In order to fit barrel work into our facility, we've begun working with smaller barrels from Corsair Distillery. For this beer, we make use of Corsair’s unique gin barrels. Typically barrels aren't used to make gin, but they create a specific gin that is aged in their used spiced rum barrels. We have selected these barrels to finish Pony Pilsner. The result is a beer that maintains its clean pilsner base, but stacks on refreshing flavors of botanicals, spice, and oak.

Enjoyed at EBF 2014.

Color of the body is a very light ginger ale but very sparkling. The gin mixed in with the grainy pilsner base is really interesting, makes for a refreshing pilsner with a bit of an edge to it. I enjoyed this and i like brewers that think outside of the box when barrel aging.

Golden color with a touch of haze. Nearly no head. No lace.

Soft and sweet pale malt aroma. Gentle but very present. Light floral hop far back in the background.

Flavor mimics the smell except that I detect a touch of juniper berry in the swallow. This blends nicely with noble hop. This is subtle but extraordinarily complex beer. Rich body with generous carbonation. Easy to drink despite the high ABV (10%, according to the menu).

On tap at Half Acre Tap Room in Chicago, IL. 8oz served in a Half Acre stemmed glass 10/19/2014.

A- Especially cloudy, yellow-straw body with a half finger white head that disappears fairly quickly. No lacing. [3.5]

S- Juniper, classic gin, lots of distinct pilsner malt, a bit of noble hops, not a whole lot else. Did not predict much in terms of complexity, but it does deliver what you'd imagine from the description. [3.5]

F- Juniper, gin, oak, pilsner malt, spices. Not particularly bitter, but definitely interesting. At the same time, it doesn't really do a lot for me. I find its flavours to be very strong and clashing a bit. I think the gin takes over a bit too much here. Still, the gin aspect is done well enough that it makes it an interesting beer to sip on. M- Thinner bodied, nicely carbonated but with a bone-dry, gin-forward finish. It's not something I can consume 8oz of in one sitting, that's for sure. Interesting to taste, but it didn't do it for me. [3]

O- Worth a taste, not sure I'd want to drink more of this than I already have. I can tell they have put some thought into barrel-aging this beer, but it just doesn't really work here, at least not for me. [3]
