Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests. Fermented 100% with a very rare variety of Brettanomyces this beer is exceedingly aromatic. Aged on French Oak Chardonnay Barrels and roses petals for complex maturity and sweet earthy notes.

Appearance: Pours hazy and goldenstraw colored with a head that quickly fades to a ringlet; spotty lacing action

Smell: The Brett pervades the aroma, with lime, tangerine and vanilla tones; the Chardonnay barrel adds a vinous, oaky element

Taste: Lima and tangerine forward, with the vanilla and rose petal making a brief appearance; citrusy bitterness, spice and leathery funk, through the middle; the finish brings on the impact from the Chardonnay barrel; somewhat puckery in the finish

Mouthfeel: Medium body with low to moderate carbonation

Overall: So much going on here and it grew on me the more I tasted

Chocked full of complexity, Trinity's witbier starts innocent enough, but layers on the variety starting with wild yeast, then moving on to citrus peel additions and then rounding it out with chardonnay barrels and a whimsy of rose pedals. Yea, we're going to need you to come in this weekend for that one.

TPS Report comes with a canary yellow appearance, slightly milky and propped up with seltzer-like carbonation. Its short froth rolls onto the nose with an earthy mustiness, a winey tone and a host of citrus, orchard fruit and dried woods. To taste, the wheat is soft and pillowy. Faint sweetness is of sourdough and raw graininess.

As the sweetness fades from the tongue, the woodsy earthiness gains command of the middle palate. Peppery with coriander and peppercorn, the spices strike first but a quick followup of lemon and orange are joined by a medley of pear, green apple and white grape for a balance that falls in line with witbier. But its wine barrel treatment brings those vinous chardonnay nuances along with oak and a pungent taste of cedar and attic-like dried oak.

Medium light and considerably more dry than a typical witbier, the fine acidity of wine, the dustiness of fermentation and the oak tannins all suggest a taste built around drinkability, dryness and refreshment. Off of clean, the ale trails with weathered citrus, a dusty woodsiness and a cast of leather and oak.

BOTTLE: Red wax covered the pry-off crown cap. 12.7fl oz format.

4.8% ABV. "Wild brettanomyces wit with rose petals." "Malt beverage brewed with spices, aged in oak barrels with rose petals." "Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests." "Aged on French Oak Chardonnay Barrels and rose petals." 5.0 pH.

HEAD: White. ~3cm in height. Recedes quickly, lasting maybe 2 minutes. Leaves no lacing as it recedes. Not very robust.

BODY: Surprisingly light/pale in colour. Light yellow. Thin and weak looking. Surprisingly clear for a beer billed as a witbier. Appears filtered.

Appears adequately carbonated. Far from unique or special for a witbier, brettanomyces fermented or not.

AROMA: Brettanomyces yeast(s) are evident, lending pleasant funkiness and tartness but no sourness. Pleasantly floral/flowery, both from hops and from rose petals (though I'd never pick up on rose petal specifically in a blind tasting). Lemon zest and lemon twang are prominent, and the chardonnay white wine barrel seems to round it out nicely, injecting notes of oak, pear, and apple skin. Fresh flaked wheat lends this its backbone, mingling with 2-row to good effect.

Coriander, clove, and earthiness suggest Belgian saccharomyces yeast, but then this is 100% brettanomyces fermented so it seems I'm wrong.

Aromatic intensity is moderate for a witbier. Suggests an interesting brew that showcases its yeast well and has a nice wine barrel presence. I'm eager to try it.

TASTE & TEXTURE: Fruity chardonnay sweetness hits in the late second act, cutting short the pleasant delicate brettanomyces tartness and funkiness that is prominent in the build prior. I'm not sold on the white wine aging as a result since that fruity sweetness isn't welcome, but the oak is nice; virgin oak barrel aging would have been a better call. I can see the logic behind chardonnay - one would hope a white wine would accent a witbier's wheat base and subtle spice better than, say, red wine (or heaven forbid bourbon/whiskey), but it just doesn't work well here.

Rose petal isn't distinct or noticeable, but there's a nice floral flavour here I'd attribute to the hops. Lemon zest barrel comes through. Tangerine zest doesn't (at all).

The brettanomyces is the star here, but for a beer billed as a witbier it's wanting in terms of subtle coriander and clove spice. 100% brettanomyces aging may be highly marketable, but I think some saccharomyces in the mix would help improve the beer.

Balanced but lacking in terms of delicate subtle flavours. It's a bit weak and thin on the palate, failing to feel refreshing in spite of its smooth wet presence on the palate. Not watery, but a little undercarbonated.

No off-flavours are noticeable, nor is any overt booze.

I do like it, but I hoped for a far more intricate expression of the style. This drinks like a hum-ho brettanomyces Belgian pale instead of a witbier or American wild ale proper.

OVERALL: The wine barrel clashes with the yeast emphasis, and the intricacy and subtlety of execution needed for this to truly shine just isn't there, but it's an inspired attempt at a wild ale-meets-witbier, and I do like it for what it is. Aged on virgin oak for a longer period of time with more zest and spice additions and a more balanced yeast profile, this could really be something.

Interesting work from Trinity, but not worth seeking out.

Pours a clear, gold color. 1/5 inch head of a white color. Poor retention and slight lacing. Smells of yeast, pale malt, and slight sweet malt. Fits the style of an American Wild Ale. Mouth feel is sharp and clean, with a low carbonation level. Tastes of hint of hops, hint of bacterial funk, hint of wheat, hint of citrus, yeast, pale malt, and slight sweet malt. Overall, great blend, better body than aroma, but weak appearance.
