hops, yeast.

Taste is fruity hops, sweetish malts and spicy yeast, hints of sourness. Very, very dry and slightly bitter finish. And of course, loads of carbonation.

I am not sure if this is an overcarbonated beer or just has an infection. If the latter is true, it has not turned out too bad yet, although the beer is not very tasty either, it certainly would not be worth the full price. Watch out when opening it.

Grapefuit cloudy with lots of bubbles. Carbonation is natural. The taste is medium, it is a little complex, but also quite lactic. You get used to the lactose or not. A tad sour, this is not for everyone. There is a mild spice there.Bierophilie buying club.Bit funky aroma.
