Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. This Brettanomyces bruxellensis version is heavy with a drying leather bitterness, light nuttiness, and farmhouse wool blanket.

375mL bottle into an oversized Belgian tulip.
The color of the body on this is marvelous. It captivates me from the pour and sits beautifully in the glass, a majestic golden color I associate more with the cleanest of lagers. Streaming carbonation is visible and the head is a foamy pale white fortress that lingers. 5
It smells tart, lemony and acidic. Then there's peaches and flowers. Nice but not as compelling as the appearance. 4.25
Quite a bit goes on on the tongue here. Tart peach and apricot flavors, a touch of sweet, granola-like malt and then a pronounced but agreeable floral yeast flavor that then lingers a bit like a sorbet. Or maybe better yet one of those candies that combines fruit and cream. Either way, it's tasty. 4.25
I usually get bothered by floral yeast this pronounced, but somehow it just isn't bothersome here in taste or feel. The tartness here is noticeable but doesn't affect the drinkability and there's a rich, creamy quality about 3/4 to the finish. It simply drinks well. 4.25
Yet another gem from Trinity. I'm probably starting to sound like a broken record in how I praise this brewery.

this series has been a pleasure to drink through, and i love that they still put them on tap at the brewery from time to time. thats where i had this one today, and it was a real treat. i dont think they have made any of them again, so this would be somewhat more mature than the others. brett brux from what i understand. its golden and hazy and holds a half inch of airy white head. tons of fruit nuance in the flavor, and definitely more sourness than i remember in most of the others. the funk is there, but there is a little tartness and acidity too, very refreshing, entirely crushable. the fruits i taste range from tangy white grape to meyer lemon to pear and peach, constantly evolving as carbonation dissipates and temperature comes up. the yeast is amazing in this one, and where some of the other isolated brett strains in the series seemed one dimensional or insufficient to by loners, this one is well rounded and in need of no more support from other types. smooth for how light it is, somehow hearty too. this is just fantastic saison, possibly my favorite of the series to this point. i need to find a bottle, hopefully those aged this gracefully too. super dry and excited feeling. i hope they make this again, its splendid. we are spoiled in colorado to have beer this good available to us all the time...

Served from 12.7oz bottle
A — Pours a light pale yellow color, very clear with just the slightest hint of haze to it. There is a light white head on it that fades quickly but tries to leave some lacing left behind.
S — Smells of bright white wine notes and oak, lots of light grape, green apple, citrus fruit, lemon, hay, fresh cut grass, barn yard, horse blanket, wool, musty, fantastic.
T — Tastes mostly like the nose, if not just a little bit less intense. There is a nice bit of funk here, without being overpowered. Tastes like waking up at sunrise and walking through the field to the stables whilst eating an apple and sipping on a dry white bubbly wine. This is fantastic with depth and range of flavors, a true showcase of Brettanomyces.
M — Light-Medium bodied, ample carbonation, nice finish left behind.
O — Fantastic overall, this was unexpected, some of TRiNiTY's beers have been hit or miss for me, but this has been their best so far (that I've gotten to try). Highly recommended.
