Poured from a bomber into a tulip glass.
A: Slightly hazy, medium amber color with a peripheral ring of off-white bubbles. Scant lacing remains on the glass.
S: Caramel and toffee is prominently featured, decadently sugary, with ripe mid-range fruit also suggested, but well integrated.
T: Begins almost dry, with early malt that is bready, caramelized, and slightly cheesy. Strong carbonic acidity emerges into the middle where only a whiff of clean caramel malt remains. Fruit is minimal, even at its height, while bitterness comes on a bit early and aggressively. Malt persists all the way to the end, but finishes thin and one-dimensional.
M: Thin to medium viscosity, acidic and slightly oily on the palate, with moderate carbonation.
D/O: This amber lager is recognizable as a doppelbock in aroma only. Other qualities are consistently unremarkable, ultimately judged here as average because they do not provide special offense to the senses. Rarely does one encounter a beer with so little agreement between suggested sweetness in the nose, and actual flavor.

Clear dark amber colored beer with a small tan colored head. Calling this amber might be a stretch, it is really closer to reddish brown.
Smell is strongly malty, smells like malt syrup with a bit of molasses in it. Not hop scent to speak of. Roasted grain and a slight chocolate scent.
Starts out malty with lots of roasted grain flavor. Moderate bitterness in the finish. A little bit nutty but really this is just a bock beer.
Mouthfeel is good.
Overall this is a good Bock. Not outstanding here but no faults either.

Bomber poured into a wine glass, showing a deep reddish brown in color with half an inch of off white foam. Bit of haze in the light and more orange than red. Retention is a bit brief.
Traditional nose of sweet caramel and some brown sugar. Light head retention gives the beer a sweet wine character with notable alcohol esters. There is more malt depth and some woody hop notes when agitated, but they don't linger, yet expanding a bit with warming.
Taste, like the aroma, is somewhat light for the style and showing only moderate depth. Lightly viscous caramel notes and a faint background hint of fig. Caramel notes linger well for such a light presence however. Overall rather subtle but pleasant.
Feel is lightly viscous and moderate, matching the general constructs of the beer. A bit thin a times but I see that as more of a carbonation issue than anything else. Overall a tasty beer, somewhat subtle at times, yet pretty solid. A little more gas would show it all a bit better I think..

Bottle to Pils
Thanks Doug for this one!!
App- A very blended mix of fresh browns, golds. Reminded me of fresh cooled caramel. A nice two finger head but no cling.
Smell- Very soft malts, lite purple fruits and a very mild. No real punchy flavors.
Taste- It's a small dopplebock, very tame, very reserved. The flavors are well crafted but need a little more oomph.
Mouth- Medium bodied and medium carbed. A little damp raisin flavor.
Drink- Einhorn did me a solid for the free bottle. This was a nice intro dopplebock for someone who needs one. Well crafted, layered and flavorful, just needed more oomph.

American breweries producing traditional German-style beers are few and far between, especially west of Texas. As such, it's my selfish hope that Einhorn becomes a raging enough success to eventually find distribution all the way over here on the East Coast. Even if that's not in the cards, folks out west need to be exposed to their stuff; unbeknownst to many in California, Oregon, and Colorado, not all beers are (or should be) hop bombs!
Anyway, on to Unikator. I brought this unique brew to a tasting, where several other local Beer Advocates shared it with me and compared notes. These are our collective findings.
Appearance: A confident pour produces a deeply copper-hued, mostly translucent body with a fleeting, one-finger amber/mahogany head. It is immediately apparent that Unikator is doppelbock in the tradition of Paulaner Salvator and Samichlaus, not the dark, roasty likes of Weihenstephaner Korbinian and Ayinger Celebrator. (Side note: much like weizenbocks, it's my view that doppelbocks could easily be divided into two substyles -- golden/sweet and opaque brown/roasty.) Held up to the light, Unikator looks awfully nice.
Smell: This is a beer whose rather mild nose belies its flavor, at least to some extent. Very light, biscuity maltiness is at the forefront, with a faint hint of sweetness. While the smell is certainly appetizing and therefore not a problem by any means, most of us agreed that this was the beer's weakest suit due simply to its subtlety -- the aroma doesn't exactly jump out of the glass, so you've got to put some effort into smelling it.
Taste: Although Unikator essentially looks and smells like a traditional German doppelbock, its taste is quite unique for the style...in a good way. Sure, the expected brown-sugary maltiness is there, along with a glimmer of earthy noble hops and a slight hint of roastiness. But the backbone of this beer is a distinctly "juicy," fruity malt flavor I associate with English barleywines. At first, some tasters were put off by this, as I think we were all expecting the brew to taste like Salvator et al. But after a few sips, it grew on us, and we all ultimately found it quite tasty. As long as you're not surprised by Unikator's prominent juiciness, I think you'll agree.
Mouthfeel: The classic "golden doppelbock" experience. Unikator is relatively thick, viscous, and vaguely honey-like (but not mead-like) in the mouth. As with other doppelbocks, this works out nicely for the flavor profile, as the beer coats the palate and allows its bouquet of flavors to develop gradually and keep unwinding long after each sip. As such, Unikator is definitely a sipper -- not due to high ABV or alcoholic heat but to its slowly unfurling carpet of distinct flavors.
Drinkability: Traditional doppelbocks' ABV can vary widely, with notable examples as low as 6.5% and as high as Samichlaus' massive 14%. Unikator's 7% ABV checks in on the low end of that range, which I think is nice. For my tastes, a bomber of 7% ABV beer can reasonably be enjoyed over the course of an hour or two, while even a ten-ounce serving of something over about 11% can be tough to enjoy before it grows tepid. As such, and given the uniquely refreshing quality afforded by Unikator's unusual juiciness, this is among the more drinkable doppelbocks out there (especially among those served in bombers).
On the whole, I'd certainly recommend Unikator to anyone who enjoys the likes of Paulaner Salvator, Urbock 23, etc. Just don't be caught off-guard by its unusual malt profile -- if you're ready for it, I believe you'll find Unikator to be a traditional-yet-unique doppelbock worthy of enjoyment, especially on a cool spring/fall evening.

Appearance - This poured a lazy brown in color with a modest, off-white head.
Smell - This smells more like a brown than a DB. The malts were sweet but lacked structure and overall punch and the alcohol was too prominent for such a low ABV offering.
Taste - The raw molasses was spot-on but again the malt structure was lacking. I didn't get the sense that I was consuming a glass of quality ingredients. The beer seemed put together well enough but just lacked quality.
Mouthfeel - I thought the bitterness was clumsy and, again, the vodka notes were way off-style.
Drinkability - This is one of my favorite styles but this effort disappointed.

A- deep amber red, surprisingly dark, almost no foam, and a few strains of carbonation
S- roasted coffee, Malt, something sweet and fruity, like grapefruit, tabacco
T- Very malty at the beginning, whole wheat toast, biscuits, then gets sweet, like toasted almonds, or some other nutty flavor, Flavors of wild honey is also there. then a weak but bitter coffee flavor finishes it out. No hops
M- good carbonation, not bad aftertaste, nothing overpowering
D- Its a good beer, i'm not a huge doppelbock kind of guy, but there is some interesting flavors that are going on here. Go good with something spicy or some cheese.

Pours an effervescent copper/brown with a small half finger of head. The aroma is somewhat bland, with a bit of toasted bread and acetone being the only noticeable scents. The flavor also is quite bland. A bit of plastic and bready maltiness, not much more. This wasn't horrible by any means, but there was nothing redeeming about it at all.

beautiful looking beer. pours a nice clear dark copper with red tints - off white almost tan head that dissipated rather quickly. decent lacing. smell was of roasted malts, very slight smokiness, some syrupy caramel sweetness and a faint smell of spice in there.
The taste was a tad metallic up front which was a bit of a turn off. the flavor was a malty sweetness that followed the nose with some hop presence as well. it was crisp and well carbonated with a nice medium body.
decent beer - well worth trying. so far i like what is being done at Einhorn.

Another winner from Einhorn!
From the bottle it pours an orange rust beauty with a thick head and plenty of carbonation. Malt malt malt..with dark bread and maybe cabbage on the nose. Alcohol is there but not at all overbearing. Malty, carmel, pumpernickel with a touch of bitterness, finely balanced by a good dose of hops. The mouthfeel is smooth and inviting.
Overall this is an excellent doppelbock I'd recommend to anyone, anytime of the year. Prost!

Pint at JJ Brewsky's last night for around six dollars, had been wanting to try something from this San Luis Obispo brewery and glad I finally got the chance
A-Medium brown with some golden orange color, one inch foamy off white head that did not last long, although the retention was weak, there was some lacing
S-Brown sugar, ginger, honey, sweetness, caramel, lots of malt with both bread and toffee, hint of booze
T-Starts off with sweet malts and mild fruit, toffee and caramel make up the middle, slightly toasted in the finish but still sweet and a little warm as well, got more malty as time went on
M-Slightly toasted, sweet, and slightly warming mouthfeel, medium bodied, mellow carbonation, taste lingers a little bit
D-Could not drink much more than a glass, stuff is heavy and quite filling, alcohol is not too strong but too much for how low in ABV it is for the style
Interesting dopplebock that was lower in alcohol than most others I have had in the past but still felt heavy and strong, probably would not drink again, still worth trying

I've had this on-tap at Creekside twice now, and I plan on getting it again. Fantastic job with this one Doug!
Served in a wide-mouthed, dimpled mug.
Appearance: Deep crimson body with good clarity - gorgeous. Creamyish, off-white, head sits on top and drags some pretty good lacing. Decent retention. Once again, gorgeous color!
Smell: Sweetened tea, loads of malt, smoke (a little bit like bbq), leafy greens, and a touch of alcohol. I must admit that I stole the "vegetal" idea from the Einhorn website, but it does smell like sweet, crisp, leafy veggies.
Taste: This is one of the best doppelbocks I've had. No joke. I'll have to try Celebrator, Salvator, and the likes again; I think this one could definitely hang! Lots of leafy hops in this one, smoke, wet veggies, and some great sweet and roasty notes. Similar to the smell with some added bitterness. A good amount of malt, but a pretty strong hop character for the style, which I really appreciate. Excellent job Doug!
Mouthfeel: Good carbonation provides gentle stimulation throughout the mouth. Medium bodied with a clean, dry finish. Nicely balanced as well. Maybe a little lacking in terms of creaminess.
Drinkability: I'm hooked. I've been craving this so much since having it again last night. Chances are I'll make another bike ride over to Creekside today to get some more. (EDIT: Had another glass this afternoon and loved it again.) If you're lucky enough to ever find this beer in a bar, try it!

On tap at Creekside in SLO.
Poured a reddish-amber with a nice two-finger head into a german style mug (nice touch). Very tight foam, a perfect head. Probably a bit too cold for this style, so I let it warm up just a bit before sipping. Great caramel and sweet aroma, very inviting. Alcohol smell is also up front. Tastes a bit over-carbonated. Beer leaves a nice lacing on my mug - this is excellent. A bready-malty brew with not much sweetness, but enough to balance the malt and hops. Finishes like a lager should.
All in all an extremely well balanced beer. The somewhat lower alcohol level for the style makes this very drinkable. I am surprised at the quality.

Leave it to Doug to make another good beer.
My first beer of the day at Central Coast gathering.
Poured a dark amber color with a reddish tint in the light, nice white head and good carbonation. Nose is malty, bready with a big chewy flavor. Taste is malts, breadiness, I almost detected some caramel, slight roastiness and sugary. Mouthfeel is sticky and coating. This is one full beer and treat to drink.
