The beer is black with an inch of beige cap. The aroma brings big dark roast, chocolate, light spice, a touch of hops. The flavor offers a big roasted malt and chocolate bill with hints of coffee and smoke. Rye character emerges mid to late palate and really adds a nice touch. Medium to full bodied and smooth. A delicious beer. I'd have this again.

Baume chugs from the bottle the color of coffee and creates a cascade effect as it settles. Filling the glass it's chalkboard black with no hope of a peek through the body. The beige head instantly becomes silky and grows to a finger in height and never settles. Velvet foam coats the glass until the last gulp. This is a really great looking beer.
The nose is rich and full of depth. Coffee is first to leap from the glass and is quickly met with unsweetened chocolate shavings. A handful of overripe, macerated dark berries show up in the middle. An undercurrent of spicy rye compliments the chocolate and coffee. A good dose of hops wrap it up with solid pine and faint citrus.
Spicy rye, again, has it's fingerprints all over this beer but what's really unique is the abrupt pine character. Coffee with a pinch of sugar hits the tongue first then segues into unsweetened chocolate and a moderate roast. The final third is big, commanding pine notes, a touch of grapefruit, and roasty grains. Like I mentioned earlier, Baum is a very unique offering.
There's a moderate weight to the body with carbonation active enough to make for a quick moving beer. With all that said, and me nitpicking, I would prefer either a little heavier body or softer carbonation. The roast lingers as does a hop bitterness growing to moderate in intensity.
Baume has always been a highly enjoyable beer in my eyes and one I pick up multiple times each year. There's great depth, especially with the spicy rye, and a bold hopping. Good looks, great flavors, and high drinkability wraps up this 7% stout. Here's to Half Acre!
